just quickly checking in!! tonight we had breakfast for dinner. no eating out for us again:dance3:
 
Wasn't originally on my meal plan, but it was a meal made at home...tonight we had tandoori chicken, basmati rice, corn on the cob and peas.
 
We had a death in our house today, our crock pot went to that big appliance heaven in the sky. We have had bad luck with appliances lately; air conditioner, coffee pot, toaster, and crock pot have all died within the past few weeks. Looks like I need to shop around for a new one.

Tonight's dinner ended up being leftovers. Mom had leftover sloppy joes, fruit and sweet potatoes while I had french dip with fruit and sweet potates.
 
Dinner tonight:

Homemade Salisbury Steak
Mashed Potatoes
Green Peas
Cucumber Slices
Biscuits with Butter and Honey (we didn't have these last night as planned)
*Ice Cream Sandwiches
 

Tonight I believe is going to be chili & cornbread. I'm going to get some canned tomatoes at the store to bulk it up (Bear Creek mix). I should get the cornbread in this AM since it's so hot here right now (suppose to be 105-108 for the rest of the week).
 
Tonight will be BLTs, chips, and jello. I have no energy (again) and don't really want to cook.
 
For dinner tonight I took the last of the beef from the french dip and mixed it with taco seasonings for tacos. I also made up some spanish rice.

Tonight - Shrimp Scampie w/ Angel-hair Pasta

Wednesday - Paula Deans Fried Chicken w/ Mash Potato's (Son's Official Birthday Dinner)

Thursday - BBQ Burgers w/ Onion Straws

Friday - I'm gonna guess pizza as we will be getting ready for my son's big birthday bash on Saturday :banana::banana:

Saturday Birthday Party Day!!! - Chicken, Ham, Rigatoni, Ham BBQ's, Broccoli Salad, Macaroni Salad, Cabbage & Noodles, Buffalo Chicken Dip, Banana Split Dessert, Cherry Tart, Fruit, Veggies & dips and of course CAKE & ICE CREAM!! :yay::yay:

Sunday - Left Overs! :rotfl:

Tomorrow is going to be tilapia with rice & a veggie. I'm really struggling to make meals that aren't too hot because its so hot here. I'm also trying to not use my oven or stovetop as it can really heat up the house. I may pull out some chicken breasts to thaw so I can George Forman grill them for salads or something. Ready for it to be under 100!
 
Last night was sausage. onions, and peppers for DH and DS Fish sticks for DD's with mashed potatos and peas. I had been sick for days and mashed potatos was the only thing that sounded remotley good to me last night. Tonight it was burgers/veggie burgers and salad. The rest of my plans are:
Tuna sandwiches and cucumber tomato salad
Cheese raviolis with pesto or marinara and meatballs for DH and DS
Taco night (a big favorite at our house)
Spaghetti with alfredo or vodka sauce and rolls
Italian sausages/veggie sausage and french fries
Changed Turkey burgers to hobo dinners with ground turkey or crumbled veggie burgers and veggies for our Monday night camping trip with smores for dessert
Nacho casserole
Scrambled eggs and homemade hashbrowns
I forgot to add shrimp rolls/fish sandwiches for those who don't like shrimp with green beans
The only issue is that it seriously needs to cool down before I can do a few of these. At 107 degrees today I can't imagine turning on the oven for french fries, casseroles or hashbrowns.
Friday night we will be getting Wendy's on the way to the drive in as part of our summer blowout weekend before school starts again but otherwise I'm going to try really hard to stick to our menu.

I'm sorry for what your DH is going through! I will keep him in my thoughts and prayers. I hope it is something on the lower end of the spectrum and that he can recover quickly. Maybe he broke a bone and didn't know it? Please keep us updated as to what they find.

We're having Steak Picado (a salsa based version of fajitas), only we're having it over Spanish rice. Probably will have green beans or corn with it and ice cream for dessert.

Tomorrow night we will probably have spaghetti and garlic bread. We haven't had it in awhile.
 
This week is going like this:
Monday: Hot Pockets-only thing we had since we spent two weeks in Disney and didn't want to go shopping before eating dinner
Tuesday: Chili mac and cheese with salad
Wednesday: Steak tips, veggies and noodles with sauce
Thursday: Chicken noodle Parmesan with salad

This weekend might change since we might be going to my fiance's family's cottage and might not be able to take this stuff with us on the motorcycle (hey gas isn't cheap and its a lot less to fill up the bike then cars)
Friday: Beefy taco joes with taco rice and salad
Saturday: Pizza
Sunday: Pasta with garlic bread and salad

We had grilled cheese and vegetable soup!

We were supposed to have ribs, but right when I had to make "the call" as to what exactly we were having the skies opened up. Weather looks better tomorrow so hopefully they will get made then!
 
Tonight we had grilled chicken breasts with a zesty garlic marinade, a side salad with italian dressing (no extras on top, i'm trying to eat healthy :guilty:), and a piece of garlic toast.
 
Thanks everyone for the thoughts and prayers. :hug: DH went for other tests yesterday and they are thinking it may be COPD. While he is not a smoker and never has been, he works in an airplane maintainance facility and is around various chemical fumes all day. He has done this for almost 20 yrs. He still has to go for the CT scan before any sort of formal diagnosis is made.
