Help me decide when to visit Epcot

We just booked a trip for April and I'm so excited I can't stand it! My daughter will be 2.5 yrs old when we go. Help me decide when to visit Epcot.
We are flying in Friday evening, and won't arrive at our place (on the east coast) until probably 10 or so.
I want to do Epcot on Saturday, I hear Saturdays are good days for crowd levels cause it's a travel day for most people and they are either coming of going and really START their vacation on Sunday. But I'm concerned that she will have a rough night with the travel and the excitement and be in meltdown mode on Saturday. Also, Saturday is evening EMH at future world (which we wouldn't be able to participate in).
So, would you do Epcot on Sunday instead? Is Saturday really less busy than Sunday in the parks usually?
ALso worth noting, I love Epcot to pieces and its possible I can't actually stand to wait a whole day of vacation before going without becoming insane, lol.
 
My advice would be to just go ahead and go to Epcot, but plan to take it easy. Do the things you know will appeal to her on that day. Will you have hoppers? You can always go back to the hotel for a nap and then go to another park in the evening to avoid the EMH crowds. If no hoppers, stay as long as she will let you in Epcot, then nap, then go to DTD for dinner and window shopping.
