If you've already made ADRs, be sure to call back the reservation line and have them add that you're gluten-free to your reservation. Have your confirmation numbers handy when you call.

Many years ago, a chef at Artist Point told me that Special Diets alerts them a week or two in advance of your reservation and it allows them to be sure to have enough GF or milk-free or peanut-free (whatever "-free" applies to you!) items available. In fact, once my food-allergic DD was served a piece of cake for dessert free of the foods she's allergic to. The chef explained he had several diners in that day with the same allergy and made a special dessert to accommodate all of them.
