Eat at home 2!

Thanks all for the kind thoughts. We found out the surgery date today but it's not until October 23rd. In the meantime she is on meds to regulate her heart rate. I started up school again as well as my youngest daughter this week.

Today we are having fresh green beans, meatloaf muffins, and nuked red potatoes.
 
I made something really yummy tonight. We have an abundance of eggplant. I peeled one and cut it in circles. I put the pieces on a cookie sheet and sprinkled with olive oil, garlic salt, and seasoned bread crumbs, and baked in the oven for about 20 minutes. Then I put cheese on some of the slices and put another slice on top and popped them back in the oven for another 5 minutes or so. I topped them with spaghetti sauce that my husband canned and a couple frozen meatballs. It was DELICIOUS!
 
So, needing some meal time advice. Having one of those weeks where take out just seems like the only way to go.

Tuesday night dd had choir practice (I have to pick her up and its about 30-45 minutes from my work). But, she made spaghetti when we got home.

Last night, I got home from work, changed clothes and we headed out to a special event at church. Didn't get home until almost 9. Grabbed Chik-Fil-A on the way.

Tonight is open house at the high school. The choir is performing and she has to be there at 5--open house starts at 6 and will be a hour to an hour and a half; so leave the school at 7:30 not home until 8-8:15 at the earliest. So, we'll end up grabbing Subway.

What do some of you do on nights like this?

Its only me and dd (dh is on the road). She doesn't eat hot dogs or hamburgers and doesn't like a lot of frozen meal type stuff. (which I think the Subway is better for us anyway). We are both burnt out on tacos and spaghetti.

She does like the bbq beef or pork that comes in the tubs and she likes loaded baked potatoes; but I get tired of her eating either of these so much and it seems like we have weeks like this more often than not.

Any suggestions??

For nights when we have sports which is three times during the week I make dinner during lunch and that way all everyone has to do is heat up what they want when they want it. Or the crock pot works really well for nights like these
 
we have done really well this week. last night my mil treated for pizza

tonight i will be making pork chops and rice

tomorrow is hamburgers with onion straws

sunday is chicken with lemon over pasta

monday american chop souy?

tuesday not sure yet maybe breakfast
 
Today was grocery day. Tonight we had subs, chips, and dip.

Saturday/Tuesday: Buffalo chicken sliders, broccoli salad, sweet potato fries
Sunday/Wednesday: pork roast, mac and cheese, baby limas
Monday: late night class for my daughter, fend for yourself for me
Thursday: have to go grocery shopping for my mom, so we'll eat with her
 
Sun: fish and chips
Mon: chicken fajitas
Tue: grilled chicken salad
Wed: Ravioli
Thur: Ryans (promised DD8, kids eat for 99 cents)
Fri: pizza
 
Tomorrow is my only day this week that we have an actual menu.

Baked Brie w/ Flatbread Crackers - to snack on
Goat Cheese Salad
Creamy Shrimp Pasta (I got the recipe here.)
French Baguette
Crème Brulee & Chocolate Souffle (I need 2 desserts on the day I eat whatever I want. :laughing:)

We just got back from Disney!! Went to grocery store right away and so far this is what I've got planned:
Tonight: Italian chicken stew( chik legs, peppers, onions, squash, potatoes, stewed tomatoes)
Sunday: Tacos
Monday: spaghetti with meatballs and veggies
 
Well the past few days have been bad/good.

Thursday my grandma had yet another surgery. She is fine but it took a lot longer than expected so my uncle treated for chinese after.

Yesterday I ended up going out to dinner with friends. My friend found out she is expecting so we celebrated.

Today was the a horrible day. I woke up to discover our gas had been turned off. The bill is up to date so it threw me off. Apparently they came to check our inside meter on Friday afternoon and since no one was home they said I had denied them access to their equipment so that gave them grounds to shut it off. After two hours on the phone they agreed to come out after I got home from work at four. They came at 12pm when no one was home and refused to come back. I am livid. Plus my car would not start causing me to be late for work.

So needless to say dinner was simple leftover pulled pork with chips and fruit.
 
Charming, hope your energy crisis is resolved!

We have been incredibly broke in the last few weeks. I just started working again after having the summer off. My shopping budget has been as low as $20.00. (just to stock up on meat) Sometimes I go away with only spending $16.00. My freezer is down to nothing. I usually go through a 3lb bag of boneless chicken breast each week. I have had plenty of veggies from my neighbor which has been awesome! This is the time when all of that penny pinching and planning really comes in hand. Thank goodness financial aid comes from school at the end of the month!

