Are you able to use your AP and/or DVC discounts at stores in Disney Springs??

Don't know about DVC because we're not members, but AP, yes. At least at the stores we've been too...World of Disney, the pin store, Marvel.

It depends. If it's a store owned by Disney like World of Disney, Once Upon a Toy, etc..then you can use your discounts. If it's just a regular store then there's no discounts allowed

Believe me, I wish I could use my AP discount at the Trophy Store

Just make sure to ask everywhere you go. You can get discounts on all Disney owned stores but also some that are not. Like Basin, Earl of Sandwich, Lego...

Many non-Disney stores in DS give AP & DVC discounts, so the easiest thing to do is to ask. You can also check Mouse Perks dot com, which lists dining, shopping and other discounts that are available at WDW. I added it to my Home Screen on my iPhone, and there's an app for Android. I use it a lot!
