Oh Lisa, I am so sorry about your fall. There is nothing scarier. Don't go too long without seeing a doctor if you think there is major damage. You should also be checked out because you fainted.

Lisa - Yikes! You are so lucky you didn't hit your head. I hope your knee feels better and that there is no serious damage. Take it easy. :flower3:
 
Just saying hi before bed. I'm feeling pretty tentative still. I'm going to try to go to the doctor tomorrow. Just couldn't move enough today. My foot has a bruise that looks like Florida from end to end and a big ankle bone. My knee hurts the worse. I am so unhappy about this setback. Two weeks after Tom's cancer surgery two years ago I had a nasty fall because of a tree root two days before we were leaving for Hawaii. I couldn't wear my normal shoes or walk properly for a year afterward. I always swear I will never let that happen again, but I wasn't conscious to avoid it this time. I think this time it's not quite as bad as before. It's the other foot. Brother.:sad2:
 
I had clipped this from a magazine - I think it was Rachel Ray's mag.

Cauliflower fritters
1 lrg. head of cauliflower
1/2 C. flour
1 lrg. egg, beaten

Steam the cauliflower until tender, 10-15 min. Transfer to a lrg. bowl, mash and let cool for 10 min. Stir in flour and egg, season with S & P and refrigerate for 15 min. Roll 1/4 cupfuls into balls, then flatten into patties, to make a total of 12 to 14. In a skillet, heat 2 tbslp. olive oil over med-high heat. Working in batches, fry the patties until golden brown, about 4 min. each side.

I haven't made them yet, but when I do I want to add finely chopped onion to them and use a mixture of soy and reg. flour. I think they'll be good as a side dish. In the mag they say to serve them over salad.
 

Barb, it sounds like The torani syrup would be a good substitute for agave. The only difference would be the browning in baked products. Natural sugar produces browning, where the syrup will not.

I went to meditation tonight. It's helping so much! I feel a thousand times better after going. I'm going to be trying to make it every Wednesday night.

I got a whole bunch of supplements today that are recommended for the chronic fatigue. They hit all of Diane's recommendations except calcium, and they have extra Vitamin B. So I'm going to be trying those to see how I feel, plus adding the calcium and fish oil. I'm on a mission to heal myself. I feel empowered with this way of eating, plus all of the wonderful gifts god is bringing into my life. All of you being one of them!

I lived on my smoothies and unsalted shelled peanuts today. I'm having the smoothies a lot because there is less thinking involved. I know that most of us like to get creative with the food but honestly, I don't want to think about it right now. I've already got my smoothie ingredients in the blender placed in the fridge for the morning, but not yet blended. All I have to do is put it on the blender base, add a couple of ice cubes, give it a spin and breakfast will be ready.

Ok, going to try to sleep now. I hope that everyone is well. Stay in bed Lisa until your sure you are steady. Everyone stay warm. There are some rumors that Tampa may have a chance of snow this weekend. No kidding. That would be so funny!

Well, I have had a bad mishap so MIA today. Last night I took a hot tub alone because my shoulder had a muscle spasm. I got out before 20 minutes and it was 102 degrees so not too hot. I got to the door to the bathroom, which is just a few steps and I fainted onto the concrete and slid part way off of the top step. I'm very, very fortunate that I didn't hit my head, as it was hanging over the step when Tom got to me. I twisted something in my knee really bad and sprained the opposite ankle. It's black and blue and all of my toes are scuffed up. I had to crawl up the stairs to bed last night. Spent the night and day icing it and on Vicadin. I'm going to try to get to the doctor tomorrow. Needless to say, I have ruined my resolution to ramp up the exercise. I live in fear of an injury that takes me out of exercising since I gain so easily, but here I find myself again. Tom took the day off to look after me. He was really scared. I hope and pray there isn't anything torn in my knee. I can feel the injured part with my fingers. It's on the inside edge.

Barb, the worst part is that all my cute new pants need high heels to not be too long! I'm devastated! Back to skirts and flats. Sigh!

Lisa!!! I think you do need to go to the doctor!! Thank God you didn't get hurt worse!!! I can only do 102* for 10-15 min max and even then I get light headed in the hot tub. Did you start to get a headache or anything before you got out? I know my head will begin to hurt and if I don't get out right away, I become very lightheaded.

Kathy - if you get some eggbeaters and add a bit of ground almond meal you can have great free pancakes. I use regular eggs, but I don't count them, either.
Here is a recipe I found.

Low-Carb Pancakes (Wheat Gluten)

(1 serving)

• 2 eggs
• 2 and 1/2 Tablespoons wheat gluten (I use almond meal)
• 2 Tablespoons heavy whipping cream (1 Tablespoon Crean and 1water would be fine)
• 1 Tablespoon olive Oil
• 1 Tablespoon water
• 1/2 teaspoon baking powder
• 1 teaspoon splenda or 1 packet other sugar substitute
Simply mix together all the ingredients with a whisk - batter may be a bit runny. Cook on a lightly greased skillet as you would any pancake recipe. Drop batter on surface large spoonfuls. Cook until each side is lightly browned.

Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.

I also have a flax recipe that is not bad, but it does not seem to be on the computer so will have to input it later.

