Today I am making the crockpot Italian chicken with sun-dried tomato basil bread.

WFD at your house?

ETA: Glynis's Kitten Blueberry Muffins it is, according to my silly husband. ;) Boy are they good!!!!!!!!!!!! We love them!!! What other kinds of fruit is it good to use? I thought about doing strawberry, but didn't know if that would work with the pie filling. I thought with the strawberries being so much bigger in the filling than blueberries that it might make the muffins gooey. Any other idea?

ETA again: Folks, my husband is working from home today so I am using the laptop. For some odd reason, it causes problems with editing the posts. So it will be later today, possibly tomorrow, before I can add yesterday's recipes. So sorry!!
 

Glynis/Nancy - Last night's cranberrry/polynesian chicken was a hit! They had no clue cranberry sauce was in it.:laughing:

No cooking for me tonight - I'll be packing us up (bar included) for our trip to Monroe for the Sate Championship!:cheer2:

We are having pork chops of some kind. I am getting my hair done and have to go clothes shopping, which I hate since I am so unproportioned. My family has been cursed with big bottoms...saddle bags etc. Sounds sexy right??? :lmao:

Tonight I am making the Zuni style roast chicken I posted the recipe for a while back. Instead of serving it with the bread-arugula salad I am sauteeing some fiddleheads and asparagus. I have to figure out some kind of starch to go with.
 
Kathy--here ya go!

Pork Vindaloo with Raita

Raita:
1 1/2 cups lowfat plain yogurt
3/4 cup chopped seeded peeled cucumber
3/4 cup chopped seeded tomato
1/4 tsp salt
1 tsp garam masala

Vindaloo:
1 1/2 cups thinly sliced sweet onion
2 tsp grated peeled fresh ginger
1 tsp dry mustard
1 tsp ground cumin
3/4 tsp salt
1/2 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1/2 tsp black pepper
1/2-1 tsp ground red pepper
1/4 tsp ground cloves
2 tbsp cider vinegar
2 garlic cloves, minced
1 1/2 pounds boneless pork loin, cut into 3/4 inch cvubes
Cooking Spray
1 cup chopped seeded tomato
4 1/2 cups hot cooked basmati rice

1. To prepare raita, spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness. Cover w/ additional paper towels; let stand 5 minutes. scrape into a bowl using a rubber spatula. Stir in cucumber, 3/4 cup tomato, 1/4 tsp sale, and garam masala; cover and refrigerate

2. To prepare vindaloo, combine onion and next 13 ingredients (through pork) in a large bowl; marinate in refrigerator 30 minutes

3. Heata large Dutch oven over med-high heat. Coat pan w/cooking spray. Add pork mixture; saute 7 minutes or until lightly browned. Stir in 1 cup tomato. Cover, reduce heat, and simmer 30 minutes or until pork is tender, stirring occasionally. Serve with raita and rice.

I'm so glad you liked the muffins!!!!! I was biting my nails all day yesterday waiting to find out if my family was wierd, or if they really were good.

I'm thinking about trying cherry pie filling with frozen cherries. Peach could be good, too. You could cut the peaches into smaller pieces. I think the strawberries could be good, as long as you dice them well. Maybe cut down the pie filling amount. So many flavors, so little time!
 
I guess the trout was a hit last night. I just couldn't bring myself to try it. Oh well. I had leftovers. The only downside was that one of my twins choked on a tiny fishbone, and DH had to make her throw up to dislodge it. Now, THAT really makes me want to try the trout. NOT!!!!!

Dinner tonight will be Cowboy Chili. It's a new recipe from a magazine called Home Cooking. It seems simple enough. I'll try it, and if it is approved by my family, I'll post the recipe!

Hey Kathy.. Ill post the real one tonight, for some reason I cant lay my hands on it and Ive got a call into Nanny Lisa for a reminder.
Basically its cream of this and cream of that ... some shrimp, minute rice, and the onion mix that is pre chopped. Slap it together and bake lol. SUper easy.. im prob missing a couple of things and I cant remember exactly what soups to use.. chicken and mushroom but im not sure. I of course always add hot sauce.

Well, I still have not tried Rosa Regale but I anticipate that I will like it (who am I kidding, I drink anything!!!)...it is on sale this week so I bought 4 bottles...still have the original bottle I bought too. I may crack one open tonight and raid what's left of A's Easter candy!!! :)
