Haven't posted for awhile due to HSPA and CAPA as well as observations and restructuring of Sp Ed programs at my school. I think I need to be medicated after the past 3 weeks at work. I am so stressed out.

Yesterday we had corned beef with cabbage and carrots and colcannon. I had never made colcannon before and it was fabulous! It's basically mashed potatoes with sauteed cabbage, onion, bacon and scalliions. If anyone's interested I can link to the recipe I used but I'm sure you can make your own mashed potatoes and add the sauteed mix ins to taste. I used 1 % milk and Smart Balance instead of milk and butter, but I kept the bacon as I thought it was integral to the dish. It was so delicious!

Today I just popped a turkey breast in the oven to roast and am making some steamed green beans and Stove Top stuffing. (I saute celery, onion and mushrooms together first and add them to the stuffing. It's a great way to add some extra veggies).

Sorry- just saw this today. Yes, you use the dough cycle- shape them into rolls- let them rise again until doubled (about an hour) then bake them at about 375* for 20 minutes or until they sound "hollow" when tapped. I do this all the time.

Reuben sandwiches! They're my favorite.

We're having our corned beef dinner today. I wish I would have bought a bigger brisket, we probably won't have any leftovers. DH even promised his grandmother he would take her some, without asking me first. I wish he would have let me know before I bought it. If he still plans on taking her some it's going to be his share.

I would love the recipe. I've never had it before, but it sounds like something I'd really like.

Reuben sandwiches! They're my favorite.

Thousand Island dressing
Corned beef
Swiss cheese
Sauerkraut, well drained
Butter or margarine
 
Now this is the thread I need to be reading. I haven't cooked since last Monday ... :rolleyes1 I haven't had the energy or the mental abilities to figure out WHAT to cook!!

That's going to have to change, I am going broke!!! Poor DH is ACTUALLY sick of steak b/c we have gone out to dinner so much and we end up going to good steak houses!!

Tonight is no better, we are going to get chili dogs from the new place down the street. At least it's cheap!

As far as I know any bread recipe can be made into rolls.... I have a sweet butter bread recipe that I make in my bread maker that makes wonderful rolls. I get exactly 24 out of the batch!
 
Ugh, so much for making plans for dinner.:headache: DH wants "snacky" food again tonight. We rented some movies and he just wants to have finger food in front of the TV.
 
Dinner today was so good! I followed Glynis's instructions for th corned beef. I used maple sap to simmer it as well as my veggies and it was amazing! Now the sap is like a slightly sweetened water so the flavor in the veggies was subtle but really good. I reduced the glazing sauce into a finishing sauce. No leftovers here because I sent thee rest home with my son and he is dropping some off to my Aunt. She is 92 and doesn't cook anymore so Gail and I send meals ready to heat up for her to enjoy. I have a cousin who will send meals over as well, but her food is :scared: the last resort for my Aunt....it is terrible!

Also made a banana cake with chocolate frosting for dessert and some oatmeal banana muffins with chocolate chips for a breakfast treat for my DH. He has already eaten 6 of them!

Yummy sandwiches. You can also make a kind of hash with potatoes and corned beef.

I'm so glad that you liked the corned beef recipe! I love it because it's so easy!!! We finished off our brisket for lunch today! So good!!!!!
 
Good Morning! I did finally grill those pizza's. I really liked it I still have some pizza dough so maybe I'll have to do that again soon. Pizza dough at Trader Joe's .99

Tonight we are having TO Die For roast in the crock pot. I think I may try a little more water, I like gravy.

To Die For Crock Pot Roast

1 beef roast, any kind, sized to fit crockpot
1 pkg Hidden Valley Ranch Dressing mix
1 pkg brown gravy mix
1 pkg Italian dressing mix
1/2 c water
Place roast in crockpot. Mix all three envelopes and sprinkle on top of roast. Pour 1/2 c warm water in the bottom of the crockpot. Cover and cook on low 6 to 7 hours.

Tonight I am making nutty chicken, teryiaki noodles, and green peas. It was on the menu 2 weeks ago and I didn't get to make it for some reason.

I just wanted to say THANK YOU!!! Yesterday I made a combination of 2 dishes: Cheesy Crockpot Chicken, by LindsayDunn pg228 and Crockpot Chicken and Dumplins, by Stacy pg347. It turned out GREAT!

I used 2 chicken breasts, 1 can cream of chicken, 1 can cheese soup, 1/2 can of biscuits, salt and pepper. I added the biscuits about an hour before I turned off the crock pot.

Again, it's GREAT! I'm so glad I found this thread. Thanks again to the OP who made the list on Page 1. :worship:
 
The corned beef dinner was good last night and I even ended up with some leftovers to send to DH's grandmother. She's been staying with DH's DB and SIL for a month while she's down here on vacation. SIL doesn't like it and won't cook it.

Not sure what I'm making for dinner yet. I have to go grocery shopping today so whatever's on sale is what will be on the menu for the next few days.
 
Okay, I'm starting to sound like a broken record, but tonight WILL be the Chicken Reuben bake and Glynis's RAnch potatoes! Not going to allow DH to alter dinner plans again!;)
