Good news! Timmy made rank again and has quite a few Marines reporting to him. He is thrilled that he is so at home doing things he never imagined that he could. Chris is in Paris, I'm not sure when he is coming home but Debbie said his pictures are up on his face thing.

Got lots of stuff done today, got a good amount done on a quilt I am making, went and got more thread and the backing fabric for it, went to TJ's, they didn't have my European style yogurt again :mad: and got some laundry done too.

I also made artichoke dip for a birthday party tomorrow night. I'll post the recipe tomorrow night if it turns out okay, I tweaked the Hellmans recipe a little.

Tomorrow is going to be a long stressful day! By the time I am done with the day, I may need a designated driver. :rolleyes1

Well, in six more days, I will be waking up at beautiful OWK, sitting on the huge patio and having my deliciously, yummy NOLA coffee! :goodvibes :cool1:

I am in clean the house, buy last minute things, visit Mom and get everyone ready to pack their bags mode so dinners are going to be easy.

I have some sausage and peppers left and also plain sausage. Maybe I'll just make a little pasta and be done with it.

I have been asking what he wants as far as a gift and he keeps telling me nothing or maybe something in Disney...:confused3 I think I would like a pick a pearl and some perfume...who knows I really do not need anything.

Should I send him flowers or something else?

Lauren- since you will be there for your anniversary, make sure you get your anniversary pins, we got ours from the front desk of the hotel. Even if you don't were them, they are really cute. We were there for our anniversary two years ago and it was the best, after the fireworks at Epcot (our favorite) he gave me my "engagement" ring that we had no money for when we got married. I always told him I didn't need one, but secretly really wanted one. If you get perfume- I like the ones they have at Norway. Have a great vacation!
Last night for dinner we had burritos and key lime pie for father's day dinner. Tonight I think we will have roasted split chicken breasts, I really wanted to make ribs, but I forgot to take them out of the freezer and they just take to long to get done in time tonight.
Well I have a lot of catching up to do around the house, so I suppose I should actually do it. Have a good day everyone!
 
Sounds good. :thumbsup2 I have been meaning to tell you that I found this stuff called Egg Substituter by EnerG. I found it in the organic/allergy-free food aisle of a local store. We made pancakes with it yesterday, and they were terrific. We are going to really test it and try to make popovers...Liam has been missing those...but I can already say, it would work in any baked good recipe. You can even whip it into stiff peaks like egg whites! Anyway, if you can't find it, but want it for Kady, I would be happy to send you a box. :)

ETA: Congratulations to Timmy! I wouldn't mind if Greg had duty in Paris, like Chris. I would just HAVE to visit.

Yeah, we are so happy for Chris. He is so enthused about his job now and has had wonderful opportunities. He was in AZ a bit ago so my niece got to go and see him, she said that while she has appreciated him she never really got the "little cousin" thing out of her head.....until he arrived at their destination and she got to see what he does. She told Gail that she was teary the entire visit.

Debbie said that now she is wondering what is up. One in Hawaii, one at DL and one all over. Here she sits :rolleyes1


both DH & I have lost our Dads so this is a tough day. Making a nice dinner kept me busy & DH happy.

Father's Day is so different without your own Dad. We also have lost our Dad's and it is a bittersweet day here as well.

Lauren, it seems like yesterday we were talking about your poison ivy and looking at pictures. What a wonderful way to celebrate your anniversary, a vacation in Disney. Don't work too hard getting ready, a little dust never hurt anyone.

Lucas- your vacation is right around the corner, isn't it?

Dinner tonight is going to be the lasagna I posted earlier. I have a lot of ironing to do but will make time to make that sauce. It is supposed to be very stormy later on so this will be a good comfort meal.

It's not a total vacation. We are going to my brother's wedding so we'll be doing lots of family stuff. But, we will get in some touristy time in the French Quarter and have lots of great food. I'm looking forward to it.

