I am so with you on this. We have had to start eating CR*P to stay within our budget, which was super tight anyhow. We have resorted to lots of bean, rice, hot dogs, mac and cheese...just junk. It has made me depressed because cooking is a stress reliever for me. I love to get in the kitchen and just tinker around. And I always feel so happy when I can serve a nice, nourishing and delicious meal to my family.

Is anyone else feeling this same frustration???

I did this week. But part of the cost was that people kept adding things to the list. Next weekend I need to stock up on meat again so that is going to hurt some too. I am just going to have to get strict with things to try and keep us at budget AND eating healthy. I refuse to allow my diet and health to suffer because of costs.

Last night I went over to a friends house for dinner and mom had leftover chicken.

Tonight we are having patty melts with fries and fruit.

Tomorrow night will be Italian Sandwich bake with salad.

Tonight we are having bacon, cheddar hamburgers, mustard based potato salad, and fruit. (The hamburgers were already mixed with the bacon and cheddar.)

Tonight is left over beef stew. It made some much last night that it would have been a waste to cook something else tonight.

No set menu for the week. I went to the ER Saturday with my first (and hopefully last) kidney stone. All though feeling much better then Saturday, still not back to normal. So meals are up to DH this week.

Monday had baked ham, potatoes, and corn
Tuesday, leftovers from last night.
