What’s for Dinner Tonight?

Lasagna Tonite and tomorrow night.

I made a full tray for Thanksgiving and two half trays to freeze for me for a later day. Yes, the kids/grandchildren always request it. Not that we need it.

One more left for another time :) and it will take care of two nights again. :smooth:
 

I think the snow is finally ending. We still have light flurries. I can’t remember the last time we had multiple days of snow. It was nice it fell over the weekend. DH is digging us out I’ll need to run out later for gas.

Enjoying my last day of the long weekend and the snow by making and canning a batch of sauce. I can the tomatoes from my garden then reprocess some into sauce. Making 12 jars. It smells delicious in here!
 
Had unexpected company Saturday.
A neighbor, lost her keys and phone so we hung out together until everything was resolved as much as it could be on a snowy weekend. Good thing she was here since she took my mind off other matters like the new weekend home attendant who doesn’t know how to make up a bed or clean a sink 😳. I know I’m picky but this one was scaryyyyyy.
Parents, please ensure that your children know these life skills before sending them out into the world - stepping off my soapbox now 🤣.

Nabe and I ate some black bean soup from the freezer and I added a piece of kielbasa to it.

We “decimated” the clementines and nuts throughout the day so no dessert.


Last night, I made pasta fagioli using pantry goods, some ham and almost the end of the fridge leftovers. Still need to use up some butter leaf lettuce that I forgot about earlier this week but maybe I’ll use it today and that’ll be the end of that.
 
Got to our place around sunset and took a quick trip to the store to get a few items for dinner last night. Made a salad and grilled some fresh snapper. My husband was like a little kid when he saw Gulf 🐠 🌊 as we were landing yesterday. 🤣

Need to make a list of our favorite eats around here and get to shopping!

Yesterday (Sunday) we went to a pub to catch the football game at halftime- YAY PATS!- so ate there. DH had brisket tacos and I had a cheese steak sub. He ate all of his, I ate about 1/3rd of mine. It was OK but not worth taking home leftovers.

I made a pot of chicken broth on Saturday which will morph into something for supper tonight. Maybe just chicken soup. It's been lightly snowing pretty much non-stop since Saturday. I can't tell how much we've had overall- maybe 10"? All I know is that DH periodically goes out to shovel. Since his shoulder surgery he'd rather shovel smaller amounts more frequently than do one big, heavy shoveling.
 
Ate part of a huge Chop Salad at Rainforest
It's cold here at WDW.....tomorrow too, and then should warm up.
I couldn't feel my toes, nose or hands for awhile.

I think dinner will be some soup tonight.....not sure what kind yet.
 
What meal kit companies have you tried and do you have any preferences/recommendations?
We’ve tried a lot of different ones over the years, going back to Covid shutdown time. We often rotate through companies, depending on deals with the sites or with our credit card company. Here’s the ones I can think of (and my thoughts):

Hello Fresh: Good selections plus was offering a free item (e.g. dessert or appetizer) with every box ordered. Got pretty pricey lately (about $50 a meal kit for 4 people)

Home Chef: Decent meals, albeit not the most creative.

Blue Apron: One of the originals, but mostly pretty basic meals, nothing I couldn’t make on my own with ingredients I usually had around the house.

Sunbasket: Really liked this one. Big emphasis on fresh ingredients and things like whole grains and organic products. Our boys weren’t a big fan, so we only did this for the year they were both away at college and it was just my wife and I.

Green Chef: Only tried this recently for a couple meals, but they were pretty good. Would try them again if I get a good deal to come back.

Gobble: First box coming tomorrow, so I’ll let you know 😉. Had a great deal with the site and our credit card company so the box coming this week (2 meals / 4 servings) was only like $50.

Cook Unity: Tried this one time when I had a $30 off deal. These were premade, single serving meals, most inspired by famous chefs. Pretty good, but wouldn’t have been worth it at full price.
 
Made and canned 12 jars of sauce. That will make for some easy weekend meals.

I have granola in the oven now. That will be my lunch with yogurt and some fruit at work this week.