Yesterday we had pulled pork sandwiches and red cabbage coleslaw
Today Blue cheese stuffed burgers/ $1.00 sweet potato fries per my DD's request
Tuesday is a school night so something in the crock pot maybe chicken tortilla soup
I have been making iced tea by steeping tea bags for 10 minutes in 8 cups of boiling water and then adding the iced water. Great for these hot days.
Desserts plenty of zucchini cake:)
 
Last week we did not do well at all. Busy week and just couldn't get it together.


So, dd and I agreed to sit down together with the schedule and make up a menu. We have NOT done that yet. :rotfl: Hopefully tonight.

Anyway here is what we have done so far:

Saturday was Rib eye steaks, baked potatoes, garlic bread and a huge salad with Olive Garden dressing.

Sunday was 3 envelope Roast, rice, creamed corn and more of that salad.

Tonight will be either smothered fries or hot roast beef sandwiches and fries. Either way, I am adding roasted broccoli and a salad with spring mix greens and roasted cherry tomatoes.

We know that Wednesday will be sandwich night as there is just no other way. She will eat before church and I will after church. (actually I am starting a small group this week and I KNOW we will be eating together once these meetings get started! LOL)

So, Tuesday, Thursday and Friday are up in the air right now!

DD mentioned red beans and rice, so that may be a good one for another day. With sausage and cornbread.
 
Tonight: mini tortieres, copycat cheddar bay biscuits from Red Lobster, broccoli
Tues: steak and potatoes, veggies and dip
Wed: hot dogs and mac and cheese, veggies and dip
Thurs: tacos/taco salad
Fri: ham and cheese casserole, green beans
Sat: stir fry (hubby to make so unclear on details)
Sun: leftovers

Just recommitted myself to my diet once again, and I've been making soups lately for healthy, filling lunches. I made a big batch of black bean and corn soup the other day (which I LOVE) and DH ate nearly all of it!! I got a bowl the day I made it and then half a bowl 48 hours later. :faint: It was by no means a "hands off" affair, but I DID think he'd leave it alone on the days where he was able to make himself something else to eat. No such luck.

So, I then made a ham and white bean soup for him (which he "claims" to love and I detest) and it's been untouched since Saturday night. :furious: I froze most of it this morning and left out one portion for his lunch tomorrow.

I'm scared to make my other favourite (Sicilian Garbanzo Bean soup) lest he eat up all of that one also, leaving me in the lurch for the second time.

After that one is done, I'll make loaded baked potato soup and then some yummy clam chowder!! (And I'll have to fight him for a share in those two!) :rotfl:
 
Whoop! My Aggie is in his 5th year, says he is a "super senior" - graduating FINALLY in May 2014, can we say "about time"? Love those Aggies.

Ya'll have made so accountable, I did not post last week, but I did cook in except for Sunday, went over to SIL house, took a cheese variety and veggie tray, so dinner was cheap:) Tonight was a new recipe and big success!
Tonight - stuffed beef and couscous peppers, baked sweet potatoes
Tues - these are going to be difficult nights, DS17 has practice til 8:00, and DH wants to eat before then, so I will probably make something twice, ugh. Probably corn cakes and strawberry omelets
Wed - Enchiladas, rice, beans
Thurs - Pork chops in crock pot, spinach salad, some type of veggie
Fri - game night, usually DH and I eat something out of the freezer or leftovers
Sat - Up in the air, maybe my chicken spaghetti

Good luck with the week everyone! Thanks for keeping me going with the meal planning. It helps keep me motivated.

Well it's only the start of the week & my menu has already changed!

Saturday we were supposed to have the chicken but it got pushed back for Sunday since my DH went over his sisters for a BBQ.
Then Monday we had the tacos.
Tuesday (Today) we will have spaghetti with a nice salad.
Wednesday: $5 large pizza pie from our local pizzeria.
Thursday: homemade rice, bean & cheese burritos.
Friday: egg, veggie & potato fritatta (omelette).
 
I'm a bit late this week, but here is our plan:

Sun: Homemade pizza with bacon-balsamic-onion jam, apple, walnuts, and cheddar

Mon: Chicken, broccoli, and rice casserole

Tues: Eggplant parmesan boats

Wed: Creamy avocado chicken enchiladas

Thurs: Pulled pork sandwiches

Fri: Out of town for the weekend
