Eat at home

Last night we went off menu but at least we still ate at home. I diden't feel like cooking and tuna diden't sound good so I stopped at the grocery store and picked up sub fixings, wheat thins and applesauce. My schedule has gotten all switched around so tonight will be Wendy's on the way to the drive in and tomorrow we will eat something simple at home before going to the church swim party. Saturday will be another eat at home meal before heading to the local amusement park for night time rides. We will probably pick up dessert at the amusement park (mmmm funnel cake) or ice cream on our way home. Sunday is church and then we will be home the rest of the day so it won't be too hard to eat at home that day and Monday we go camping.
 
Busy week (again!) here. Band camp, so we are now done with summer schedules!

I roasted a chicken and with it I will make the following meals within minutes on these crazy nights!

White bean chicken chili, cornbread
Black bean chicken quesadilla's, watermelon
Chicken fajita's, fruit salad
 

Every two or three months, we dedicate Saturday to cooking. A friend comes over and we cook all day and freeze the results - with enough meals to last at least a month. To make it more complicated all of the meals have to be gluten-free. Last Saturday we had two pressure cookers going (split pea soup and spaghetti sauce), two crockpots full of chili, and our traeger bbq filled with a large pork roast, a beef brisket, and twelve chicken breasts. We ended up with seventy five dishes (split between the two of us) and included:

meatballs with spaghetti sauce
meatloaf
mango chicken
enchiladas (beef, pork and chicken)
taco casserole
alice spring chicken
chili
split-pea soup

An exhausting day, but well worth it later in the month!
 
Looks like the weather will hold out to get dinner on the grill tonight! Yay! LMAO. So, hopefully we will have the Asian Style Baby Back Ribs, Parmesan Scalloped Potatoes, and a vegetable.
 
I can't remember if i got this recipe off of this board but this is so easy, so good, and cheap!!

White Chicken Chilli
boil chicken(i always use 4 thighs)
measure out a can of chicken broth
debone chicken

add:
2 c of northern beans
1 c of white corn
taco seasoning mix
sm. c of green chilles
1/2 c of sour cream
simmer and i serve with tortilla chips
it is so good, i'm making it again on next week's menu!!
 
Thanks everyone for the thoughts and prayers. :hug: DH went for other tests yesterday and they are thinking it may be COPD. While he is not a smoker and never has been, he works in an airplane maintainance facility and is around various chemical fumes all day. He has done this for almost 20 yrs. He still has to go for the CT scan before any sort of formal diagnosis is made.

Dinner Tonight:

Burritos made with slow cooked Beef
Chips and Salsa
*Chocolate Pudding with Cool Whip

Thanks for the update. I hope he gets a formal diagnosis soon. I hope whatever it is is manageable and isn't life altering. :hug: I'll keep him in my thoughts and prayers.

We were having a steak dish tonight, but we all want something less filling. I don't know what it will be right now.
 
So I haven't posted in a while. Life has been crazy. I have been put on "rest" for a little while but everything is ok with the baby. Then my husband came home andtold me his hours are getting way cut back to almost unlivable just great. And we are going on vacation to nh on Monday and I am feeling guilty bu it's already paid for so we are still going. Ugh so here's hoping life gets better real soon.
Anyways can u believe that this thread will be a year old on the 9th. Wow prety cool. :cool1:
Today I have a friend coming over and I am making a potato cheese soup. Dinner is pizza.
 
figment3258- so sorry things are rough for you right now. Glad to hear the baby is okay though. It is amazing that in the worst of times we are reminded of what is TRULY important in life...the people! :grouphug:

Tonight for dinner we are having spaghetti with homemade turkey meatballs (from ground turkey that was thankfully not on the recall list) and garlic bread.
 
What a great thread! I hope you don't mind if I crash the party & get some ideas - I'm in the eating-out-cause-I-don't-want-to-cook rut & I'm trying to dig myself out. :) I'm off to read! :)
 
We have not eaten out since last Friday!! Not even lunch, not even breakfast, not a drink or fast food item, NOTHING!! We haven't gone this long in a while!!

We had

-sloppy joes on Wednesday
-homemade bbq chicken pizza last night
-tonight is slow cooker pepper steak with rice

then I've also shopped for and planned for:

pork with apricot glaze, cornbread, coleslaw

chicken piccatta with artichoke hearts, salad


I was also thinking of instead of a "dinner" one night, do an "appetizer" night, and have a whole bunch of appetizers and play board games :idea:

We do that at least once a month. I make 1 or 2 "filling" appetizers and then an assortment of dips, chips, vegetables, and fruit. We are actually doing it this weekend and I am making southwestern eggrolls, pigs in a blanket, onion dip with chips, and vegetables with dip. Nothing fancy, but we enjoy it.

We do this too, every now and then. We tend to do it more at the beach. We'll have a cheese and cracker tray assortment with pepperoni, grapes and such. Funny, we do the games too.

Tonight instead of ordering pizza for take out, I made a pizza at home using Boboli (sp?), pizza sauce, shredded cheeses, and pepperoni.

Any chance of getting your recipe for the cashew chicken salad? It sounds yummy and perfect for out summer long heat wave!
 
Vacation and some unexpected costs while on it (a nice rock took on our windshield on the way down... and a few other things we didn't anticipate) so we're stretched TIGHT for money. How little can I spend until payday?

Thursday (past)- sandwiches/tuna/crackers from pantry for lunch, chicken stir fry for dinner
Friday (past)- free lunch provided by DH's work, dinner of chicken stir fry leftovers
Saturday- hot dogs, macaroni & cheese, peas for lunch; pork chops & rice w/ broccoli for dinner
Sunday- pork chop leftovers for lunch, roasted chicken, potatoes and zucchini for dinner
Monday- stir fry leftovers for lunch; chicken leftovers for dinner
Tuesday- hot dog leftovers for lunch; chicken, tomato sauce & pasta & salad
Wednesday- chicken/tomato sauce leftovers for lunch (sandwiches if that isn't enough food); red beans and rice w/ sausage for dinner
Thursday- beans and rice leftovers for lunch; chicken quesadillas for dinner
Friday- sandwiches for lunch; chicken quesadilla leftovers for dinner
Saturday- OUT with grandparents (who will pay) for lunch; black bean tortilla casserole for dinner
Sunday- black bean casserole leftovers for lunch; meatball subs & salad for dinner
Monday- leftover meatball subs for lunch; vegetable lasagna for dinner

I am using A LOT of my stash... and there is almost no red meat in there... The only meat I needed was pork chops and a bag of frozen chicken tenders. I already had a whole chicken from my chicken lottery win before vacation. I also had several things left in the freezer that are alreayd prepared (the tortilla casserole, the lasagna, the meatball subs). Groceries were only $60! (items in red were needed the portion of the meal that I didn't have available and needed to buy)
