Last week was kind of nuts with people coming and going around here.

Tuesday
It was only hubby and I so we just scrounged.


Wednesday
We were supposed to be alone on Wednesday but ended up with three extra and ordered take-out pizza.


Thursday
I made a huge batch of taco meat, refried beans and Mexican rice only to find out that everyone stopped for Taco Bell! Hubby was the only one who ate my dinner-the rest went into the freezer.


Friday
We grilled out and it was soooo yummy!

Tonight we're all going to the balloon festival. I'm going to make turkey/avocado BLTs but I imagine a lot of junk will be consumed at the festival too ;)
 
Every two or three months, we dedicate Saturday to cooking. A friend comes over and we cook all day and freeze the results - with enough meals to last at least a month. To make it more complicated all of the meals have to be gluten-free. Last Saturday we had two pressure cookers going (split pea soup and spaghetti sauce), two crockpots full of chili, and our traeger bbq filled with a large pork roast, a beef brisket, and twelve chicken breasts. We ended up with seventy five dishes (split between the two of us) and included:

meatballs with spaghetti sauce
meatloaf
mango chicken
enchiladas (beef, pork and chicken)
taco casserole
alice spring chicken
chili
split-pea soup

An exhausting day, but well worth it later in the month!

I just got several books on once a month cooking. I plan to do this in the Fall. I need to read all about it before jumping in. It sounds like a great way to plan and execute. I love that the shopping lists and preps are all laid out in the books. :)

It does look like it's worth it to cook one day and have it all for a month!

Any chance of getting your recipe for the cashew chicken salad? It sounds yummy and perfect for out summer long heat wave!

jsmla, you guys know how to grill! It all looks like it was great!

I bet the balloon festival is tons of fun.
 
I need to make some plans for next week!

This past week, my son made dinner one night, topping corn tortillas with spinach, a raw nut cheese topping, and a raw "sour cream" type topping, also made with nuts. Served with a big salad. This was very tasty and rich.

Then the next night I made a cauliflower marinara sauce (you chop the steamed cauliflower up small before adding it to a from-scratch tomato sauce that also has onions in it) and served it over whole-wheat spaghetti. Served with green salad.

Next night we both got home late and tired, but we had one veggie burger left in the freezer. Dan cut it into quarters, served it on whole-wheat mini buns as sliders (two each) and made a salad with plenty of added veggies, fruit, nuts and seeds.

We had some leftover marinara sauce, so I steamed broccoli last night and served the sauce over it, topped with some vegan cheese (Daiya).

For tonight I need to go through the fridge and see what we need to use up, then plan next week's meals.

Cashew Chicken Salad:

3 chicken breasts-chopped
1 cup cashews-chopped
1/2 red onion-chopped
2 stalks celery-chopped
2 cups grapes- halved
3/4 cup mayonnaise
1 pkg dry ranch dressing mix
Salt and pepper to taste

Mix mayo and ranch dressing mix. Fold in remaining ingredients. Salt and pepper to taste.


We have still not gotten the results from DH's x-rays, breathing test and CT scan! We should find out Monday. DH is VERY nervous, not his normal reaction to stress at all. I feel for him. :sad1:

Quick and Easy Jambalaya (for our Louisiana DISers this recipe would be a disgrace since it uses boxed Jambalaya! :rotfl2:)
Diced Cantaloupe

Wednesday-
Crab Melts
Chips
Baby Carrots and Dip

Thursday-
Crunchy Chicken
Fettucine Alfredo
Parmesean Broccoli
*Chocolate Pudding with Cool Whip (did not fix it last week)

Friday-
Spaghetti with Meat Sauce (DH makes homemade sauce)
Tossed Salad
Garlic Bread

Oopsi, thanks for letting us know about your DH. I'll keep him in my thoughts and prayers. I hope he finds out soon. Please keep us updated. :hug:

For the new week:
Saturday/Monday: chicken gyros, Greek pasta salad, ESPN cucumber/onions
Sunday/Tueday: smothered pork chops, wild rice, black eyed peas
Wednesday: red beans and rice with sausage, seven layer salad
Thursday: fish, seven layer salad, and parmesan noodles
Friday: really wanting to try the new Momma Goldberg's deli

We also made a pina colada cake to eat on through the week.
 
Well things did not go as planned tonight. We ended up having puffy pancakes with sausage and fruit instead of our original idea. At least it was not take-out.
 
The Balloon Festival was cancelled due to lightning :sad1:

We decided to drown our sorrows in burgers, onion rings and wings at a local dive.

Company leaves today and hubby and I are going to grill burgers tonight. No company until Friday so I'm going to try to plan out our menu for M-Th later today. We REALLY need to get back to eating in!
 
This week is really difficult. Due to situations out of my control, I will not have much of any grocery money this week. So, I am trying to rework the meals to use as much as I can here at home. I'm really stressed out!

