Can you HELP me with this plan? First time with hoppers

We are getting APs for the first time ever (in a 12 month span we will be visiting three times)... I am having a hard time splitting up my days since we've never hopped before.

Here's what I have so far: Any advice is appreciated! We are flexible and plan on taking breaks if the weather is nice since the kids love to swim. At the same time if we are enjoying our time in the park we will skip the afternoon break and continue touring- We don't have to hop parks- so even if we take a break I dont mind going back to the same park we spent the morning in. I can't figure out what parks we need more time in- favorites are MK/EP (tied), AK, DHS in that order

Saturday May 16th:
Arrive MCO 5:30pm, check in BLT
Dinner: Contemp Cafe QS
Evening:watch fireworks from TOTWL

Sunday May 17th:
Breakfast: 7:15 ADR Chef Mickeys, Walk to MK
Morning: Rope Drop at MK
Lunch: QS MK
Afternoon: Back to BLT for swim/resort time
Evening: EP to check out last day of Flower Festival

Monday May 18th:
Breakfast: in room
Morning: Monorail to EP for rope drop
Lunch: 12pm: San Angel Inn
Afternoon: back to BLT to swim (if weather permits)
Dinner: ??????
Evening: ?????????

Tuesday May 19:
Sleep in, Breakfast in room
Morning: head to MK
Lunch: QS MK
Afternoon: 2pm Bippitty Boppitty Boutique
Dinner: 6pm 1900 Park Fare
Evening: DHS to see Fantasmic or MK to see wishes

Wednesday May 20:
Walk to MK,
Breakfast: 8:10am Crystal Palace
Morning in MK
Lunch: ??????
Afternoon: head to AKV to check in
Spend afternoon at AKV swimming (if weather permits)

Truthfully, I think where you have ??????, I would just go with the flow on those days. This way, you do not have any reservations to hold you to a schedule if you decide to change your mind.

If you are concerned about TS meals, then you could always just wait until the day before or the day of and see what is available. I know that many times, if you are flexible on where and when, you can still get decent restaurants. Also, sometimes at opening or later close to closing, you can get walk ins at some places.

As for FP+, if you have already booked all of your must do attractions before and do not have any you really have to do again, I would just wait and see what is available that day. If you have specific attractions you want to do again and can book them for the days with ??????, then you might use that as the filler for that ??????.

Some of my favorite days are those with no plans. On a couple of occasions, I ended up at all four parks in one day without planning it. I only did a few attractions, normally ones I enjoy that did not have long lines, had a meal or a snack and then headed on to the next park. Since I was not rushing about and taking my time, I was not that concerned or overly tired since I would take breaks and just people watch.
 
One thing I consider when planning hopping is even if I want to start the day at the EMH park, when I hop in the evening I try to go to a park with a lower crowd prediction/ a recommended park on the EasyWDW crowd calendar. I like hopping, because it makes the trip feel longer, almost like I've had more park days. One evening we hopped to Epcot just to have dinner at Rose and Crown and see the entertainment in the UK pavilion. We really enjoyed knowing we didn't have to rush off to somewhere else and could just soak up the atmosphere of that one country. The second park is a good place to use FP+ I think, since rope drop at the first park still works really well. Enjoy those APs!
