Lunch/Dinner times?

First time to WDW. Looking to make PS for lunch/dinner.

My question is about the times lunch/dinner is served. For example, the Garden Grill says lunch is 12:00 - 3:30 and dinner is 5:00 - 8:00.

What about the time between 3:30 to 5:00? Are they closed?

Same goes for Crystal Palace. Lunch is 11:30 - 2:45 and dinner is 4:30 to closing (I think those are the hours, I could be off) What about the time interval from 2:45 to 4:30, again, are they closed?

During the time interval they are closed to patrons. During this time they are getting ready for the Dinner patrons.
