First, let me say "thanks" to everyone who posts on this thread!! Although there is NO WAY my family could even come close to $10/day on food (I am not even going to admit to how much we spend on food a month, and there are only 3 of us :eek: ). But, you have all made me think about the quantities of food I throw away...and for that, I sincerely thank you!!!!:love:

However, I have to admit...this post made me crack up!!! I am not one to pick on spelling (I make mistakes frequently)...but, this is too cute!! MommieP, I am assuming you meant ricotta, and not regatta...because the thought of your children eating a $3 yacht race has definitely tickled my funny bone!!! Please don't think I am making fun of you in any way....:love:

I will have to go back over the whole thread to see what I can do to reduce our bill. I do try and buy in bulk items like cheerios,eggs,chicken, coffee, OJ, bread and a few other things. I do that about once a month or every 3 weeks. I seriously dont think I can get away with some of the items though that I did see listed. dh needs his protein and I grill out alot. I can get away with starch since it isnt the healthiest way to eat every day anyhow. a normal dinner for us is grilled chicken, salad and a veggie. dd does like kraft mac and cheese but I wont give that to her all the time. Plus add in fresh fruit to the mix- I cannot get under $100 per week with my budget for groceries for a family of 4. Breakfast for me is usually toast and coffee, the kids eat cereal. Lunchs are PB and J most days so Im not sure where else to look. I do stock up when publix has a BOGO sale but thats the extend of my savings.. Plus add to the budget is dh who is gone for his 24 hour shift 2-3 days per week. He needs $10.00 each shift that goes towards his dinner at the fire house. granted if it doesnt cost that much he keeps it for something else but that is $30 normally per week to allocate on top of my home grocery budget.. :confused3

roasted redskin potatoes w/ herbs and olive oil, tossed with roasted sweet red peppers, parsley, green onions, balsamic vinegar
fresh spinach (well, we had romaine for the kiddos who don't like spinach yet)

We celebrated my mom's 65th bday :) One sister brought vanilla ice cream and whipped cream for the shortcakes (my mother's requested bday dessert), my other sister brought the spinach and romaine and a superyummy spinach dip with pita chips (Costco) and my parents brought over some wine and limoncello ;)

We have the biggest house for entertaining so we usually host the birthdays, holidays and other celebrations :) We are blessed in that my parents' house backs to ours across a creek (different neighborhoods), one sister lives three blocks away and the other sister is only 20 minutes away. Life is good :)

Dawn1967 - where do you get Kosher hot dogs for less than .50 a package? Hebrew National sells for about $5.00 a package near me and when they go on sale it's only to $1.99. And that's a GREAT price for Kosher hot dogs.

We eat them a lot and I'd love to find out how I can get them cheaper!

Regarding the zucchini, you can always bake up some quick bread - it tastes a lot like banana bread [as a kid I hated zucchini but loved zucchini bread]. My Marcella Hazan cookbook also has a recipe for a pasta sauce made from zucchini, but it might have onions in it, which I remember you saying your kids won't eat.

And I wanted to ask - is Chuck Wagon a particular recipe, or is it just a made-up, spur of the moment kind of dish?

Zucchini caviar. Brown some onions in a little oil. add shredded zucchini and can of diced tomatoes. season with whatever herbs you like and cook on low heat until the whole thing looks like a porridge. Add salt and pepper (I also like to add very finely minced garlic at this point). Cool. Eat as a spread with veggies or pita or toast.

Stuffed Zucchini: Use whatever stuffing you like (I like rice beef and shredded carrots)
 
Tomatoes are in season! If you haven't grown your own, you can get them really cheap at a farmers market right now.

Cut up about 15 medium sized tomatos ($0-3 depending on where you buy them), toss them and a pound of lean ground beef (On sale for $2.79) plus a pound of beans (under $1) into your crock pot. Add seasonings to taste and cook up a big pot of chilli. Make some bisquick biscuits to go with it. It should feed an average family two healthy dinners for under $8 total. If you leave the meat out and subsitute it with another pound of beans, you've got an even more frugal meal. It's easy as can be to make, low fat, low sodium, and yummy.

I've got to ask what kind of kosher dogs you get for .30 a package? I only eat kosher hotdogs ( my kids don't eat hotdogs) and the Hebrew Nationals are $4.99 a package except when they go on sale 2/$5 which is very rare.

chuck wagon was a bean recipie that was supposed to have onions in it . (layer with onions) I made it with mash tatoes insted ( to make it more filling and like a casarole) I do add onion sait for flavor:rolleyes1
Let me tell you it is very filling I can only eat one serving. My pickey child who hates meat will eat 2:yay: . I have plenty of left overs also. Now if dh was here I would prob have no left overs.


here is the way I make it.

I take a can of pinto, or kidney beans. I mash it with a potatoe masher, so you can not tell its beans. Then I fry it with the bacon and onion sailt:rolleyes1 . Then set aside

step 1
I mash the potatoes and use that as my first layer
then I put the bean/ bacon mix on top and the I cover with cheddar cheese and bake until cheese melts. It is really good and really filling

I second that. In fact, how can you get anything Kosher for cheap? The minute they slap a Kosher label on it, the price doubles.

I asked this a bit ago, as well. I have never seen kosher hot dogs for .30. Kosher is always more expensive than non-Kosher meat.
 
Here's my zucchini recipe that converted my zucchini-hating DH:

Slice zucchini into rounds, place in a single layer in a baking pan. Melt a few tablespoons of butter and gently pour over the top of the rounds (on them, not between them). Sprinkle with salt, pepper and garlic powder--be generous on the garlic. Tope with lots of Parmesan cheese. Bake at 400 until the zucchini is cooked and the cheese is brown and bubbly.

This is a recipe I got from my mom--feel free to experiment with proportions and cooking time, I just do it by feel. My family loves this, and you can even use the "baseball bat" zucchini that yo find hiding under the leaves.
