May the Fork Be With You - Complete. Symphony in the Sky Galactic Dessert Party

So I don't leave until tomorrow and it's not a true Disney food but this is Disney related so that counts, right?

Today is the big day and I am 50 and my friend Tara is a cake diva and fellow Disney aficionado. She made me this beautiful birthday cake and I just had to show it because it's gorgeous. It's a vanilla bean crumb with alternating layers of blackberry cream and lemon curd with a Swiss buttercream and gum paste flowers and look who she hid in the swirls on the side. There are three hidden Mickeys that I found on it so far. I love that she made it beautiful and put in this sweet nod too.

Good Morning! We are here and i thought I would toss in a few updates before I get ready to start my day.

Starting with yesterday's most important meal of the day - breakfast!

Our Tonga Toastless Adventure Begins - the thirst awakens. There is not enough coffee in me yet but I am sipping a Diet Pepsi and thinking happy thoughts about fresh pressed pots of Kona coffee but alas - I am to make do with Diet Pepsi.

We are off to Orlando and on the plane. Breakfast was not the legendary Tonga Toast of yore. In our family I have tried to get to Kona or Captain Cooke's on so many trips and something always has come up to the point it is now a family joke. I now intentionally do not even attempt to get Tonga Toast so I always have a reason to go back.

"Honey, let's go to Disney on October."

"Are you sure? We were just there."

"I know but I still have not had Tonga Toast."

"Well we can't have that so check prices and dates."

Sometimes it goes that smoothly.

It is my intention to never get Tonga Toast lest my reason to return is retired.

So Tonga Toastless and fueled by far too little coffee we left for DFW at 4:30 am and by 6:00 am we were MCO bound with only a cold and half congealed McDonalds Egg White Delight and Diet Pepsi to fortify us. I do love Diet Pepsi and know I am entering Diet Coke centric WDW so that is ok by me.

And the inflight movie is Star Wars and that seems fitting so I am content.

You didn't really expect a flavor profile of this did you? The real review begins shortly as we lunch at the Liberty Tree Tavern.
 
Here Ye Here Ye! The Lee Family from Texas is HUNGRY! Aka that airport crummy breakfast has worn off!

But before long we landed, a rental car was procured and were driving through these gates! We decided not to bother checking in at the Gaylord until the evening and went straight to the MK since it would be our only full day to tour together.

It had been a while since I wasn't staying on property so the TTC was an adventure. Took the ferry across the Seven Seas Lagoon and we were instantly hungry!

What to do? Our ADR wasn't for an hour but we didn't want to spoil our appetites for later so we did what any plucky colonists would do and headed straight to Liberty Square and asked if we could be seated early. 10 minutes? No problem. We had barely gotten into the lobby and snapped this controversial "is it or isn't it?" pic.

(I say it is a hidden Mickey and he thinks it's just a coincidence and I am stretching - anyone want to weigh in and settle this?) when we were called to our table in the bright and empty Paul Revere Room.

I should have done the Colony Salad but I thought I would try something unique and try the Liberty Boy's Sandwich. It sounded really interesting and the ingredients sounded like they would blend well and I think they would but maybe the proportions were off.

It's a big sandwich and it looked like it was going to be a great nutty grainy bread colonial inspired bread and it LOOKED like it was too but it was just yeasty and a little sweet - if held up but the seeds were for decoration not a flavor indication. They ended up all over my hands. The pork was tender and yummy and with the promise of the sweetness of carmelized shallots balancing off the peppery arugula and pickled jalapeños I think it would be a good base. But maybe I thought there would be more pop from the description.

I realize it's a theme park so it has to appeal to the masses but I was sad that I had ordered something that didn't deliver for me. I am from Texas so jalapeños don't scare me a bit because if you don't use the seeds and remove the pith you get great flavor without too much heat but they couldn't off set arugula that was swimming in some kind of dressing that was oily and overly sweet and didn't remind me of mushroom mayo at all. I guess I expected a smear of flavored mayo, fresh greens and the accompaniments and it came as a dressed salad that drowned the peppery arugula taste and it asked too much of three tiny little super thinly sliced jalapeños that were pretty good flavor wise with not much zing and some pickled tang but they were just being asked to work too hard. It was a bust for me.

And to add insult to injury the fruit wasn't ripe and the melon was kinda hard. I did deconstruct it and ate half as a sandwich to experience it as it was intended and then with the other half ate just the filling and it was better that way. Maybe I was just expecting something else but I wouldn't order this again.

And wait! It gets worse! Jesse's order was perfection!