Once I figure things out, I'll post my menu!
 
I can't remember if i got this recipe off of this board but this is so easy, so good, and cheap!!

White Chicken Chilli
boil chicken(i always use 4 thighs)
measure out a can of chicken broth
debone chicken

add:
2 c of northern beans
1 c of white corn
taco seasoning mix
sm. c of green chilles
1/2 c of sour cream
simmer and i serve with tortilla chips
it is so good, i'm making it again on next week's menu!!


Thanks for the recipe. I have a lot of whole chickens in my freezer and am looking for any recipes I can to use them. I think I will use the chicken broth from when I boil the chicken instead of buying a can.
 
Okay... I THINK I have it figured out for next week.


- Grilled Malibu Chicken, Rolls, Corn on the Cob- From last week and we never got to make so just moving it.

- Hot Dogs on the grill, Baked Beans, fries- Only have to buy the buns, beans, and fries... plus fries will get reused and extra hot dogs means lunch!

- Beef with Snow Peas, Egg Rolls, Rice- All I need are the snow peas.

- Steak, baked potatoes, Parm Spinach- All I would need are the potatoes and sour cream. Sour cream would also be used later. This would also most likely be enough to make has the next day for lunch!

- Tuna Melts, fries- Rest of fries being used and have everything else.

- Beef and Bean Burritos, Mexican Rice- I would need the beans, tortillas, sauce, and cheese... sour cream from previous meals. Leftovers would mean lunch again.
 
I so need to start doing this..I also need to find things I can freeze and re-heat easily.

Monday~Chicken Tortilla Casserole

Tuesday~Kilbassa with whole wheat pasta, diced tomatoes, green pepper, onion and garlic with a dash of cheese.

Wednesday~Burrito Bake

Thursday~Blue Bayou's Monte Cristo from Disneyland

Friday~ Breakfast Night! Biscuts and Gravy, bacon and scrambled eggs

Saturday~ Soup and Sandwhich's

Sunday~ Meatloaf with Mashed Potatoes and steamed veggies
 
Electric bill is breaking our budget, so I was only able to get the basics and trying to live out of the pantry and freezer buying only what additions I need to get by. Menu for the week is not complete but here is a loose idea of what we'll have.
Today/Sun - spaghetti with meat sauce, salad, garlic toast
Mon - roasted pork loin, potatoes, brussels sprouts, sauteed apples
Tues - grilled chicken or burgers
Weds - fried potatoes and wurst, peas in cream sauce, salad
Thurs - ham steak, brazilian white rice, california blend veggies
Fri - barbecue chicken pizza
Sat - leftovers or ham fried rice

Sunday: Chicken enchiladas (made with Philly's Southwest Cooking creme, was not that good) veggies and chocolate cookies (from McD's 3.99 for 13 can't beat that :thumbsup2)

Monday: Spaghetti and Meatballs, salad, melon

Tuesday: Grilled pork chops, mac and cheese, southern green beans, sliced tomatoes and melon

Wednesday: grilled cheese, tomato soup, melon

Thursday: Crabby Pattys, chips, sliced cucumbers and tomatoes and yet some more melon

Can you tell I have too much melon from my garden??

Friday will be pizza as Saturday is my little girl's 6th birthday party so I will be busy in the kitchen making her a pink party cake ;)

Saturday is an evening BBQ with friends and I need to bring a side, but not sure what??
 
I have zero interest in cooking lately.
So I had better make a weekly menu now. If I plan ahead we won't end up grabbing take out.

Monday: Pork chops, broccolli, rice

Tuesday: Burgers, baked potato, salad

Wednesday : Breakfast for dinner

Thursday : Tofu Parm

Friday : BBQ'd chicken, mash potato, salad, broccoli

Saturday: Leftovers.
 
Yesterday we went to see "Hairspray" at our local theater so we had dinner out afterwards. We were near one of our favorite restuarants and had a restaurant.com gift certificate to use.

Tonight we are having chicken cutlets with veggies and rice.
 
Monday: White chicken chili (using dark meat from whole chicken), salad, cornbread (freeze extra), strawberry jello parfait with bananas and yogurt.

Tuesday: Chicken Quesadillas (using white meat from chicken), fresh salsa, chips, and watermelon.

Wednesday: Hot dogs with home-made chili sauce, home-made oatmeal cookies

Thursday: BLT's (with turkey bacon), tomato soup, oatmeal cookie ice cream sandwiches

Friday: Turkey spaghetti, salad, garlic bread, peachy creamy jello

Saturday: Hamburger stew, cornbread (from Monday)

Sunday: Whole chicken - haven't decided how to make it yet.
 
We hope to hear some results today from DH's medical tests last week. I will keep everyone posted.
