Hi there Nativetxn, thank you for the info on the edema thing. I will check that out. For the moment, I am doing well. The scales have inched their way down the past week and I am at an all time low and hope to continue until weigh in. You have done so well so far. My problem with the packaged diets and other faddish type diets is that when you go 'off' them and are faced with the real world again it is so easy for those pounds to find their way home. I have been on about every diet known to man or beast and even had stomach stapling many years ago and this is the longest and best I have ever done. It was one year in February and I lost about 77 pounds last year and am working on the rest this year and if I don't make it all the way I am willing to continue for as long as it takes and then juggle my way through maintaince. I can never go 'off' this diet as that is what got me in this shape to begin with.

I have found many substitutes in my efforts to find foods that keep me full without adding pounds. My current favorites are

Strawberry pie

1 pkg. SF cook and serve vanilla pudding
1 pkg. SF strawberry Jell-O
2 cups water
16 oz pkg. strawberries

Mix vanilla pudding and water in small saucepan and bring to a boil over low
heat stirring frequently. When it starts to thicken remove from heat and mix
in Jell-O until dissolved. Set aside to cool. While this is cooling wash and
clean strawberries and slice into the bottom of a pie pan. Then pour pudding
mix over the berries and refrigerate until set.

Makes 6 servings at 1 point each.

Don't forget to add the points/calories for Cool Whip if you add it.

Dotti's Crustless Pumpkin Pie
Whole Pie = 4 pts!

15 oz can pumpkin
1/2 cup EggBeaters
1 1/2 cup skim milk
1/2 - 3/4 cup Splenda - depends on how sweet you want it
1/2 teaspoon salt
1 teaspoon pumpkin pie spice

Beat all ingredients together until smooth; put in pie pan sprayed with non-stick cooking spray. Bake at 400ºF for 15 minutes, then at 375ºF for 45 minutes or until a knife inserted in center comes out clean.

I eat this almost everyday. It counts as 3-4 veggies, 1 protein and 1 milk. Even with Cool Whip it is not fattening and oh so filling. Don't forget to count the points/calories though.

I have about a dozen recipes that I make on a regular basis and they have kept me from many wild sprees. I try to keep plenty of healthy choices at hand and never cook while hungry. Sounds funny but it has worked for me.

Linda you have done so well. What a wonderful inspiration you are for WISH :)

I feel about the same way about Atkins as you feel about your eating plan. This plan is going to be my lifetime plan.

You have a great attitude and determination, I'm really glad you are in my support group.

You should post that recipe to the WW recipe thread. It's right <b>HERE</b>

Would these recipes be OK on Atkins??? I didn't see anything super high in carb?
 


(Banging my head against the wall in frustration) I cannot believe that I have never known that there was this recipe thread on DIS!!! Many blessings upon you dear Nativetxn for pointing me in the right direction.. Hope I have some time to read it this evening.

I have tried the Adkins diet and while I greatly enjoyed it at the beginning I found myself with such carb cravings that I kept going off plan. I am happy it works for you though. Maybe, when I get some of my bad habits under control I will try it again. Would be much cheaper and easier than what I do now.

Thank you for the kind words. I am setting up some diet clubs in our town right now. I figure a bad example can teach more than a good one. LOL

I don't remember much about how many carbs are allowed but would guess that these recipes would work just fine on Adkins. They are yummy and very filling. When confronted by extreme cravings I just whomp up something huge and low in points to fool myself into thinking I am getting 'enough'.

Doesn't that hurt, when you bang your head against the wall like that? Ouch ;)

I'm following induction right now which is <20 grams of carbohydrates each day, I imagine those dishes would work on maintenance. I just hate wasting carbs on any kind of milk ;) I'll bet I could substitute cream for the milk, though :)
