Eat at Home 3!

Mom has headed home, but I figure I would post what we've done...
Sun - Ribeye Steaks with Carmelized Onions, Mashed Potatoes, Roasted Green Beans, Strawberries (nothing left)
Mon - Bacon, Sausage, Waffles, Strawberries/Blackberries for Mom and Kids - we went out for 1/2 price Happy Hour and trivia night (and WON as a twosome - yeah - paid the meal cost!:))
Tues - Cod/Potato/Onion/Green Bean Tikka Masala Saute (it actually worked - used frozen cod and a frozen veg mix bag with fresh onion, a Tikka Masala sauce jar, and some siracha:)), (Leftover Sausage for kids), Homemade Fresh Apple and Fresh Cranberry Bread Pudding Muffins (1st time I did this and it also worked:)), Clementines and Bananas
Wed - Crab and Salmon Cakes (Fresh crab stretched with canned salmon - works!), Baked Fries, Roasted Green Beans, Sliced Apples
Thurs - Spaghetti with Fresh Tomato and Veg Sauce and All Beef Meatballs, Strawberries
Fri - ?? (Have little left, so I need to go shopping) - this may be Noodles and Company or Cheesecake Factory Out since we only did trivia night for food out while mom was here...and I have coupons to both
Sat - A "Big" Protein - I have a turkey, a pork shoulder, and a bottom round roast in my freezer - I'm going to make one to have over a few days before Lent starts, but I don't know which one yet - once I grab Aldi produce, I'll know what matches best:)...

I like that you eat fruit with your meals- we really need to make an effort to eat more fruit :)

My kids are not huge veg eaters (the oldest eats them now and each kid has 1-2 veg that are favorites, but I can't please them all with one choice every night), but all 4 eat fruit...so we always have it, even if it's just for them. The amount I buy each week (6-10lbs of apples, 3-5 lbs of bananas, and then 5lbs-7lbs of other ones - clementines, grapes, strawberries, cranberries, mangos, peaches, pears, pineapple, other berries, etc) sometimes boggles my mind, but it's healthier for them and with the advent of Aldi's, it's become cheap for me b/c my grocery stores compete on price for produce every week, so I can usually find deals on 3-4 fruits that I rotate for the week:)...it also helps that fruits are so easy to serve when fresh (raw - yeah) and when starting to overripen (muffins, smoothies, crisps, dump cakes, breads, etc)

Okay, I decided:)...here's my weekly plan (we are giving up an extra meatless dinner per week and we have 2 Lenten days this week, so it's gonna be an adjustment:)...
For Saturday, I'm going to make my pork in the crockpot with just S&P - then I'm gonna take 1/2 the pork and a Campbell's Apple Bourbon BBQ sauce to make BBQ Pork sandwiches, served with Roasted Sweet Potatoes and Strawberries.
Sunday, I'm going to take the rest of the pork and a Country Gravy packet and make a pork-centric country gravy sauce, served over Mashed Potatoes with Roasted Carrots and Red Grapes. And now the rest...
Mon - Cheesesteaks, Baked Fries, Tomato Cucumber Salad, Apple Slices
Tues - Leftover Meats, Double Blueberry Muffins, Bell Pepper Salad, Clementines
Wed - Shrimp and Crab Ravioli with a Lemon Butter Sauce (Aldi bag for ravioli, but homemade sauce from me:)), Caesar Salad, Pear Slices
Thurs - Potato Gnocchi with a Pesto Sauce (again, Aldi container for gnocchi, but homemade sauce from me:)), Tomato Mozzarella Salad, Strawberries
Fri - Cheese Milk-based quiche, Potato Pancakes (or homemade pancakes - TBD), Bananas and Clementines, Smoothies
Sat - No Idea, but this will be Red Meat b/c I think my spouse will be fainting from all the veg and fish dishes by then:)...we may go out or eat in...
 
Menu Plan - Week of 2/25

Saturday- burgers, baked beans, chips, cucumber salad
Sunday - out to eat or take out
Monday - soup and sandwiches
Tuesday - shrimp, stuffed clams, rice, broccoli
Wednesday - eggs, hashbrowns, bacon, smoothies
Thursday - chicken wings, veggies/dip and baked potato wedges.
Friday - grilled chicken, pasta salad, green beans
 
Just found out we have a "big bosses" visit next week so my work schedule has to change a bit. I've got to bring people in to get work done when we're not open and still cover part of my normal days. But I get a 3 day weekend next week! Making the menu to work around it.

Sun (2pm-midnight): steak enchiladas
Mon (9-5): chicken and buttermilk waffle sandwiches
Tue (6-3): hamburger sliders with fries
Wed (1-10): chef salad with shrimp
Thu (1-10): roasted pork with green beans and farro
Fri (off): black bean pizzas
 
Going away next weekend and ended up out last night for a combined birthday dinner so mixed up a bit.

Tonight- DH is making his burgers now.
Sun- tofu and veg stirfry
Mon- shredded chicken and crispy noodle salad
Tues- veg bake
Wed- oven fried chicken, beans and mac and cheese
Thurs- soup/baked beans and grilled cheese
Fri-Sun, off to my parents for my sister's 30th.

