Eat at Home 3!

This is going to be "easy week". We are having , in no particular order...

Pizza from the market deli
manwich
hot roast beef sandwiches
nachos with beef
grilled BBQ wings

I'm hoping to use the weekend to make some freezer meals. Not sure what though.

Spaghetti Bolognese
Caesar Salad
Garlic Bread

(DH and I drove over to visit my parents so I made a huge pot of bolognese. We had that for a late/lunch early dinner and I froze the rest in meal-sized portions to leave for my mom and dad to have later.)

Pulled Pork
Baked Potatoes
Cole Slaw

Tuesday
Chicken/Sausage Gumbo
Spinach Salad

Wednesday
Pinto Beans
Cornbread
Glazed Carrots

Thursday
Clean out the fridge night!

Friday-Monday
Long weekend at Pensacola Beach :cool1: :cool1: :cool1:
We'll eat out at least once. Otherwise we'll put something on the grill one night and probably have leftover gumbo the other.
 
This weekend I made homemade spaghetti sauce and beef stew. We ate some for dinner and then I froze the rest into meal size portions for busy nights.

I am working late tonight so it is leftovers.

This week roughly:

Breakfast: baked oatmeal made yesterday

leftovers and snack-ish dinner

Wednesday:
sushi bowl lunch
frozen meal dinner

Thursday:
sushi bowl lunch
out for dinner

Friday:
sushi bowl lunch
thai red curry for dinner

Weekend:
thai curry leftovers and broccoli-chicken-cheese casserole

more eating out this week than usual; thursday is always an eating out day, as fiance and I both have activities that include dinner then. But today is our anniversary, so we're doing a special meal :D

Tomorrow is National Eating Healthy Day so I'm changing the menu a bit:

Steamed Carrots with Fresh Dill
Spinach and Citrus Salad
 
In the interest of saving money, and making scraps go further, and teaching myself to can, I am in the midst of what has snowballed into a giant brothmaking session. Wish me luck!!
 
Big change for tonight. I am going over to my cousin's house and having dinner with her and her family. We are making crab legs, corn on the cob, boiled potatoes, and hush puppies. :cool1:
 
Tonight we are having sweet and sour chicken! I bought some stir fry veggies (frozen). Chopped up some chicken breast and used one of the Campbells sweet and sour sauce packages. Served over rice!
 
Yesterday I made Kung Pao chicken lettuce wraps, rice, edemame, and stir fried green beans.

Tonight will be bacon cheese burgers, potatoe salad, and fruit salad.

Tomorrow, chili, cinnamon rolls

And in no particular order...
Pork cutlets and mashed potatoes
Pasta with chicken sausage
Braised barbecue beef
Chicken and broccoli in garlic sauce

I am trying out a recipe from budgetbytes.com, search "sushi bowl" and it shows up :D

Honestly, I couldn't find nori, so it might be a bit different in my iteration, but I'm excited!

Try the chicken yakisoba from there. I don't use the regular ramen. Instead I buy whole organic wheat ramen from Amazon. It's Asian and in packages like spaghetti. I also leave out the ketchup and sugar. Can't find a need for it. It is a great recipe.

Chili and cinnamon rolls! Are you from Nebraska? I grew up in Nebraska, and our school always served chili and cinnamon rolls. I have chili in the crock pot right now and cinnamon rolls on the cooling rack!

Wednesday - Chili / cornbread

Thursday - Ravioli / peas

Friday - BBQ chicken / baked fries/ salad
 
No idea about tonight. I went to grab the crock pot out of the dishwasher (I ended up with leftovers last night so just was going to push back the soup) and it seemed like i forgot to run the dang thing. So guess what is running now? So that will have to just wait until tomorrow which works since I have a late doctors appointment.

May order out a pizza or something. Been doing good about that and I spent under my budget for my big grocery shop by quite a bit (I budget $200 and spent $130) so I could use a bit of the extra for a treat.
 
Been on a cooking tear, making meals for freezing. Over the last two days, i made:
2 bacon, onion and cheese quiche
1 huge lasagna Huge pot of spaghetti sauce with 18 meatballs
2 (8x8 ) pans of baked macaroni
1 huge cottage pie

Then, I made a roasted chicken with potatoes and gravy and veg, which we ate for dinner last night. With the leftovers, today I'm making chicken soup for dinner, and chicken pot pie, and chicken divan to freeze.
