I always cook extra food to send home with my kids and my parents..it's also nice to have some for meals early in the week.

My husband will cook the tempura shirmp tonight.. i have everything else ready. He's a good cook.

I love chili con queso... delicious creamy cheese dip with fresh salsa in it.. yummy .. i could eat it every day.

Nah, it's not just you. I thought the same thing as I typed it but was too lazy to go back and word it differently.
 
Wendy.. your sister Debbie and i were talking.. and i told her.. my mom didn't know how to cook at all.. the only thing she can make is fried chicken. She didn't learn to make that til i was in high school. So when i was little my best friends mother taught me how to cook allll kinds of wonderful mexican food.
In fact my parents and her parents are still the best of friends and are going to visit them in 3 weeks. It's nice to have old friends and wonderful new friends like *you*:hug:

I can cook some things, but not many. Raw meat repulses me, so I'm pretty much out of luck when it comes to that. If I can put it in the microwave, oven or only need to boil water, then I am set!

Dawn: is Bf making the shrimp from scratch? I usually buy the Costco tempura shrimp--pop it in the over and it's done! Yummy!

Hey Miss CheryL... Bob came home early and he's peeling the shrimp and then will mix up the batter and fry them in the big fry thing.

Same here!! I refuse to touch raw meat. I never cook any meat. If we want chicken for example, I'll go get a rotisserie chicken from Costco, and then just make all the sides.

2. Cooking Directions
Combine coconut milk, chiles, ginger, garlic, soy sauce, lime juice and brown sugar in a medium bowl. Add shrimp and toss to coat. Cover and marinate in the refrigerator for 10 to 15 minutes, tossing occasionally. Drain well, reserving marinade.
Heat oil in a large nonstick skillet over medium-high heat. Add shrimp and cook, turning once, until barely pink, about 30 seconds per side; transfer to a plate. Add tomato and spinach to the pan; cook, stirring, until the spinach starts to wilt, about 30 seconds. Add the reserved marinade; simmer until the sauce thickens slightly, about 2 minutes. Return the shrimp and any accumulated juices to the pan; heat through. Serve immediately.
