Mermaid and THE HAT - I join you in the migraine club, mine started during the night and like you Mermaid, IMITREX doesn't cut it. I'm going to miss DS's baseball game this morning, but I should be OK for the late game this evening, keeping my fingers crossed. I hope everyone else who is under the weather gets well soon!

Happy St. Patrick's Day everyone!

Today we are celebrating Liam's birthday, so my sister and I are making one of his favorite dinners: fish and chips. She is bringing over her deep fat fryer so we'll have one for the fish and one for the chips. My Mom is making cole slaw too and I have three kinds of malt vinegar for the chips, which I am making two ways, regular french fry style and thick cut potato chips. I use haddock and a beer batter for the fish. I even bought a copy of the Irish Times to serve the fish on.

We were going to have corned beef, cabbage, potatoes, and carrots, but DS is going to a birthday party today and won't be home for dinner. I didn't think he liked it all that much, but I guess he does, so I'll make it tomorrow instead.

WFD, tonight? I think I'm going to buy crab stuffed tilapia, if the store has it. For sides, maybe a zucchini dish that my mom makes and leftover brown rice. All stuff DS doesn't care for.
 

My headache was gone this morning- maybe it wasn't a migraine but it was the WORST headache I have ever had and when I closed my eyes I saw all kinds of pretty colors. I tried the Imitrex the dr gave me and it didn't help at all! I wish I would have just taken sudafed and advil. Like the Hat said, the barometer in Maine was falling fast due to the storm coming and maybe that is what did it to me. I went to bed in a dark room and woke up much better today. I am taking sudafed faithfully today- for fear of it coming back!

I changed our dinner plans after a trip to the grocery store. We are having Italian pot roast- potatoes (not sure if I'll cook them with the meat or not) and green beans. It's something I have never made before, but I am really tired of the same old same old.

I am also making home made Whoopie Pies for dessert. I love those things.

Kathy & Lucas, I posted on the Nola board about the oysters. Sorry to say they were not as good as I had hoped.

Migraine Sufferers, You know what cured my migraines? A complete hysterectomy! NO Kidding! I have not had one migraine since I had the surgery! I had always believed mine were hormone related, but of course the Dr's don't listen.

BengalBelle, Good Luck on those house projects!

No cooking for me today, too many leftovers from during the week & eating out last night!
 
I have stuffed peppers simmering on the stovetop now. I can smell them. Yummo

Question. A little late in asking.

I put the corn beef in the crock pot around 2pm. If I cook it 4-5 hours on high will be be tasty? I know I should have put it in earlier and on low :( We just did not make it to the store on time.

I am really bummed. My girlfriends husband (her kids do not dig cabbage at all) doesn't like cooked veggies of any kind... so no cabbage or carrots. :( Potatoes will be mashed. I love cooked cabbage and the carrots cooked WITH the corn beef. I am having a hard time grasping it *sob*.
 
Oh second question.

If I want to make buns for dinner... can I make my favorite bread recipe in the bread maker but do 'dough' cycle only and then take them out and roll them into 'rolls' and cook them in the stove?

Also at what temp in the stove do you cook buns?

In My Documents folder I have a folder titled "Recipes". Within that folder I have other folders with categories, like beef, chicken, meatless, sides, etc. When I find a recipe I like I print it to a PDF (Adobe Acrobat) and save it in the corresponding file. I have thousands of recipes, but cook maybe once a week :(

I have a laptop so this works well for me. I don't print the recipes, I just bring the laptop to the kitchen.

I used to print or cut out every recipe and file them in folders, but that eventually took up too much space.

If I can get to the store this morning I'm going to make roast for dinner.

Mermaid--Hope you headache is gone soon!!

Well, we ended up with wings, homemade cheese fries, pizza bites and beer last night. At least one of our teams won! Tonight will be the Velvet Shrimp--can't wait! Oh, and glynis I have the Toffee Apple French Toast readyto put in the oven as I type. Gonna put it in the oven and head out for a run--what a great prize to come home too--incentive to finish faster!

I hope that you liked the French toast!!! It's a family favorite here!
 
Sorry I haven't posted in a couple of days. Real life got in the way! I'm glad to be back with my WFD friends!!!

My corned beef is simmering away on the stove. It's been simmering for almost 3 hours, and still has about 45 minutes to go. After that, I'll pull it out, glaze it with a mixture of maple syrup, mustard and horseradish. Then it goes into the oven for 45 minutes. I can't wait!!!

I'll start cooking the cabbage at about 5:30 in the corned beef water. I also need to go whip up a couple of batches of Irish soda bread. I do one batch with currants, and one plain. Yummy!!!

After dinner, we're going to settle down to watch Darby O'Gill and the Little People. My kids have never seen it, so I'm excited. I think we'll just have ice cream sundaes while we watch the movie!

I wish I could help you with this, Rachel, but I don't really make bread from scratch. "Mrs." Rhodes is my helper here!
 
I ended up not cooking last night, so Kathy, I had time to take your advice about the garlic bread. I made the velvet shrimp tonight and we loved it. My husband took the first bite and said "I think I am in heaven". What more can I say? Thank you for sharing the recipe, I'm sure I'll make it again (and again....and again).

Glynis, glad to see you back. I was hoping nothing bad had happened to you.

Sorry to all those with migraines. Hope everyone feels better today.

I found a GREAT (once I find it again or go get it off the fridge I will post it :goodvibes ) bread recipe that I assume would work for buns, but I am going to forgo the buns and just slice up the loaf I made last night.

My corned beef is so easy! I got it from the Kraft website. I take a brisket and put it in my soup pot. I throw away the seasoning packet (the brisket is really already seasoned). On top of the brisket I put one chopped onion, 2 cloves of garlic, minced, and 2 bay leaves. Cover it with water and cover it. Bring it to a boil, lower heat and let it simmer for one hour. Drain and cover with water again. Bring to a simmer and let cook for another 2 to 3 hours or until tender.

Remove the brisket and place a wedged head of cabbage into the water the brisket cooked in. Place the brisket in a 9 X 13 baking pan. Make a glaze by combining 1 cup of maple syrup, 1/2 cup prepared mustard, and 1 Tbs. horseradish. Pour 1/2 of this mixture over the brisket and put in a 350 degree oven for 20 minutes. Brush with reserved mixture several times. Serve with the cabbage!!!

Kathy, I am sorry you missed your son's game. I know its something you really look forward to.

Andrew's party was such fun! The food was great! Everyone loved the Shepherd's Pie...DF even loved the corned beef...he has never had it before...???!! The cake was great too. I bought it from Shoprite and it was buttercream which usually I hate but it does not have to be refridgerated for a while...I am a whipped cream frosting lover but this one was not too sweet...it was decorated cute too...I had them airbrush the whole thing with a rainbow and a pot of gold with the normal Happy Bday stuff...

I am babbling again...maybe too much beer and bailey's!!!!

Glynis--the French toast was Yummy!!!! I just had some more for dessert!

Kathy--OMG the Velvet Shrimp is to die for!!! DH said that it tasted like something you'd get in a restaurant--a real compliment from him!!! Thanks for the recipe!!!
