Which showing is usually better for crowds? Fantasmic will be showing at 8:30 pm and 10 pm. I assume that the later showing would be less crowded, is that a correct assumption?

Yes, if the 2nd Fantasmic fits into your plans, definitely attend that one. The seating will begin at approximately 9:30 - after they finish cleaning the amphitheater.
