Sunday- grilled brats, hot German potato salad, fried cabbage
Monday- pot roast with portobello mushrooms and carrots and mashed potatoes
Tuesday- fish tacos, black beans, Mexican corn
Wednesday- bean soup and cornbread
Thursday - baked pork chops, sweet potatoes, broccoli
Friday - spaghetti with meat sauce

Monday- Sweet apple chicken sausage, sweet potato pierogies, and corn
Tuesday- Leftovers
Wednesday- Pork chops with German potato salad, and green beans
Thursday- Chicken enchiladas
Friday- Fettuchine alfredo with salad
Saturday- Crock pot potato and corn chowder

Not too excited about this menu but it's a compromise. Albertsons had B/S chicken breasts on sale and a BOGO on salad. I also tried on a few of my winter things this weekend and they're a little snug. It was a very tasty summer :rolleyes:

I may change the menu for later in the week depending on:
-what's on sale
-how bored we get with chicken and salad

Cooking in the winter is harder for me. So difficult to find any good vegetables and fruit the kids will eat!

For anyone looking for a good Cincinnati chili recipe, I have used this one for years. I have to skip on the beans though because of dh:

1 bay leaf
2 lbs. ground beef
2 c. water
1 (6 oz.) can tomato paste
1 large onion chopped (I use less, maybe 1/2 at the most)
2 tbsp. chili powder
1 1/2 tsp of minced garlic
1 1/2 tsp. salt
1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
sprinkle of red pepper (to taste)
2 tsp. unsweetened cocoa
2 tsp. Worcestershire sauce
kidney beans (I skip these)
hot cooked thin spaghetti

Grated Cheddar cheese

PREPARATION:
Brown ground beef; transfer to crockpot; add water, tomato paste, chopped onion, chili powder, garlic, salt, cinnamon, nutmeg, red pepper, cocoa, Worcestershire sauce and bayleaf. Cover and cook on LOW for 7 to 9 hours, adding the drained beans the last hour. Serve over hot cooked thin spaghetti and top with cheese. This sauce could be used for chili dogs. Makes about 6 cups.

Had to check out your trip report. Sounds like you guys had fun. I look forward to reading more. We just returned from the 4 night on the Dream. We booked the 7 night Eastern for next year. Looking forward to checking out the Fantasy!

Sunday: Shrimp I got on sale, salads, & french bread for DH and I. Tacos for kids. A win-win- they were happy & I got more shrimp!

Tuesday: Cubed steak, mac & cheese, mashed potatoes, broccoli

Thursday: Breakfast for supper- Biscuits & gravy

Already changed, DH, the grill master, was home early yesterday so we had tonight's fajitas last night. Many consecutive chicken days coming up!
