Hello there, WFD people :wave:

I was out of the country for the entire month of April, but I'm back home now and slowly readjusting to regular life-type stuff like cooking.

Tonight's dinner is in the crockpot - just some chicken breasts and mushrooms with canned tomatoes and some garlic, oregano, basil, and worcestershire sauce. It smells pretty good, hopefully it will taste good as well!
 
We got to WDW on Sat morning. We had planned to go to Cape May for dinner but changed our minds after a friend's recommendation (thanks Kathy;) ). We've been to Bongo's at Downtown Disney before (a few trips ago) and love it. We normally sit at the front bar and have a couple mojito's and snacks. So for Cinco de Mayo we went back to Bongo's. The front bar was full so we were directed to the back bar. (Didn't know they had one!) It's in the center of the first floor of the pineapple. This is the metal leafwork that goes up the center of thepineapple.

We walked up and sat right down- no waiting. We both ordered Mojito's. mmmmm, yummy! And then we both had our own ceviche. Theirs is my favorite! Chunks of moist yummy fish, with lime juice, onion, jalepenos and red pepper- served in a bowl made of fried plantains. To Die FOR!

Then we shared their appetizer sampler platter- it's absolutely huge! Enough to feed us for dinner, but surely 3-4 people for apps. There's a moist cornmeal tamale, 2 plantain bowls- 1 w/seasoned beef the other creole shrimp, breaded mashed potato balls filled with creole seasoned ground beef, fried pork pieces with garlic sauce and steamed onions and green peas, and fried ham rolls w/dipping sauce. Everything was hot, moist, and Yumm-O!

We then went to visit some friends at Pleasure Island for Cinco. The stilt walkers were out and the Mairiachi bands. Decorations and pinatas up everywhere! If you ever get to PI go to Mannequins and visit Bobby at the downstairs bar. He's a sweetie that we've known for years now- and super friendly!

Wow, I can't keep up with you guys! I pulled the page up & saw Lauren's post at the top, laughing about Lori's post. So I immediately went back a page to read it& posted. Now I see I missed a whole bunch of stuff & my favorite food porn. I see that Lori admitted she was not a total perv & that Rick was hiding his Magic Shell! :rotfl2:

Going to take my time now & check out the food porn!:laughing:
 
Well, if I could figure out a way to get it to you, I would send it!

This fish is HUGE!!! It's flesh is quite pink, like a salmon, so I'm going to try to convince myself that it's really a salmon.

Glynis, A 6 1/2 pound trout would make any fisherman around here very happy! Pink, like salmon? Not that I want to give you anymore reasons to not eat it, but our speckled trout is a very white and mild tasting fish, not pink at all. :goodvibes

I have not been to Bongo's in quite a few years, wow, my DD was in highschool so almost 10 years. We were not very impressed at the time, although the chocolate flan was awesome. Now I will definitely have to get back there to try it. I love that plantain bowl! That is the coolest thing & something I would not attempt at home.

Do you or does anyone else have a good Mojito recipe? I've made them at home & they weren't that good. I had one from Margaritaville at the French Quarter Fest a couple a weeks ago & I've been craving it ever since!
 
Tonight we are having stir-fried tofu and bok choy with sesame soba noodles.

Last night I made sausage and sweet pepper sandwiches.
 
And for future reference- Magic Shell only gets hard on ice cream, not very cold fruit and definitely not on persons.

I'm working on food porn from Bongos.

Do you or does anyone else have a good Mojito recipe? I've made them at home & they weren't that good. I had one from Margaritaville at the French Quarter Fest a couple a weeks ago & I've been craving it ever since!
This is the one I use. It's from webtender.com. A wonderful site if you like cocktails. You can even tell it what you have in your bar and it'll give you drink recipes that use those ingredients. (Not that I would know anything about that.:angel: )

Mojito
-------------------------------------------------------------------------

Ingredients:
2-3 oz Light rum
Juice of 1 Lime (1 oz)
2 tsp Sugar
2-4 Mint sprigs
Soda water
Mixing instructions:
Lightly muddle the mint and sugar with a splash of soda water in a mixing glass until the sugar dissolve and you smell the mint. Squeeze the lime into the glass, add rum and shake with ice. Strain over cracked ice in a highball glass. Top with soda water, garnish with mint sprig and serve.

Fortunately, I wasn't eating with DSis tonight...she knows my love of tofu. :crazy2:

We ended up having hamburgers, and DS even liked it, but DD didn't. Go figure. I also made the macaroni and cheese and eggplant sticks.

Another word of caution regarding the eggplant sticks...make sure you don't coat them too thickly. The breading should be pretty thin, so shake off excess flour and breadcrumbs. Mine didn't come out quite right tonight. The eggplant was the right consistency, but the breading was too thick.
