Food is a struggle this week. Oh, joy.

But the snow has turned to rain! YES!

On plans and first steps...

IMHO, the hardest step to take is not the first. It's the second, third, twentieth. To keep walking. I can start anything. It's keeping it going that's hard.

And as for plans, there is a best plan. It's the one that you make the decision to see to the end.

It's all, God forgive me, like a relationship. Honestly, is it destiny or timing? Is it true love or lots of choices to love? I can start any romance - with diet, exercise, or a man. But sticking to it when times are tough is the hardest, and most rewarding, part.

Liz - what a great analogy! It is so true.

Hi All--I am back and my meeting went well, though was extremely stressful and painful. Thanks for the positive thoughts. :goodvibes Really, at one point during the meeting, the phrase popped into my head, "You people are lucky to even KNOW me, let alone work with me!" :lmao: Anyway, it's over. Check.

LIZ--yes, loved what you said. The second step IS harder than first. And the 100th step might be harder still. How many people do we know--even many here on Wish--who say, "Today is the day! Today is the day I am going to start my program and work it and go to the gym and all of this other wonderful stuff." Only to not follow through?

It is the follow through that is the hard part. Not the starting.

No, tax meeting is coming up, though. This was work stuff. I have to go through a review of my peers once every four years. It is a huge deal, and I have to put together packet that contains about 1,000 pages of stuff. Then they get to treat me like crap for an hour while the critique my work for the last 4 years.

Since I have tenure, they can't fire me. But they can make life hell. And also, this once-every-four-years review is the only time you are eligible for a raise or promotion. So it is a big deal. (We get minor raises from the union each year, but this is the only way to get a merit raise or get a promotion.) Anyway, it was stressful. But over now.

But even more than that to me. Much like running a race - you need to learn to PACE. (Much like Ronda - and her C25K training for example :hug: )

You don't just get up off the couch one day and go out and run a marathon. You must first walk, then jog, then run. Sometimes our tendancies to have an "all or nothing" attitude is one of our biggest stumbling blocks.

Slow and steady TOTALLY wins this race. Every time.
 
My friends tend to laugh at me when I mention my spreadsheets..... but then again those are also friends who can't afford vacations, drive clunkers, and live in dive apartments.... so i figure i can let them laugh ;)

This concept will serve you well -- always live below your means, and you'll end up ahead in the tough times. Congrats!!

Scale (dirty stinkin' liar) put me at 1.8 lb UP today.

But, you know, it is what it is. I'm just chalking it up to AF being in town, and I'll continue to work my program next week. I know I'm doing what I should be doing, and that's enough.

Okay, Turkey Sausage & Orzo Casserole:

1 can (28 oz) tomatoes
Beef broth
Package of turkey sausage (hot, mild or mixed - whatever you like), casings removed and sliced up
2 large onions
2 tablespoons fresh or 2 teaspoons dried basil
2 cups orzo dried pasta
1/4 cup mozzarella cheese

1) Drain the juice from the tomatoes into a measuring cup, and add enough beef broth to equal a total of 3 cups of liquid. Set aside.

2) Put sausage and onions in a 3 quart casserole dish. Cook in 450 degree oven for 45 minutes. Add tomatoes, broth mixture and basil, and scrape down the dish to get the burned bits up. Cook in oven for 10 minutes more.

3) Add pasta. Cover tightly and cook for about 15 more minutes, or until liquid is absorbed. Sprinkle with cheese.


This recipe takes a long time to cook, but it tastes amazing!

Stace--way to go on paying for your Poly trip! I am really impressed with how well you seem to manage your money at such a young age. The fact that you pay for your trips beforehand and are buying a great house--awesome! You should really be proud of this. Most of my students are 20-somethings, and let me tell you, they are all drowning in credit card debt!
I agree with Erika. Best thing you can do is spoil yourself as you go with what you can afford. Great job!

Dawn--yes, HFCS is in tons and tons of stuff. We are careful about it in this house, always have been. So you don't have to spend hours and hours in the store, here is the website that just lists all of the brands and products that don't have HFCS:

Thanks E - a serious question. Did you grow up learning what to eat and how to eat? Or was it something new in your adult years. No cr@p - my mom has lost 12 pounds since December - when she accepted her diabetes diagnosis and her doc started her on strictly watching carbs because she did not know what they were.

Have you consulted your doctor about this diet? My doc didn't want me to go over 75 carbs (20 for the first week and 50-75 max going forward). Also, cholesterol really shouldn't go over 200mg for the day.

Following the diet above will do nothing for your insulin resistance. I'm curious, how high is your insulin?
My doctor is actually in Egypt for 3 weeks and she was there for the consult, ordered the tests and then had her nurse call me on Monday with the results. So no I have not talked to her since she left. I did not ask what my insulin level was so I will ask that.

My carb numbers are like my moms but since she is no help on other things I am not sure how to compare to her for anything else. My triglicerides were high but all other aspects of cholesterol were low.

