Reservations if not staying on site

I am chaperoning a trip with our band and I wanted to make reservations at some of the nicer restaurants in each park. Since we are not staying on site, when can I make reservations? I assume that I can only do it on the day that I want to eat at that particular restaurant. In other words, can you only do priority seating if you are staying on site in the the parks? (We have always stayed in the parks, so I have always made reservations ahead of time.) Also, if I am staying off site, who do I call to make reservations for that day? Or do I just have to go to the restaurant in the morning and see what is available?
 
You can make Priority Seatings even if you are not staying at a WDW resort. The same rules apply so you can book the restaurants 120 or 60 days out depending on the restaurant (see links below).

Yes, you can call from home. The number is (407) WDW-DINE.

Just a note, though... there are no reservations... it is all Priority Seating.. which means that you may have to wait a bit when you get there.
 
:( Except you will not be able to do that right now. As I posted earlier, their entire reservation system is down due to a virus. :(
