The All-New What's For Dinner Thread!!(recipe index in OP)

Happy Birthday, Johnny!

I hear you about that boy funk! :scared1: This past winter when my oldest godson was wrestling I went to one of his meets and OH MY STARS, that funk was incredible! And we were there for over 12 hours. :

That does sound gross! It certainly makes the dance recitals seem not so bad after all.

Nancy -- Yeah, Greg's funny alright. War hero or not, if he ever gives me "How Not to Look Old" he is freezer fodder.

At the ice rink, you can tell when the hockey players were just on the ice. Walking in is like walking into a cloud of sweat, jockstraps and smelly socks. The girls come in with their pretty skirts, their fancy skating bags and their neat hair, and they're like "EEWWW!!" At least rink management told the hockey players they couldn't walk around in their towels anymore.

Liam pitched great tonight. I was so proud of him. The team lost, but Liam pitched three innings, and he only gave up three walks. Five runs scored while he was in, but four were in the third inning, and he was tiring. He struck out the first batter he faced. That was cool.

Now don't say that about Greg. You just never know what they will do. I may have already told you the story, but when Kenny and I were dating, I starting having blood pressure problems. I was telling him this on the phone and he said "If you lost weight your blood pressure would come down". Imagine the dead silence on the phone as he realized what he said and waited for my reply. After another second or two I just burst out laughing. I figured any man brave enough to be that honest with me wouldn't lie about anything else. We still laugh about it.

I'm sure the girls are grossed out by the stinky hockey players. I'm grossed out just reading it. And them walking around in towels is just wrong.

Congrats to Liam too! I'm sure you are proud.

I agree with Gretchen, even girls get funky away at camp! Gretchen, Years ago when DD went away to gym. camp, I too, was shocked at the pictures of her hair! I packed lots of leotards, but I think she wore the same one the whole time! I can still remember the stench, unpacking that bag. The 2nd trip, three of them (girls)flew alone, to camp & back, I felt really bad for the people sitting around them on the flight home!

Sheryl, in those moments, I feel like it's every man for himself. :lmao:

We have a graduation party today, only cooking I will be doing is for the party. I am bringing 4 calzones (sausage & pepper/ pepperoni & mozz.) and a strawberry & blueberry trifle.

Congrats, to Liam on his pitching power! Keep it up.

Ann

That sounds so yummy.

Speaking of camp, when I was younger I went to equestrian camp...can you imagine what we were like after being in barns and on horseback all day??? :scared1: No wonder my Mom kept my stuff in the garage till it was washed!

Your poor mother. But isn't it amazing that as adults we are all so sensitive o the funk and kids seem not to notice it at all? I'm sure horse and people sweat mixed with week old clothes was quite an interesting odor too. :rotfl2:

I remember my brothers days at camp and coming home with a lot of unused clean clothes and wet clothes all mixed in. :rolleyes1 I remember my mom throwing even the suitcase away.

:rotfl2: :rotfl2:

Thanks Lauren. He's with Kyle today in Baton Rouge, they have a double header. I stayed home, kinda feel a migraine coming. We're going to PF Changs tonight for his birthday and I'm happy he's going to be enjoying his day with Kyle.

I hope you are feeling better and that you all had a good time at dinner tonight. I'm sorry it's so late, but please tell Johnny Happy Birthday from me.

I have not figured out tonight's dinner yet. I am a little tired today because we went to a concert last night--REM. We had awesome seats (John's nickname is the ticket god), but I think I am getting too old for rock shows. :rotfl:

Becky, I'm too old for anything that lasts much past 10:00. If I recall correctly, this includes concerts. ;)

Right now, I am trying to figure out what kind of serious snack I am making later. Caili had two birthday parties this afternoon, one of which overlapped with the neighborhood party, so I missed out on a lot of the food during transportation. So did Caili. She doesn't eat pizza, so aside from breakfast, she had ice cream, cake and popsicles today. She is having a big bowl of oatmeal now. I'm definitely not having that. It doesn't go with wine. ;)

Gotta have priorities. Sounds like you have yours just right.

Hi Ladies,

Does anyone have a great mac & cheese recipe? DH has suffered long enough with me not cooking often since the start of NutriSystem.

I asked him what he would like tomorrow and mac & cheese was the request.

TIA:)

It's kind of late, but I have one for the southern style baked macaroni. I'll post it if you want it.

They really don't brush their hair unless I make them. The boys are always nasty by the end of the week because I've yet to find male counselors that make them shower and change their underwear. I DO make the girls shower daily with soap and wash their hair.

Bless your darling heart. I hope Amanda's counselor does the same with her. I would like to see a picture of her on next year's website where she doesn't look like a refugee.

I'm posting kind of late because it has been such a busy day. I'm having my parents over tomorrow for Father's Day so I spent the first part of the day cleaning my house. When I went outside to shake my kitchen rug, I stepped on a nail and then had to spend an hour and a half waiting on my tetnus shot. Then we went to Kenny's BIL's 40th birthday party and we have just gotten home.