Aim is for $50 for groceries, only need to buy chicken for the oven and mainly fruit and veg. Rest of the budget goes to the birthday cake and decorations.
 
Sunday - chicken or turkey pot pie (depending on the prices as the store), mashed potato, stuffing
Monday - baked haddock, pineapple, cous-cous, raspberry muffins
Tuesday - slow cooker pork roast with potato, onion, mushrooms, carrots and bread
Wed - spaghetti with Italian sausage sauce and garlic bread (Wednesday is a bit up in the air as dd has a regional jazz competition and we don't know what time she's going to play)
Thursday - build your own naan pizzas
 
Giving it another go :) DH has lost over 60 pounds on a low carb diet and is now adding a few healthier carbs like fruit and sweet potatoes. I don't plan Saturdays because we're often not at home.

I am now on weight watchers so I have to modify meals for myself vs rest of family.
Sunday: Jambalaya
Monday: Baked Zitti, salad, garlic bread. I will be eating zucchini noodles vs pasta noodles.
Tuesday: Beef Enchiladas, pineapple. I will be eating spicy black bean burger chopped up to make a "taco" salad
Wednesday: Grilled Chicken, roasted asparagus, mac and cheese
Thursday: Hamburgers, fries. I will be eating spicy black bean burger w/o bun and leftover asparagus
Friday: Free for all - eat leftovers
 
ok we feel off the wagon the past 2 weeks with being sick and crazy schedules but I'm ready to go this week

Tonight Jambalaya and boiled cabbage as the side (I love cabbage!!)

Tuesday Slow Cooker pork chops gravy mashed potatoes and leftover cabbage

Wednesday leftovers

Thursday Pulled pork in slow cooker that will be added to baked potatoes for Loaded BBQ Baked Potatoes with a side of broccoli

Friday I have boudin stuffed chicken breasts I got on meat clearance Saturday (stuck them right in the freezer) will cook those with some cheese grits and corn on the cob or green beans or both :)

Sat-girls not eating/boys fend for themselves (will likely have mac and cheese)

It has been a while but we have been doing good with eating dinner at home. Last night was the first night we have gotten takeout in a few weeks. One of the things that has helped me is signing up for the meal delivery service Hello Fresh. It is a little pricey but I like that three meals a week are planned for me and I enjoy trying new things. In fact for lunch today we had melty Monterey Jack burgers with red onion jam and zucchini fries, yum. I then make easier meals the other nights.

Tonight I am going to make the pork dumplings with quick pickled slaw from Hello fresh
 
Monday - gluten free chicken sausages with potato cakes made with left over mash, carrots & suede
Tuesday - bolognese and pasta (small portions as it is Pancake day in UK and DD is coming with the littlies so lots of pancakes with different toppings)
Wednesday - corned beef hash
Thursday - vegetable risotto
Friday - baked salmon with home made potato wedges, broccoli
Saturday - gluten free pizzas as quick supper meal as we're off to the zoo with DGS to see the Giant Anteater we adopted for him!
Sunday - roast beef & Yorkshire puddings with mashed potatoes, kale & carrots

I have been gone from this board for a while. We still eat at home, just needed to get back on here for some inspiration. Meals are getting routine. My grocery day is Thursday, so week runs Thur-Wed for us in meal planning. Here is what this week will look like:

Becc1- I love that you did a Dr. Seuss inspired meal on his birthday! We used to do that when my kids were younger and their elementary school used to do a celebration on that day.

Well, I did really bad with cooking this week... I had a long hours, hectic week at work, doing 7 days straight at least 10 hours each day due to a regional visit. DH ordered pizza Tue. night because we had a coupon for a free one, then we ate the leftovers on Thu. But I do have a 3 day weekend now and will get back on track. I have some meals to carry over and changed up today's plan.

Fri.(off)- cheese quesadillas with guacamole
Sat. (off)- steak with grilled veggies and corn bread
Sun. (off)- chicken and waffles
Mon. (7-5)- roasted pork chops w/green beans and garlic bread
Tue. (5-2)- grilled chicken salad
Wed. (8-5)- stroganoff meatballs
Thu. (off)- sliders with fries
Fri. (1-10)- black bean burritos
 
This thread is great inspiration! We do pretty well at eating at home, but I need to work on using up stuff I have in the freezer/pantry rather than forgetting about it and buying all fresh stuff for the current week.

Sa- Homemade Pizza- one spinach/walnut/sausage/alfredo and one plain cheese
Su- Crockpot BBQ Chicken, Cornbread, salad
M- BBQ Chicken sandwiches, salad
Tu- Farro with greek chicken/feta/cucumbers/tomatoes & spinach
W- Tofu Stir Fry with noodles
Th- leftovers
F- Burgers/whatever veggies left (probably spinach)

I was doing Blue Apron - I did enjoy the variety and unusual ingredients, but I had too many experiences with missing/messed up product. It just got to be too expensive for the hassle. It was also hard to spend that much time cooking 3 nights a week with my family's schedule.