All of these are similar to the muffins, just cooked in a frying pan.

These sound so good! I may just have to try them!! Pancakes are my biggest downfall!! I will have to be careful not to eat too many even if they are legal!!

Nell, SNOW? That would be awesome for you! I can send you some of ours if you need more LOL. We are to get another storm system coming in this afternoon/evening. They are saying 6+ inches. I hope they figure out a better idea of how much before it gets here!!
Not much going on here. My knee is feeling much better, wore the knee brace yesterday at work. I did take it off a couple hours before I was done though. I have to go to the chiropractor this evening. My appointment is 3:30 but I need to call and make it a bit later. I am still putting my rice sock (I keep it in the freezer) on it as much as I can. When I get home from work, I sit in the recliner with it propped up for a good hour. My housework is getting a bit neglected, but oh well at this point.
Ok, have to get ready for work. Long, long day today. Have to work tonight after the chiropractor appointment :(
Nell, I'm so glad your body is healing itself. Even if it is a bad type of blessing. I don't miss that part at all!!

Well, looks like WE are expecting more snow here too! OMG! Hopefully no more than 2-4 inches...at least it will have to get warmer to snow! LOL, its been so darn cold...warmed up to the low 30's finally. Might have to crochet myself a pony hair snowsuit at this rate! they surely seem happy and not cold at all! Wouldnt that just be a picture? Pony in a pony hair suit! :rotfl:

Lisa - hope you are able to get to the doctor today...sounds like an overall checkup is in order to be sure nothing else was responsible for the faint...we will all be praying for you!

Nell - sounds like you are doing well with the smoothies, so why not? I tend to fall into doing the same old same old day after day for the exact same reason! I dont have time to think about it all, so just have all the stuff ready in advance so I can grab and go. I roasted one of the cheap turkeys I bought during thanksgiving sales and put in the freezer, so this weeks dinners are turkey and veggies all week! I wish my shakeology wasnt a step 2 food, since all the veggies were in that one drink. Maybe I will send the rest of it on to you for when you go back to step 2...it was pretty darn good and way easy!! I think 12g carbs and all those veggies...

Kathy - sounds like the brace is giving your knee that support it needs, so keep the darn thing on! I've always been a fan of "whatever works" !!

Diane - the fritters sound good, but I think we are supposed to stay away from any white flour...maybe add all soy or almond flour? I saw a recipe for mock mac and cheese where you mash the cauliflower like we do, but then add cream and cheeses and bake in the oven for 30 minutes....that might be good!

Hey Bev...are you back? Saw your post on FB and just wondered why you werent back here with us yet!??

Off to feed ponies, then down the street to leave food for the poor abandoned dog...still cant get the poor guy to come near me so I can grab him and bring him inside to get warm...cross your fingers maybe today he will let me near.

:scared1: OMG, you could have hit your head so easily! I'm so glad Tom found you fairly quickly. So you have one leg with a hurt knee and the other with a hurt ankle? No wonder you can't walk. Please let us know what you find out from the doctor. :hug:
 
If you do not want the flavor of a syrup you can make a simple syrup out of Splenda - one cup Splenda and one cup water and boil together. I don't know if the agave is part of the liquid or not. If you don't need the liquid I would just use plain splenda or sweetener of choice. The agave would cause browning just like sugar. You can use a teaspoon of black strap molasses to get the same effect without too much carb damage. Dana Carpender recommends that all the time in her cook books.

Jocelyn - Thanks for the tips ! I am just concerned that I need to use a liquid sweetner to replace a liquid sweetner or the recipe will be too dry. I get the impression from the book's online reviews that she uses agave to sweeten everything.

No, Kathy, we've had our hottub set there for over 10 years. I get too cold any lower. It's weird, but I guess there's always a first time. We have a blower in out hot tub so it gets a lot of air forced through, which makes it colder if it's not running hot enough.
 
I'm going to take a shower and call the doctor. I've always had rather low blood pressure, so not too worried about my overall health. I mostly want to know if there is anything torn in my knee. It hurts like the dickens.
 
My doctor's on vacation so I have to see a nurse, which doesn't give me much hope for a definitive answer. Maybe she'll order xrays. I'm seeing my Bowen therapist later in the day.

Nell, We use Smart Balance Organic and Earth Balance Organic spreads. Neither of them have any sugar as far as we can see. Smart Balance has sugar in their mayo and molasses in their pb, but that's all I saw on their site. Which one were you concerned about?
 
Lisa, it's mainly the mayo. I'd like to make a dressing to dip veggies in, and mayo would make the process easier, but with the sugar it makes me nervous.

OIC, that is a challenge. I've found a lot of 1 carb dressings that are terrific. Drews in particular. We had a Chinese Chicken salad at home with shredded cabbage, green onion, sliced almonds and Annie's ****ake dressing - organic and low carb. It's fantastic!

I'm going to the doctor at 1:20 and then to my Bowen therapist. Mystery is solved about the hot tub. The system was set for 102 and that's what it displayed, but it was heating to 105, according to a separate thermometer we checked today. I've called a repair man. I'm lucky I didn't faint in the tub and drown. This could have been a horrible mistake.
