Is it possible to find out what tasting/classes are available during sea days for an upcoming cruise? Doing the May 15th repositioning Transatlantic cruise.

No. Not until you get the Navigator at check in. While the offerings for those can be basically the same from cruise to cruise, it does vary.
 
A letter from the DCL with limits and prices for the different tasting available to us:

"We can request the ship for a private mixology/tasting 30 days prior to sail date, please see below min/max per class as well as the cost per class (subject to change without notice), each participant will be charged the fee to their onboard account whether they show-up or not. I will need names with stateroom numbers at least 2 weeks prior to sail date. You may request the times & dates preferred, but they are usually scheduled in any sea days around 2pm and/or 4pm in the Cadillac Lounge.

Champagne: $35.00pp – min 20/max 30
Martini: $20.00pp - min 20/max 40
Beer: $20.00pp - min 20/max 40
Mixology: $20.00pp - min 20/max 40
Mojito: $20.00pp - min 20/max 40
Tequila / Margarita: $20.00pp - min 20/max 40
Cognac: $25.00pp – min 10/max 25 in Outlook Cafe
Whiskey: $25.00pp - min 10/max 25 in Outlook Cafe
Wine: $20.00pp - min 20/max 40
Chocolate & Liquor: $35.00pp - min 20/max 30"

This would be for setting up private tastings for groups. You can't pre-book tastings/mixology as an individual room this way.

Does anyone know if I could attend a tasting class and just have my husband tag along? He doesn't drink but would like to come with, would we both get charged? Thanks in advance :)

Best answer - maybe.

It's hit or miss. Typically, if you attend, you pay. But there have been reports where "auditing" the class has been allowed. You just have to check once onboard how they will handle it.
 
I have gone with my husband a couple of times to the Cognac tastings as an observer and did not pay. My husband has been to 5 out of the 7 cruises we have taken so far and says he enjoys them because each instructor has a fresh insight and some new information to share. And he really loves Cognac!
 
Oh and he just books and pays when on board that first afternoon. The locations to book are in the Navigator you get upon check in as well as the dates and times.

PrincessShmoo is correct as to maybe. He can always ask but shouldn't be surprised if he is turned away.

On one cruise, a spouse was not allowed to sit in during our wine tasting. One reason was that we had a full room, but another was that they couldn't insure the registered participant wouldn't share their drink with the non-registered guest.

However, on our last cruise I was allowed to sit in during DW's rum tasting. I didnt sit at any of the chairs with the prepared drinks so there was no way I could get a free sample without being noticed, plus I had a Scotch to enjoy (and it probably helped that the CM running the rum tasting had done my whiskey tasting the night before and remembered me).
 
You won't pay as an observer. Your host couldn't care less typically. As long as they aren't drinking they can watch. Don't even bother asking. Just have them show up. If asked if they are participating, say, "No. Just watching." I've never, ever seen someone turned away from any tasting (and I've done a *lot* of tastings/classes) for just showing up and watching. I would be *stunned* if the CM said, "You have to leave since you've not paid your fee, even though you're not drinking."