I tried to convince him in the interest of fair and balanced dining we should swap halves and share but he wanted every bit of this. The bun was nice and toasted so that it didn't get soggy and it had his favorite things - bacon, beef and cheddar. I had sandwich envy but he did share a fry or three with me and while I don't normally like steak fries and prefer thinner crispy ones these were pillowy perfection. Crispy and hot and salted and then fluffy inside. I never thought I would write a love letter to a fry but they were pretty darned good.

We continued our is it a hidden Mickey debate and both climbed the stairs to freshen up and discussed how that bathroom is, from a map view, not in Liberty Square but in Frintierland over a shared order of Ooey Gooey Toffee cake.

I had told Jesse this dessert would change his life! Maybe I oversold it a bit! Yummy, a little too sweet for me but the ice cream fixes that and while not a life changing experience, it changed my afternoon and I declared it pretty darn good. I brightened up and paid the bill with a smile and decided that my lackluster sandwich was an experience that left me more room for snacks later. There is a perk right?

All told it came to $48.33 pre tip and for a sit down lunch in a theme park I call it a bargain. We paid OOP and left with a beautiful afternoon laid out in front of us and were off to explore the Kingdom.

Next Up - Jess realizes he has never had a Dole Whip - and he still hasn't.

That cake is absolutely perfect!! And it sounds delicious!

I think it is a hidden Mickey - I doubt they do much "by accident" there.

A Dolewhip is a good thing! After a leisurely lunch we puttered around and enjoyed a doom buggy ride with 999 haunts and went under the sea and visited some questionable Mystics and took a raft ride over to Tom Sawyers Island - something we just never had seemed to fit into previous touring plans. So now we can say we have done it and I had hoped to get a snack at Aunt Pollys but alas it was closed but we did enjoy some non traditional seating for the Festival of Fantasy Parade - watched from a distance in two rocking chairs. It wasn't too bad at
all.

After that we thought we might try the suggested waffle fries from Golden Outpost but it was not meant to be.

So I knew what our adventurous and marauding hearts needed! A Dole Whip! I told Jess this and he saw people with Dolewhip Floats and asked if that was a Dolewhip. I said "kind of but not quite" but he replied but it's what I want so....

One Dole Whip of Perfection for me and one Dole Whip Float for Jess. It made us new again in the way only a refreshing pineapply treat of perfection can do!

Honestly he is happier than he looks. He was just a bit shocked to find that while good that the Ooey Gooey Toffee Cake and the Dole Whip was not life change as I had promised but fear not -- our lives were changed later.

And this is my boring but life changing for me Dole Whip of perfection. (Hint - it looks like every other Dolewhip you have seen except mine is life changing and perfect - and gives you the strength to ride POTC with no FP+)

I'm getting here a little late (but conveniently right after my FAVORITE thing: DOLE WHIPS :lovestruc) but I love your review so far! Happy Birthday! I can't think of any better place to celebrate. And OMG your Dick Van Dyke picture!!!!! I think I would have hyperventilated! He's been a favorite since I was a little girl. Can't wait to see more of your review! Hope you're having a wonderful time! Am I using enough exclamation points?!?!? P.S. We live in the Dallas area too :D

Well Welcome, Neighbor!!! And I get excited about Disney so exclaim and point it all you like! And believe me with the DVD meeting - I would have hyperventilated if he hadn't been so darn nice! He got in the train and said "is this whole train for me?" When it was confirmed he sang the bit of the Pinnichio sing "Hey diddly see, an actors life for me" and just grinned and asked "Do you know that one?" And took some spontaneous questions from the crowd. And he still can dance! Multiple times during the day we watched him "step in time" I still get giddy talking about it. Though my favorite part was my 21 year old son and his girlfriend's reaction. Our son has been raised Disney so he tweets "OMG I am standing a mere 6 feet from Dick Van Dyke" and his girlfriend sensed the excitement and was having a great time too but she thinks of him as "the bad guy in Night at the Museum". We edified her and had her watch Mary Poppins when we got home lol

Great reviews! Sorry you didn't enjoy your LTT sandwich; I usually get the Colony salad and it's always good. You can put it on your list for next time!
Thank you Frannie and it was my own fault. I have read enough reviews that I knew the salad was a safe bet and I had not seen any to many on this sandwich. I know why now but everyone's tastes are different so perhaps someone else would love it. It just was not my thing but so many things have been wonderful that I can power through it. Thanks for following along!