Luckily there will be margarita's at the party. :woohoo: I have to leave early to go to storage to find decorations for the party, couldn't find them today so DM is going with me to see if she can find them. Then I have to stop at Panera to pick up bread for the dip and then it's on to drive a van for a camp program. I thoroughly HATE driving the van and they are calling for thunderstorms when I have to do the second one in the afternoon. At some point I have to go to the party store to pick up the tablecloths I forgot today then head to the party to set up and decorate.

By the time I am done with the day, I may need a designated driver. :rolleyes1

I like to use it on everything from a seafood salad to an omelet!!;)
 
Last night I made Paula Deen's chocolate chip pancakes. They were soooooo good - I wanted to share the recipe in case anyone was interested. Definitely a keeper! :thumbsup2

Couple of notes:

Recipe calls for the minature chocolate chips and it worked out great (bigger ones would be too much).

I didn't separate the eggs - I just put them in with the other liquid ingredients.

Also I did not make the cinnamon cream or use maple syrup - they were fantastic plain.

CHOCOLATE CHIP PANCAKES WITH CINNAMON CREAM (Paula Deen)

1 1/4 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs, separated
3 tablespoons butter, melted plus 4 tablespoons, divided
1/2 cup miniature semi-sweet chocolate morsels

Cinnamon Cream, recipe follows
Maple syrup, for serving

Cinnamon Cream:
1 cup heavy whipping cream
1/4 cup confectioners' sugar
1/4 teaspoon ground cinnamon

Preheat griddle to 350 degrees F.

In a large bowl, combine flour, sugar, baking powder, and salt.

In a small bowl, combine milk, egg yolks, and 3 tablespoons melted butter; add to flour mixture, whisking until smooth.

In a small bowl, beat egg whites at medium-high speed with an electric mixer until stiff. Gently fold into batter. Gently fold in chocolate morsels.

Melt 2 tablespoons butter on hot griddle. Ladle about 1/4-cup batter for each pancake onto hot griddle. Cook pancakes for 2 to 3 minutes, or until tops are covered with bubbles and edges look cooked. Turn and cook the other side. Repeat procedure with remaining 2 tablespoons butter and remaining batter.

For the Cinnamon Cream:
In a medium bowl, beat cream at medium-high speed with an electric mixer until thickened. Gradually beat in confectioners' sugar and cinnamon, beating until stiff peaks form. Cover and chill.

Serve pancakes with Cinnamon Cream and maple syrup.

Grilled tuna spedini. These were really good. The recipe is in Mario Batali's new cookbook--Italian Grill. He recommends serving them with a spicy roasted pepper relish, but I left that off becuase my stomach has been a little funky lately and peppers make things worse:

I survived the weekend! I will admit right off the bat that I have not looked to see what I have missed but I will later in the day, I want to make sure I am up to speed.
I crashed Senior banquet Thursday night for pictures, got a few but the setting on my camera got changed and 99% came out blurry!:furious:

Friday was Last Chapel my DD (Crystal) got Athlete of the Year :cool1: :banana: :yay: :dance3: :cloud9: party: and the 2008 yearbook award for designing the best page!!:jumping1:

Saturday she graduated from High School. Not sure how I am feeling about this. Happy, sad,proud, lost etc. We spend 13 years sending them to school and now I am feeling kinda lost. :yo-yo: Now what do I do? Kinda of like when they are first born and you bring them home going" Ok, now what do I do with them?"
For a graduation present I sent her to Disney. I dropped her off at the airport at 5:30 this am. She has been calling filling me in on her day as I sit at work sulking becasue I can't be there with her.:sad1:
I got up this am at 4:00 and before we left I went to move her hair straightener and burned 3 fingers! Then, I skip home for lunch to do DBF's TT&L payment and SLAM my foot into the desk:headache: . I think I broke my toe, it is black and hurts like the devil, I get myself together and get back to work with a mint lifesaver in my mouth, bite it and break a tooth!:scared1: UNCLE!!!!
The wedding that we attended this weeked was a BBQ and we did alot of the cooking, setting up etc, so yesterday we went and help take everything down, it was in a big field, after lifting 200 chairs on and off a pickup truck I am pretty sore, guess I am not as young as I used to be!
DBF called me this am to ask me to call the DR as he had a tick inbedded in his stomach. Hopefully they were able to get it all out and give him meds. will find out tonight.
I don't think they can make enough bacardi to get me through the night!:drinking1 This is on top of the spider bite (swollen neck & Shoulder) and sunburn I got on Saturday (graduation and then a wedding) I can't wait for the day to be over. It's Monday isn't it?
I have exactly 4 1/2 days to pull together a baby shower for my youngest DD. She told me the week before Mother's day that she was pregnant and she is due at the end of June. I haven't said anything as I was still trying to process everything. All's I can do is to be there for her and support her the best I know how. (she lives with her dad, alomst an hour away) By the way it's a girl.
Well, That's my weekend in a nut shell, Here's hoping that the week gets better, I will check back in in the am (If I'm sober!)
Ya know, I just did a quick read of this post before I sent it and it sounds like a darn soap opera!

