Very, very easy to do it yourself - I make goat cheese and roasted beet salad all the time! (mine is much better than the one at Epcot )
All you have to do is cut the tops off, wash the beets, wrap individually in foil, then bake in a 375 oven until done - around an hour, depending on the size of the beet. Let them cool slightly, and the skin just slips right off.
I make an arugula and walnut (or pistachio) pesto, and drizzle that over slices of roasted beet and goat cheese, then sprinkle with whichever nut I made the pesto with.
On the topic of the one at Epcot, I find it's gone a bit downhill over the years - since the mixed greens are tossed with dressing ahead of time, they get a little more than wilty, and I don't think the dressing has all that much flavor anymore.

It was a little thicker than the mahi mahi we are used to, but it was very good.
