I, too, am the ultimate planner and enjoy it most of the time. I did find, however, that at about 10 days out (like OP), I had had it up to my eyeballs in planning. So I took a break for a few days and then I got my second wind.
I think it's fine not to plan ADRs, parks, etc. if you are not going at a busy time and have many days. For us, we usually go for four or five days and have a long list of must do rides and parks. So it really does help to plan. And since this past trip was at Christmastime with free dining, we knew we'd be disappointed if we didn't have a good idea of what we were doing.
With that said, we did bob and weave a bit and that worked for us. But the original ADRS I made worked great and we were never waiting to eat (something that I know my family hates!).

For me, that's half the fun!! My DD jokes that I get so detailed, that I schedule in bathroom breaks.
While it's not quite that bad, I really do structure our vacation so we can fit a lot in. And no matter how much the rest of my group lags and doesn't give me any input... after it's over, they always remark on how amazed they are with all that we did, and how it's the best vacation they have ever been on!
