Rora- Here are some recipes for you.
If you make the mini cheescakes, you can use some canned pie filling for the topping. When I make mini cheesecakes for a party, I like to use blueberry filling on some and cherry or strawberry filling on the other. If you don't have a muffin pan, you can use foil-lined muffin cups (you can just stick them on a baking sheet).

(I decided to include this just in case you still wanted to make a regular-cheesecake. You can make these into mini cheesecakes, too. You'll probably only need to bake them for about 15 minutes or so. You can use the gingersnap crust from the following recipe, or you can just put a Nilla wafer in the bottom of the muffin liner before adding the filling. You may need to add more sugar to both the pumpkin and sweet potato cheesecake fillings. You can leave them plain or garnish them with a dollop of homemade whipped cream and a sprinkle of chopped pecans or a pecan half.)