Good morning from a quiet room at the Gaylord Palms - and I need to pay some homage to this amazing hotel. It is a huge glass environment full of gardens and ponds and themed restaurants. It feels like a river walk just to get to your room. I think it might be the perfect business/convention hotel as just walking to a gift shop for a soda or some Advil you feel as if you got out even though you stayed on property and never went outside. Every trip to the room has strolls by koi ponds and alligator feedings and many restaurants and lounges.We are blessed to be staying here because my poor husband has to work while I go play during the day and it really is quite lovely and smells like a garden! I'll snap some pics of it today to update for those interested. We have a Galord Texan near us and it is similar but this might be bigger (as a Texan that hurts to say because we contend everything is bigger in Texas) It is a lovely luxury resort and a great place to work and play - or so I have heard about the working part.

So back to the review -Dole Whip fortified and after marauding a bit I wanted to borrow an idea from fellow reviewer and relax on the People Mover as the sun was setting and it seemed a lovely way to view the world. So we procured a sweet cream cheese pretzel and a Diet Coke and headed to the People Mover - which was closed. So we sat on a wall near the People Mover and a miracle occurred. While Jess had not found the Ooey Hooey Toffee cake or the Dole Whip life changing he fell in love with this beauty - the sweet cream cheese pretzel.

It's doughy and warm and filled with just enough sweet creamy filling and HIS LIFE CHANGED! So changed that - well he said he would like to order it again and had trouble remembering to share but that is ok because sometimes when your life is altered you forget to share. Since we had dinner in an hour we went to visit Roz and Sully and Mike instead of getting a second one. It only took me three snacks to finally knock his socks off. Not bad!

And now the Plaza - what a beautiful place. We checked in about 15 minutes early and were told we migh have to wait so true to Disney style in three minutes our buzzer sounded and we were seated near a window with a great view of the castle and it really is a pretty place. All the crystal lighting is quite lovely though I did notice cries really echo in there. As a mom I am pretty sympathetic to that and it doesn't bother me when a little prince or princess is so overwhelmed by all the stimuli at WDW that sometimes the extra emotion overflows but I did notice the cries seemed louder there. Must be the high ceilings.

We both ordered the angus burgers and decided after watching them being shivered that we needed to split a banana split for dessert. This evil ice cream promoting temptress convinced us!

But we both opted to go simple and ordered the Angus Chuck Cheeseburger- mine with bacon cheddar and onions, his with no onions. They were the perfect choice but again after half of it I ditched the bun and ate it knife and fork style. We easily could have shared one and it would have been plenty. The flour dusted Kaiser roll was fresh and warm and delicious and it was cooked just right.

This was the perfect choice but alas we were too full to even contemplate a banana split. I owe you one Dissers! Great meal and great value OOP!
 
Monday morning starts with the breakfast buffet at the Gaylord Palms' Villa de Flora Mediterranean Buffet. I am not a big breakfast eater so this is so wasted on me! It's a beautiful hotel and a beautiful buffet with stations of breads, fruits, breakfast meats, assorted hot and cold cereals, hot potato dishes and scrambled eggs and an omelet station as well as assorted juices and hot beverages. And here is breakfast - sorry I didn't take photos of the stations and while it was nice the waffles were just regular waffle shaped and the only people who visited our table were wait staff and other conference attendees and none wanted to sign autographs.

That is an egg white omelet with spinach ham mushrooms onions and feta topped with salsa. It's a nice buffet but for $24 or so per person you'd need to eat a lot more breakfast than this (I also had coffee and tomato Juice for anyone who cares) to make it worth it. It was a nice setting though and you feel like you're outside.

I felt so fortunate to grab a reservation for Lunch with an Imagineer!

After spending a morning touring DHS is absolutely perfect weather it was time to check in at the Hollywood Brown Derby at about a quarter til 12:00. I was given this adorable pin

And I found I was not the only single on the tour. A really sweet young lady wished me a happy birthday in a really peppy tone and I smiled and asked if she was a CM and it turns out she was and works in attractions at Disney Springs. We chatted a bit and I met another mom and her son who live about 25 minutes from us in Texas. We had a very pleasant chat and before long we were called into the aptly named Bamboo Room.

