Can you tell me how you do your Pear Gorgonzola Salad, this sounds so yummy.

Wednesday we had breakfast for dinner, pancakes with sausage and fruit.

Last night we had pan fried chicken with hash browns, broccoli, and salad.

Tonight we are having lemon chicken orzo soup.

I had a package of beef strips in my freezer that you could use for a stir fry or fajitas. However whenever I try that...the meat is always tough. So today....I threw it in my crock pot with a good bit of sliced onions. I added several kinds of spices including ginger, garlic, pepper, some cayenne and brown sugar. I cooked it on high for an hour then on low for another hour or so. Then kept it on warm. I made some steamed broccoli and rice and had basically a stir fry...IT WAS YUMMY. :thumbsup2

Pear Gorgonzola Salad - I just kinda use the amounts I like:) - this is a mash up of 3-4 online recipes done my way (and made with what I have and what's on sale:)

1-2 Fresh Pears sliced thin (any kind)
1 Bag of Salad Mix (pick your favorite - arugula, romaine, spinach, iceberg:)
3-4 TB gorgonzola or blue cheese (or as much as you like)
3-4 TB glazed pecans (or as much as you like)
Prebottled champagne vinaigrette

I usually put down the greens on each plate, lay the pears on top, sprinkle with pecans and cheese and drizzle dressing...and done:)

Well, we can't seem to win around here. Mom had a small stroke and has been in the hospital for a few days. She is home now and feeling well. My grandma came down to stay for awhile to help out since classes are starting this week as well. So it will be insane for a bit!

Our menu starting tomorrow:

Sunday: Pot Roast with Potatoes, Carrots, and Onions
Monday: Roman Chicken, Green Beans, and Italian Bread
Tuesday: Tomato Soup and Grilled Cheese
Wednesday: Tuna Noodle Casserole
Thursday: Pork Tenderloin, Mashed Potatoes, and Glazed Carrots
Friday: Chicken Meatballs and Vegetable Fried Rice
Saturday: Grainy Mustard Chicken Thighs, Potatoes, and Green Beans
Sunday: Salmon Fillets, Rice, and Asparagus

I've been bad over the holidays, but its time to get back on track again.

This week's menu:

Saturday - ribs, coleslaw and oven roasted potatoes
Sunday - Baked ham, baked potatoes, squash, rolls
Monday - Wicked Chicken Casserole
Tuesday - Meatloaf, mashed potatoes, green beans
Wednesday - Ham croquettes w/gravy, carrots, tossed salad
Thursday - Homemade turkey noodle soup and sandwiches (probably BLT's)
Friday - take out

LilyWDW, I am sorry to hear about your mom. Glad she is home and your Grandma is there to help out.

Tonight was leftovers/fend for yourself night.

Lily, My thoughts are with you again! You need a break! :grouphug:

I made our go to weekend food Arroz con Pollo http://tinkmomfoodie-foodobsession.blogspot.com/search?q=arroz+con+pollo

I purchased some chicken quarters a few weeks ago and divided them into four portions and then broke down the quarters before I make the dish. Rice I buy in 20 lb bags and it lasts us for months. The rest of the ingredients I always have on hand like tomato paste and chicken stock. I pretty much have had no shopping budget the last few weeks with missing work (the Christmas vacation) and being in the hospital. I do have a stocked pantry which has gotten us through. I have discovered what was actually in the back of my freezer:rotfl:

I start school this next week. Some good news: I got my internship! I start at a local hospital the third week of February! I hope to be working as a Phlebotomist by Summer:cheer2:

Phlebotomist! Interesting because I am job hunting and always see jobs for this. Can you describe the school portion? How long will you have to attend?
My degree in finance isn't helping me find a local job. But if I could take a phlebotomy course I would be in business.

On food

I have been making tons of take along freezer snacks an lunches. Yesterday I made sausage cheese bisquik biscuits( they freeze well) and homemade pizza lunchables. Dinner was pork chops ric and corn.

Tonight will be chicken cutlets probably some kind of rice again( I buy the giant bag too!)

Monday will be maybe breakfast for dinner.

Hope everyone starts having better luck!

I stuck to my plan last week! :cool1:

Here goes this week's.

Sunday - London broil with mushrooms, zucchini, squash, corn on the cob, french fries, italian bread

Monday - Leftovers or something from the freezer

Tuesday - Pork chops, hashbrown casserole, mixed veggies

Wednesday - BBQ baked chicken, mac and cheese, broccoli

Thursday - Leftovers or frozen pizza

Friday - pasta, garlic toast or beef stir fry (have both, will decide on friday)

Saturday - Eat out

Can you post recipe for the shepherd's pie using the leftover pot roast?
Thanks!

I keep it very simple. When I make my gravy from the pot roast drippings I put 1/2 of it back to use in my pie. I chop up leftover roast and veggies and also use any veggies I have hanging out my fridge that are left over. I mix them together with the gravy. I take mashed potatoes (normally I make extra earlier in the week and put them in fridge) and mix in a little garlic powder. I spray a baking dish and put in the roast/veggie/gravy mix and spread the potatoes over the top. I brush the top of the potatoes with olive oil and then dot with a few pea size pieces of butter. Into the oven at 350 for 40-50 minutes and that is it. I also sometimes make it in the morning and stick it in the fridge. When DH get's home he sticks it in the over and dinner is ready in a short time.

Hi,

The Phlebotomy program at MATC (a technical college) is a year program. I transferred some credits from the first time I went to college 20 years ago and also went part time. It's an 18 credit program. I have also been taking the pre-req classes for Nursing which will be a 2 year program once I get into it.

We got to do live draws on each other last semester and I had to take a hospital computing class which was very easy. It's mainly a lot of memorization.

This semester I only need to do the Phlebotomy internship and take a test in order to get my certificate. I will be working in a busy hospital for 3 weeks in Feb. from 7AM-3:30 and I have to complete a hundred draws. However, I am taking a total of 10 credits. I have two online courses and two on campus courses along with the internship.

I can then work in any hospital or clinic or go on for national certification and earn more money. Right now it's paying from $14-17/hr.
