Do you have to book all 3 FastPasses for a day at once or could you, in trying to get the rarest fastpasses, book 1 for a day, then skip and book one for another day, then 1 for a third day, then come back and fill the others in later on without having to give up the original fastpasses you already booked?

You can book them whenever you want. You can also change them after you have booked them- change the time slot or cancel them all together and replace them with something else. Its a great system. I recommend booking the ones you know you will want to do and that are the most popular and then release them or change them later.

In my experience you need to book all 3 FPs for 1 day...you can't just make 1 FP for a day and then go back and make 2 more without losing the current FP you had booked. So what I did was booked my main FP Anna & Elsa and then 2 dummy FPs...then once you book the FPs you can go in and Modify them by either changing the time or changing the experience

It will automatically pick 2 others for you if you try to only pick 1. So if you don't care what it picks (if you are going to just change the 2 you don't want after you are all done for the week or whatever), you can make sure you pick your #1 choice, let it pick the others for you and just continue on that way. Then go back and change them around. But you will have 3 fp+ per day picked whether you only pick 1 yourself, or all 3.

This. The system won't let you only book 1 FP...and if you "cancel" the other 2 FP, you won't be able to reschedule them without a call to IT (and that's not a guarantee).

If for whatever reason you do only want to book 1 meaningful (i.e. one you actually want) FP+ on any given day of your trip, I would book that meaningful FP+ and then 2 other FPs for rides that don't run out of capacity - like Captain EO or something (so you're not taking hard to get FP+ from people who really want them). Whenever you decide to make those other 2 FP+ meaningful ones, then you can go back to them and modify the attractions and times as you wish (within the availability that's left).

you cannot just book one at a time.
you must book all 3 at once.
you are given 4 options for timing.
you can later go back and tweak the attractions and times.

so you could always pick the hardest to get attraction that you want and then just pick two random ones and then go back after and tweak the other two and the times.
