So today was my first trip to the Farmer's Market and meal planning with my new diet restrictions. The hardest parts are no tomatoes or acids (soy sauce, vinegar, Worcestershire, etc) and staying away from processed foods. Caffeine, alcohol, chocolate, and the rest are pretty easy to keep away from. Right now I am trying to find salad dressing recipes that have no avoid ingredients since most use some sort of acid.

I mean I know I will eat well. It's just hard to adjust because I will miss my curry and soy sauce! Hope I can get this flare under control and maybe be able to add some stuff back in.

My meals this week will be:

Tonight: Gnocchi with Garlic, Oil, and Romano Cheese, Salad
Sunday: Rib Eye, Baked Potato, Roasted Squash
Monday: Chicken Gyros, Roasted Potatoes
Tuesday: Steak Hash and Eggs
Wednesday: Twice Baked Potatoes, Broccoli
Thursday: Creamy Chicken and Pasta Bake
Friday: Pancakes (blueberry?) and Bacon
Saturday: Roasted Chicken Thighs and Root Vegetables
Sunday: Salmon, Couscous, Asparagus

Trying to get back on track after moving my younger daughter to Ohio for college. I'm also trying to adjust my groceries from 3 people to 2. Yesterday was grocery day, and we picked up a pizza from WalMart. I have to say for a $3.47 pizza it was decent.

Today/Monday: burgers, hot dogs, baked corn on the cob, oven fried pickles
Sunday: taking my older one out for her birthday
Tuesday/Wednesday: spaghetti, garlic bread, cucumber/onion salad
Thursday: breakfast-blueberry pancakes, bacon, fried eggs
 
I love this thread - I cook every night as a stress reliever, but I rarely plan ahead, I just stop at the market and see what looks good.

I'm craving lots of veggies so I'm thinking tonight is a stir fry night!
Bok choy, different colored peppers, zucchini, yellow squash, sauteed in some coconut oil, some rice vinegar, then some pineapple, some pork browned in pineapple juice, and some brown rice. I think it's originally from the Pioneer Woman but I've kind of just started throwing things in a pan.

Doing the Labor Day hot dogs/deviled eggs/baked bean thing tomorrow!
 
Monday: Hamburgers/Hot Dogs
Tuesday: Grilled marinated chicken, mashed potatoes, peas, and rolls
Wednesday: Chicken Alfredo, steamed broccoli and garlic bread
Thursday: Beef stew with carrots served over rice, mac & cheese, salad
Friday: Chicken tacos in crock pot, Spanish rice and beans

I don't want to be a Debbie Downer but I don't know if I have shared this? My oldest dd that is pictured in my signature has become ill. I took her to the doctor to get her shots updated and told him about the symptoms she has been having. She gets up and feels faint and she feels winded only after walking a half a block and her heart races. Our doc suggested we do an EKG and it came out with the diagnosis Wolfe-Parkinson White syndrome. When you hear of teen athletes dying of a heart attack at school, this is usually what it's from and goes undiagnosed most of the time.

We found out right before she started high school on the 12th of August. Luckily she didn't participate in gym. We went to see a Cardiologist and she needs a heart catheterization within the next few weeks. They can get rid of the the irregularity that way by cauterizing it. I am trying to be strong for her. She was so sick with mono for about 6 months and then this? Thanks for listening!

Oh, how scary! This must be so hard on all of you. Thank God you were able to have her diagnosed. Prayers that the surgery goes well and hugs for you all.

Saturday we had sub sandwiches with fruit salad.

Sunday we had grilled steak with potato pancakes, apple sauce, and spinach.

Tonight is pork bbq with chips, tomato slices, and pickles.

Menu this week:

today: chicken pot pie, peas and carrots, green salad

Tuesday: Spaghetti, french bread, salad--gotta be quick or it'll be late; dd's has choir practice which gets us home late.

Wednesday: shredded bbq chicken sandwiches--gotta be easy, Night of Worship at church

Thursday: probably will be Subway--late night with school open house and choir performance.

Friday: chicken and rice, green salad, limas
 
Tinkmom2 - so glad your DD is ok and they caught this early!

Here's our plan for the week:

Monday: Burgers with bacon-balsamic-onion jam and blue cheese
Tuesday: Spaghetti with tomato-cream sauce
Wednesday: Enchiladas with sweet potato and black beans, using homemade enchilada sauce that I tried out for the first time
Thursday: Sausage peppers and onion sandwiches
 
Today: eggplant parm, penne ala vodka

Wed: beef & broccoli, potstickers
Thurs: breakfast for dinner
Fri: we leave for vacation!!
Sat eating at Mythos in Universal for lunch, RFC at DTD for dinner
Sun: checking into Poly until 9/15!!

Tinkmom2, sorry your DD is going through this. :hug: I pray they're able to fix it & her life gets back to normal.

Winner Recipe: I've been trying a lot of new recipes lately. I thought you all may want to try the best of them.

Baked Brie:
Ingredients:


1 (8 ounce) can Pillsbury® refrigerated

crescent dinner rolls

1 (8 ounce) round natural Brie cheese

1 egg, beaten

48 water crackers or baguette French

bread slices


Directions:

1. Heat oven to 350 degrees F. Unroll dough and separate crosswise into 2 sections; press dough into 2 squares, firmly pressing perforations to seal. Place cheese round on center of 1 dough square.
2. With small cookie or canape cutter, cut 1 shape from each corner of remaining dough square; set cutouts aside. Place remaining dough square on top of cheese round. Press dough evenly around cheese, folding bottom edges over top edges; press to seal completely. Place on ungreased cookie sheet. Brush dough with egg. Top with cutouts; brush with egg.
3.
Bake 20 to 24 minutes or until golden brown. Remove from cookie sheet; place on serving plate. Cool 15 minutes. Serve warm with crackers.


I changed this a little, but this is the recipe I used as a starting point. I removed the rind on the brie, then cut it through the middle horizontally. In the center, I added apricot preserves. After the egg wash, I covered the top of the croissant with slivered almonds. I served it with Wheat Thins Flatbread Tuscan Herb, but the croissant alone is delicious too. My DH said he wished it wasn't an appetizer, because he didn't want to stop eating to save room for an entrée. :laughing: He said it would have been an excellent meal on it's own.

ETA: I forgot to add that 24 minutes wasn't long enough to get it golden brown in my oven. I added 5 minutes to the baking time, then broiled it to get it brown w/o melting the cheese even more. Next time I'll stick to 24 minutes baking time, then broil it.

I have a few more recent recipes that went over very well, if anyone is interested. If you ask me, all recipes that garnered rave reviews are welcome. That said, I'm new so let me know if you all don't want them posted here. That will be fine too. :goodvibes

well it's just me the hubs this week --
last night was leftover meatloaf, mashed potatoes and cauliflower, and fresh green beans
tonight will be stuffed zucchini frrom my parents garden
tomorrow will be kraft shake and bake (the kind in the cheese case) mashed cauliflower, leftover pasta roni and carrots and leftover zucchini
friday will be likely at my parents (trying to see my Gram much as possible before the end)
Saturday I think Hubs will eat Chinese and I'll make a homemade tortilla pizza
 
Tonight: spaghetti and homemade meatballs, salad
Thurs: bean and rice burritos, salad
Fri: cheesy broccoli quinoa casserole
Sat: homemade soup (not sure what kind yet) and grilled cheese sammies
Sun: leftover quinoa casserole