I meet with the dietician next week so my numbers may very well change but the numbers I am going on are based on sheets from a diabetic sheet packet I was given and told to follow a "diabetic diet" even though I do not have diabetes. From what I understand PCOS mimicks many of the same problems as diabetes and Metformin is also given to PCOS patients for relief of syptoms associated with Metabolic syndrome. I am new to all this so I am sorry if I mis-speak for those of you way more advanced in this arena! Ugh!

Can you refresh my memory on why you watch your insulin? I am trying to remember. Sorry.
WORD to both Kat and Paula.

Kat is dead right. Fruits and vegetables are important for a bunch of reasons. Obviously, they are nutrient-rich. But in addition to that, they are high in fiber and good carbs. This FILLS YOU UP so you eat less. And it also flushes you out, so your body purges toxins. Also, since it is roughage, it works your metabolism. And continuous working of your metabolism increases your metabolic rate. Thus, you burn calories and fat easier and more quickly. So if you want to bulk up your food intake and slim down your waistline, fruits and vegetables are the way to go.

Oh--and FRESH. Not canned. And raw is considered better (more roughage and you can cook the nutrients out if you are not careful). If you have to have cooked, (or just want them that way for a change), steam them instead of sautee. And steam them until al dente. That is a good rule for knowing that you are not cooking the important vitamins out.

Dawn--start posting your good again. I am interested to see where this new eating plan takes you.

And listen to EE. When it comes to insulin stuff, she knows what she is talking about. She has been on the insulin-resistance eating plan for months, has lost major weight, and feels much better all around. :worship: So if she is saying your carbs sound high, you might want to just double-check and make sure you wrote the info. down correctly, etc.

I will post food starting tonight by 8 for the day but...

I weighed on Monday and I was back to 247.8. That was the start for me for monitoring food an starting the metformin and walking 2 miles a day.

Today I am down 5 pounds to 242.8!
I about had a stroke. So proud of my choices of food and my choices to walk and push farther and learn more about what is going into my fat trap.
Need more water still and more sleep cannot hurt but I feel commited and the changes I slowly have been making - less fast food, less soda etc...will only make this go better.

E - you asked about goals for ourself. I want to buy something new for Treyner's graduation to wear. I have 2 full months plus and if I only lose 2 pounds a week - that could mean at least 20 pound off me. That would feel really good and I would feel better about pictures being taken of me.

I need to go to the gym again 3 times a week for strength training. I like walking outside so much more than a TM but my body needs some toning! I plan on incorporating that in 1 week. I think I need 2 weeks of walking at least 5 times a week before adding anything else in.

Everyone else ! I am proud of each of you for all you contribute to this thread!

Dan's mom and kids up here this weekend so I may not be on much but will post my food - promise!
 
So today I did my part on saving the Earth!:rotfl2: I got rid of the HUGE car that I drove... No more expedition! I downsized and got a Ford Edge this afternoon! So I went from seating 8 to seating 5. No more friends coming on Vacation!
Stephen has been trying to get rid of this HUGE car for a while without me knowing and Today he said today is the day! I walked to the dealership after my Fake and bake, and he had it waiting for me! This car is cool it has the sync feature so no more driving and cell phone usage which is great because it's a $200 fine if you get stopped for it. I can hook my ipod and Sam's Zune up to it!

I didn't walk today but I raked half the yard while waiting for them to get all the paperwork together. I had to rake all the dog poop and dead grass. First day of spring and guess what I have tulips and Daffodils popping up! :yay: :yay:

Paula, Nancy, Liz. :wave: Yeah, I've been kind of scarce this week. It's just been a tough week at work, nothing bad just busy. To top that off, I've had a bad week with my RA and I've been in a lot of pain so I've basically been getting up, going to work, coming home and crashing. The RA has gotten into my jaws and it makes my whole face hurt when it acts up. My jaw joints push down on my jaw bone, my teeth don't fit together right and it's unbearable sometimes. So, that's my week. :charac2:

Here is my food so far and again - Spark People was off by 110 calories too much for the tostitos rounds vs bite size. Make sure to look at your labels if you pull up their saved info.

I am not sure what to give to the taco meat either. I used one sparkpeople had. Mine was made it from scratch with shredded beef, peppers, onion and garlic to season it with some southwest chipotle seasoning and a can of diced tomatoes. So no grease added - I drained it before.

Here is the food so far. Need a few glasses of water still and a snack in 1 hour. Plenty of room for it.

My upbringing was pure meat and potatoes German.

When I decided to start watching what I ate, I did a lot of basic research and of course labels, since they are right on almost everything. Sparkpeople also has a lot of good articles and guides as to what to do.

Plus, google is a great resource. I google everyone and everything. ;)

I am having a tasty frosty adult beverage. We chose yuengling as it is about 135 cals in a 12 oz serving. Not the best nutritional choice, but, tracked and counted. :)