We thought that tomorrow that Kenny would take Amanda to camp himself since this is her third trip, but she informed me tonight that I HAD to go. I haven't arranged a babysitter for Hailey, so it looks like she's going to camp too. I hope that works out ok.

Here it is, but keep in mind, my grandmother didn't write anything down, so it is a pinch of this and a shake of that, but I promise this is a very forgiving recipe, so a misstep here or there really doesn't affect it too much.

Grandma's Baked Macaroni and Cheese
1 lb elbow macaroni, cooked and drained (keep hot)
2 lb cheddar cheese, shredded (I use half medium and half sharp, but that's up to your preference)
2 eggs, beaten
salt and pepper to taste
1/2 tsp dry mustard (I just do a couple shakes)
milk (amount varies, but you will need at least 1 1/2 cups)

Preheat oven to 350 degrees. Spray baking dish with cooking spray. Combine hot, cooked elbow macaroni with all of the cheese except 1/2 cup, reserving that cheese for the top. Stir cheese into macaroni until cheese is mostly melted. Add eggs and salt and pepper to personal preference and dry mustard, stirring well. Pour in milk 1/2 cup at a time, stirring well. Keep adding milk until the mixture is slightly soupy. When you begin, the mixture will be very sticky and you'll know you have it right when the mixture loosens and the noodles are separating. It will be sort of sloshy in the pan.

Bake, covered for 45 minutes or until casserole is set. Top with remaining cheese and return to the oven until the cheese is melted.

ETA: I'll be online for a while. If you have a question, please ask. I know it sounds kind of confusing, but it is really pretty easy.

Thank you so much! It sounds delicious, I will post my husbands report tomorrow night!:thumbsup2

ETA: Kathy, aren't you heading north next fall? You can schedule Lauren, Nancy and me all in one trip!

I was until a group of DISers who will remain nameless :rolleyes1 talked me into a drinking/eating fest at WDW for October '09.:woohoo:

Happy Birthday, Johnny!

Thanks Peggy!

We're back from PF Changs and while we thoroughly enjoyed everything I wasn't as "blown away" as I thought I'd be. Kyle said it's because I hold everything up to Blue Zoo & JIKO standards, which is so not true.:lmao: He was the one who said during dinner that he'll never forget JIKO....::yes::

I am cooking for my dad for Father's Day. I am making orginial Kitten Chicken, hash brown casserole, and green peas. For dessert I am making my vanilla rich chip cake. I will post the recipe in a few.

Vanilla Rich Chip Cake

1 pkg. (18 ¼ oz) yellow cake mix
1 pkg. (3 ½ oz.) instant vanilla pudding mix
1 cup sour cream
½ cup vegetable oil
½ cup water
4 eggs
1 tbs. vanilla extract
1 cup mini-chocolate chips

Preheat oven to 350.

Beat all ingredients, except chips, in a large bowl on low just to moisten. Beat on medium for 2 minutes.

Stir in chips. Pour into a greased 12-cup Bundt pan.

Bake for 50 minutes or until toothpick inserted in middle comes out clean. Cool in pan 10 minutes. Invert cake on wire rack. Cool completely. Top with glaze (recipe below).

Vanilla Butter Glaze***

Mix 3 tbs. butter, melted, 2 ¼ cup powdered sugar, 3 tbs. water, 1 ½ tbs. vanilla until smooth. Let stand 3 minutes or until thickened. Drizzle on cake.

***I do not make this glaze. I do one of two things:
1. Serve without glaze or icing and just plop a dollup of Cool-whip on it instead.

2. Take one can of chocolate icing, stir well and put in microwave-safe bowl. Heat in microwave for about 30 seconds, stirring after every ten seconds. Drizzle on cooled cake like you would a glaze.

One other note, and this is VERY important:

This is the best batter you will ever sneak a spoonful of.

Good Morning!

Happy Father's Day to all the Dads!

We are having sausage, peppers and onion heros, potato salad and corn on the cob. Not sure about dessert...maybe a sorbet.

Have a great day all!

belated :bday: to Johnny !

:cool1: Happiest of Father's Days to everyone's Dads and Hubby's today:cool1:

Johnny was so surprised to see b'day wishes from y'all. He says "Thanks ladies" to Lauren, Laura, Nancy & Janice and he wishes he could meet you all in person one day.:goodvibes I said "we can work that out, dear"...:lmao:

After I told Buddy that our NOLA gals would cook for him he is on that page :thumbsup2 He has not had home made fries chicken since he was a kid and his Mom made it.

HAPPY FATHER"S DAY!!!!!!!!!!!!!!!!!!!!!!!!

Lindsay- I thought that I was the only one who softened canned frosting for a glaze. I like the lemon on lemon cake and the vanilla or lemon on turnovers. In a pinch the chocolate is a good substitute for fudge sauce on ice cream.

I am still chuckling about the camp horror stories. I never went to camp and never sent my kids (they were deprived kids, I guess) so I am getting a kick out of this.

Dinner tonight is going to be easy. I have some tequila-lime turkey tenderloins. Marisa is going to grill them and I'll bake some potatoes, sweet and russet. Also a tossed salad and a veggie. Kady picked out pies yesterday and so she and Buddy can have that for dessert. Marisa and I will have out popcorn.

I am a little worried about my weigh-in tomorrow. We had dinner out twice this week, I had prime rib each time and Friday night I not only had wine I ate dessert. Now today I am craving a prickly pear margarita. On a real positive note, Marisa has lost a good amount of weight but the real story is her clothes. She ordered some new tops and looks so good :yay:I have this thing about ironing and have been threatening to throw her clothes out when they get to my board because they are so droopy.

This is one of my favorites! I've made it a couple of times - took it to work once and they all loved it too. :thumbsup2 (I kinda like it best without the glaze - yummy!)

to all the Dads!!!!

WFD - Lauren's "pot of goodness" with a braciole, roasted broccoli and cheesy bread.

Just as I was going to post this morning we had a thunderstorm warning so I got off the computer and decided to wash floors. Needless to say I forgot I had the patio door open so I mopped up twice. :rolleyes1 We are supposed to get another round this afternoon.

I decided to play it safe and have fish cakes and Kathy's sauce, that's all put together. I just need to figure out the sides. Hope everyone is having a good Father's day.

Happy Father's Day!

The kids and I went to my parents' house (usual Sunday routine except Beck was off to her ILs) and we had roast beef, gravy, oven potatoes, fresh green peas and zucchini and summer squash. It was all delicious, and I didn't have to cook any of it.

I also heard from Greg (Don't worry, Gretchen. He gets plenty of free passes...I even fed him the night he gave me the exercise book, and it wasn't thick soup, his most hated meal.) and he is doing well.

Lauren- we are due for some of those storms here tomorrow evening. Last night some went through and the weather guys said the beginning of the week will be sketchy.

Laura- It's good to know that Greg is doing okay. I always waited to hear if someone heard from Chris or Timmy.

Good news! Timmy made rank again and has quite a few Marines reporting to him. He is thrilled that he is so at home doing things he never imagined that he could. Chris is in Paris, I'm not sure when he is coming home but Debbie said his pictures are up on his face thing.

Marisa and I are enjoying Prickly Pear martinis. I did not have any more tequila so we subbed vodka.

Sounds good. :thumbsup2 I have been meaning to tell you that I found this stuff called Egg Substituter by EnerG. I found it in the organic/allergy-free food aisle of a local store. We made pancakes with it yesterday, and they were terrific. We are going to really test it and try to make popovers...Liam has been missing those...but I can already say, it would work in any baked good recipe. You can even whip it into stiff peaks like egg whites! Anyway, if you can't find it, but want it for Kady, I would be happy to send you a box. :)

ETA: Congratulations to Timmy! I wouldn't mind if Greg had duty in Paris, like Chris. I would just HAVE to visit.

This was just delicious!!!!!!! My husband raved about it & the leftovers have already been packed up for him to share with his buddies!

I so much appreciate you posting late last night, both DH & I have lost our Dads so this is a tough day. Making a nice dinner kept me busy & DH happy.

Happy Father's Day to All the Men in Your Lives!

Thanks again

We went to Fuzzy's Tacos for a big lunch (yummy shrimp tempura tacos!) so I nuked a bacon cheeseburger at 9pm during the Tony's. The long 3 hour nap I took in the middle of the day kinda blew any chances of a meal being cooked ;)

We are going to see our dad's tomorrow, I'm taking the day off. So, meals out both for lunch and dinner.

Just had grilled zucchini and chicken for dinner. I really need to get a basket for the grill, I lost some of the zucchini into the bottom of the grill. :headache:

Got lots of stuff done today, got a good amount done on a quilt I am making, went and got more thread and the backing fabric for it, went to TJ's, they didn't have my European style yogurt again  and got some laundry done too.

I also made artichoke dip for a birthday party tomorrow night. I'll post the recipe tomorrow night if it turns out okay, I tweaked the Hellmans recipe a little.

Tomorrow is going to be a long stressful day! Luckily there will be margarita's at the party. :woohoo: I have to leave early to go to storage to find decorations for the party, couldn't find them today so DM is going with me to see if she can find them. Then I have to stop at Panera to pick up bread for the dip and then it's on to drive a van for a camp program. I thoroughly HATE driving the van and they are calling for thunderstorms when I have to do the second one in the afternoon. At some point I have to go to the party store to pick up the tablecloths I forgot today then head to the party to set up and decorate.

By the time I am done with the day, I may need a designated driver. :rolleyes1
