Thanks for all the good wishes for Liam's team. Unfortunately, they lost and Liam struck out to end the game. :( Oh well...summer ball starts soon.

It's Wed, so I told DH that he can either buy something at the grocery store for us to have for dinner that is easy or I can buy something for us on my way home.

I sent him to the store with a list today... I'm very skeered. :eek: He always spends twice what I spend and buys all name brand products, never comparing prices, and brings home things not on the list. BUT, I have a long week at work and he's sitting at home so it makes sense for him to go. Right? :confused:

The torturing of the children was fun last night especially when in the middle of the 7th inning during the 7th inning stretch they played John Denver's Thank God I'm a Country Boy. :thumbsup2 We stood up and the 12yo was like "Why are you standing up?", :eek: then the singing and dancing commensed! :lmao: And then when I went to go to the bathroom and they started playing a Prince song and I chased him out onto the concourse dancing behind him. :banana:


Dinner tonight is going to be a savory bread pudding. I have leftover bread from Monday that I got at Panera so I am going to use that, some low fat shredded cheese, fat free half and half and may add some veggies to it too, onions, squash and mushrooms.
 

I talked to my DD and she is having an AWESOME time at Disney, she had dinner at California Grill and watched wishes from the the balcony. Breakfast at Crystal Palace and then was off to Epcot. Of course she is rubbing it in, she'll be lucky if I don't make her walk home from the airport!!

Laura- Good for Liam!

Aimee- I never send DH to shop. Actually I don;t even want him to shop with me. The first time he came with me ha picked up a handle basket! Are you kidding me???????? That was how he shopped, when it got full.....he was done. The last time he was a pill. Why do you need this? Do you need that? Isn't spaghetti a cheap meal? On and On and On.....until the cookie isle. We needed cookies, ice cream, cheesy poofs. I just let him shop and went myself on Monday and bought what we needed. Since then if I need to stop at the grocery when we are together I leave him in the car.

Sheryl- Poor Alexis. I would probably do the same thing as she did, but I read that she sat with ice cream :lmao:. I think that the grapes I ate for dessert just did not do the trick.

Dinner is pork chops, some kind of potato, probably roasted red bliss, and a veggie. I'll fix a salad as well.
 
Nah, not Southern but I eat anything! ;) I never made it before...I am using a recipe that has eagle milk in it. Do you do that?

I make mine more simply, although I love the Paula Deen version too. Kenny prefers it made with custard. Layered - cookies, sliced bananas, custard. Repeat until dish is full. But I've never had a bad banana pudding.

And I'd stick out like a sore thumb up there. Tall and overweight with a Gomer Pile/Paula Deen accent. ;)

Tonights dinner is going to be a big pot of chicken/sausage gumbo. In fact it's just about time to go start cooking it so it is ready. If anyone is interested I can post the recipie, but it is a pretty standard gumbo.

Ok

2 lbs boneless skinless chicken cubed and browned set aside
1 lb very thinly sliced andouee sausage browned and set aside
2 med onions chopped very fine (food processor)
1 med bell pepper remove seed and insides and chop very fine (food Processor)
1 bunch green onions chopped fine
1 head Garlic pealed and chopped fine
4 cups chicken Broth
2 cups white wine
Lea and Perins to taste
Hot sauce to taste
Water

Make a Roux with 2 cups flour and 1 1/4 cup olive oil. The Roux should be the color of a dark chocolate bar. (you just combine together and stir over low heat till done, this is the longest part, if you burn it toss it out and start over or you will ruin your dish)

Add onions stir till translucent, this will happen very fast, add bell pepper and green onions and garilic stir in.

Add chicken broth and stir to mix back into a liquid, then add white wine, chicken, sausage, lea and perins and hot sauce. Stir. Add enough water to bring it to a little thinner than your desired end, then cook over low heat for 2 hours, stirring every 15 minutes or so.

If desired you can add in 1 lb pealed shrimp the last 15 minutes of cooking.

Serve over rice with extra hot sauce and gumbo file.

You can subsitute whatever meat you desire, or use various hearty veggies if you like vegitarian style

Dinner tonight is Thai Green Chicken Curry with Coconut Rice. Although it's not coming out very green, because I only had red bell peppers!

10 years ago I hardly ever ate pork, it was always chicken or beef, but with the price of beef now, I pork has replaced beef on that list.

I love pork tenderloins and the boneless loin, good eats at a fraction of the cost.