We were a table of 10 guests with five seated on each side with a lovely couple of hardcore Disney Fans (so much so they own one of the cement turtles from the old River Country in their back yard that they got from EBay and three graphic art students in their early 20s the mom and son (turns out Mom was a CM for six years at DIsneyland too when she was younger) I met already and another CM who works in Mousekeeping at the Boardwalk Inn. So we had a great frou for a really interesting interactive conversation. We were presented with our personalized menus and introduced to our Imagineer for the day, Sarah Matthews as well as the menu for lunch

This a a full four course meal and it lasted about two and a half hours. I began my meal with a refreshing iced tea. We also received a pretty standard sour dough bread service with butter that I think was sprinkled with pink Himalayan sea salt and a bit of tarragon. The butter was sort and creamy and very nice and the roll was remarkably average.

This is a creamy delightful soup and I really loved the grilled cheese that acted like a crouton and the micro greens that balanced the heavy cream with some bright fresh flavor. I didn't finish though as I had so much food coming!

Our second course was the Famous Hollywood Brown Derby Salad - now I thought I had a Cobb salad before - but I have experienced a Cobb-esque salad in the past. This was finely minced and used a tender lettuce (green leaf maybe?) and it was delicate and more tender to the palate than any cobb salad I had ever had. The balance of the pungent blue cheese and the salty strong bacon contrasts with the sweet red ripe tomatoes and seriously it is a delight. It was hard not to finish this as it was so delicious.

I opted for the Charred Fillet of Beef cooked medium rare for my entree and I was approaching the danger zone of being too full! It arrived and looked beautiful!

The beef fillet is flavorful and it was cooked perfectly and the potato bed is soft and pillowy. The mushroom sauce had a little too much salt for my taste but the haricots verde were crisp and tender and delicious. I really regret that I couldn't finish it! My table mates found my food photography amusing so a sweet table mate asked if I wanted to photograph her fish dish so of course I said yes and she finished every bite so I think she liked it.

So by this point everyone was full and the conversation was lively. Our desserts were due to come out soon and Sarah who had hosted the lunch had kept everyone engaged. We discussed her career at Disney - starting as a train conductor in the MK in the Disney College Program with an art degree and how she then applied for a received a professional internship in the design group in admin being told again and again how it did not include design and by the second month after she had completed the back pile of administrative work that her co workers discovered her design background and she began doing design work and worked her way up. Her work now is project management based and it is primarily design and theme consistency for the brand for resort menus and Disney Desitnations and DCL properties. She passed around several examples including the menu set for the Whispering Canyon. (Photo below) and talked about the menus consistently matching the font and theme of the destination. So if you have ever admired the details such as the menu at Be Our Guest appearing to be leather bound and bookish or the Pirate Hat shaped Kids menu that converts to a hat on DCL - Sarah and her team are responsible for that.

I love Disney detailing so here is a fun factoid - the wine list at Carthay Circle restaurant at Disney's California Adventure has seven rivets that appear to hold it down and the Carthay Circle Theater is where Snow White premiered. Lovely little nuance.

Dessert was the trio of mini grapefruit cake, vanilla bean creme brûlée and the chocolate marscapone sphere with apricot orange jam filling and they balanced tart to rich very well. I am not a fan of grapefruit so the grapefruit cake didn't appeal to me. The creme brûlée was nice but don't have the snap of the brûlée breaking through, the chocolate was so rich so a mini desser is perfectly sized.

You also receive a commerative plate from the event signed by your host/hostess and they will store this for you at the Brown Derby podium so you don't have to carry it around all after ok which is a nice perk and it boxed and packed very well with lots of cup port and cushion and made it home in luggage with no issues.

And lastly here I am with Sarah who was a delightful host and made this a very fun event. FYI - because this is a large party the gratuity is included when you receive the check - I always hate when they do that at the standard 18% because I worked as a server through college and overtip as a result. I adjusted accordingly and this check came to around $85 with the added in tip. I'll have to dig up the receipt for the exact number. It was a wonderful special occasion splurge and if anyone is nervous about doing it as a solo travel - don't be! It was really welcoming and fun.

Lastly here I am with Sarah - who shared some great stories about working with Joe Roehde on Aulani and assured me Avatarland is safe in his capable hands.

We booked HBD with Fantasmic! on the second to last night of our trip. I am very excited to eat here! Thanks for sharing the appetizer portion of the Cobb salad. That is enormous! I will definitely skip that.

I wouldn't skip it because it is fantastic but I would share it if you can because it is definitely shareable! It's so laden with protein it fills you up though and you can order it without certain parts if they don't appeal to you. Hope you have a blast at your F! Dinner! It's one of my favorite shows!

Your HBD meal looks amazing and the conversation sounds fun!

Thanks Jo! I was nervous about being a solo but it was really quite fun. I was with my people - it's amazing how a shared love of something can bind you!