I'm so glad you both liked it. It is always my assignment for the family Thanksgiving, except I normally have to make it with 3 lbs of pasta! For future reference, it freezes well too.

We went to Fuzzy's Tacos for a big lunch (yummy shrimp tempura tacos!) so I nuked a bacon cheeseburger at 9pm during the Tony's. The long 3 hour nap I took in the middle of the day kinda blew any chances of a meal being cooked ;)

Just had grilled zucchini and chicken for dinner. I really need to get a basket for the grill, I lost some of the zucchini into the bottom of the grill. :headache:

Dinner tonight will be yesterday's leftovers. Maple baked salmon, rice pilaf, and steamed veggies. We also have half of an eclair torte and a little more than half of a banana pudding left. I always make too much.

i am ashamed of the hiatus i took on this thread..my home cooking had become too few and far between and rather uninspriring but now i am on a big time cooking at home kick and much more serious about weight loss because ...I am engaged!! lauren so nicely saw a post i made over on the weddings thread and encouraged me to rejoin the group here..so here i am!
Tonight's dinner isn't all that exciting..BUT its healthy..chicken sausage with peppers and onions..

Hey y'all,

I haven't read everything yet, but wanted to check in while I could. We had bad weather here yesterday. Our power was out from about 4 in the morning, until 2 in the afternoon. I felt like a frontier gal, peeling potatoes & onions on the patio, so I could see! ;) They were supposed to be Ohana scalloped potatoes, but I had to cook everything on the grill, so I wrapped them in foil & made a cheese sauce on the grill side burner.

We had some interesting wildlife come visit while DD was in the swimming pool.
You can see part of her head in the bottom right corner.

She was a little freaked out by the two egrets that hung around for about 15 minutes, even trying to stick a foot in the pool!

So this is what Cajuns do, when local wildlife hang out in the backyard.

:lmao: Just kidding! That was the wine filled coke can chicken & country style ribs I fixed for DH! This chicken came out so juicy, I marinated it in evoo, garlic, white wine, spices & rosemary, then put the same mixture in the coke can. I used one of Lauren's recipes too, her vietnamese marinade on the ribs. Then I saved some of the marinade, boiled it & then added barbecue sauce to it & put that on while cooking. They were delicious.

First, Congratulations to your DD and to you as well! You must be so proud of her. I sure do understand how you feel, though. My youngest bore the brunt of my issue with graduation, I cried for 6 months before and probably 6 months after. I was lost. It did get better but for me there was one heck of an adjustment period.

I have no idea how you survived the weekend! It sounds like it was a close call ;)

Both of our Dads have been gone over 10 years now. It gets easier as time passes. We are now able to talk & reminisce about them, without it hurting so much.

Lauren, Y'all are going to have a great trip! I think Tom's going to love the surprise!

LaurieG, Sorry you had such a tough day & weekend!!! Your DD graduating was enough to handle, much less the spider bite, sunburn & now your toe! :hug: :hug: I only have one child, so her HS graduation & starting college was really hard for me. I understand the feeling proud, but it's so hard to see them grow up!

Becky, That meal looked fabulous! But WOW on that almond brickle!! and with a chocolate souffle!!!! :faint: Girl you are something else!:worship: :worship:
