I don't have a recipe for a good breakfast potato dish, but I'd love one for a good baked french toast. :rolleyes1

Go to Cooks.com and search hasbrown casserole. I just had one of these at a brunch and it was delicious!!! The one I had was potatoes, cream of something soup, cheese, salt, pepper, and I guess sour cream and butter. There are many to choose from but I can only say how good that one recipe was.

This one is really easy and good. I make it for teacher appreciation and other brunches all the time. You can prep the night before then just throw it in the oven in the morning.

1 bag of frozen diced potatoes THAWED

Put the hash browns into a greased 9x13 pan
Spread a little butter on top of the hash browns

In a bowl beat
5 eggs
1 cup milk
2 teaspoons flour or cornstarch
2 teaspoons worcestershire sauce
salt and pepper to taste

Pour egg mixture over the hash browns

1 pound (1/2 of a regular box) of velveeta cheese. Cut the cheese into small cubes. Then sprinkle the cheese over the egg mixture.

Fry up 1 pound of bacon and cut it up and sprinkle over the top of everything. (I use the precooked bacon and just cut it up.)

Bake at 350 degrees for 30 to 45 minutes.

This is another copycat hashbrown casserole recipe I've made in the past.

Cracker Barrel Hash Brown Casserole

Ingredients:
2 pounds Frozen Hashbrown Potatoes, thawed
1/2 cup Margarine, melted
1 teaspoon Salt
1/2 teaspoon Black pepper
1/2 cup minced onion
1 can Cream of chicken soup
2 cups shredded Colby or Cheddar Cheese

Preheat oven at 350 F. Spray a 9x13 baking pan with non-stick cooking spray.

Combine soup, margarine, salt, pepper, onions and cheese. Gently mix in the potatoes and pour into prepared pan or dish. Bake uncovered at 350 F for 35 minutes.

Here's a good one, course, I adjust it coz I can't eat this much. :lmao:

1 Loaf of bread -- cubed
8 Eggs
8 oz Cream cheese -- cubed
1/3 cup Real Maple Syrup
1 1/3 cups Milk

Mix eggs, syrup and milk; set aside. In a 9x13″ greased pan, evenly layer 1/2
of the bread cubes, then cheese, and top with the rest of the bread cubes.
Pour egg mixture over bread, cover, and leave in refrigerator overnight. Bake
at 350~ for 35-40 minutes. Serve with syrup.

I think I'm gonna make the potato recipe everyone's been postin' tomorrow mornin'. :goodvibes

I cut the eggs, milk 'n bread amount in half 'n use a 8/9" square pan. ;)

Breakfast casserole with potatoes and ham in a creamy sauce.

INGREDIENTS:

• 1 (32 ounce) package frozen hash brown potatoes
• 8 ounces cooked, diced ham
• 2 (10.75 ounce) cans condensed cream of potato soup
• 1 (16 ounce) container sour cream (you are not going to use the whole thing)
• 2 cups shredded sharp Cheddar cheese
• 1 1/2 cups grated Parmesan cheese
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
2. In a large bowl, mix hash browns, ham, cream of potato soup, only ¾ container of sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

I 've been making a similar one for years. Here's my version:

1 bag cubed hash browns
1c. sour cream
1 can cream of chicken soup
1/2 chopped onion
8 oz shredded cheddar
salt and pepper

Mix all of the above ingredients and transfer to a greased 13 x 9 pan.
Top with 2 cups of corn flakes. Melt one stick of butter and drizzle over the corn flakes. Bake uncovered at 350 for 45 to 60 min.

try this one!
My family loves this, especially on Christmas Morning!
And, the best thing is that you can make it the night before & then pop it in the oven in the morning!

Praline Baked French Toast
6 tablespoons Butter
1 cup Light Brown Sugar
2 tablespoons Light Corn Syrup
1/2 cup chopped Pecans
2 Eggs, plus 3 Egg Whites
1 cup Orange Juice
1/4 cup Sugar
1/3 cup Milk
1 teaspoon grated Orange Rind
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
1 (16 oz) loaf French Bread, cut into 12 to 15 (1 inch) slices

In a microwaveable dish, combine butter, brown sugar & corn syrup. Microwave until the butter has melted & the brown sugar is dissolved, about 1 minute. Pour the mixture into an ungreased 3 quart oblong baking dish or a 13 x 9 inch pan. Sprinkle with pecans.
In a large bowl, whisk together the eggs, egg whites, orange juice, sugar, milk, orange rind, cinnamon & vanilla.
Arrange the bread slices over the brown sugar mixture & pecans in the dish. Pour the egg mixture over the bread slices. Cover & refrigerate for at least 4 hours to overnight.
Preheat the oven to 350 degrees.
Bake for about 30 minutes or until toasty. Serve immediately, each piece with some of the praline sauce that forms on the bottom of the dish.

I don't have a recipe for a good breakfast potato dish, but I'd love one for a good baked french toast. :rolleyes1

Grease 9 x 13 inch pan. Cut bread in thick slices about 2 inches. Arrange in single layer pan. In large bowl, beat eggs and other ingredients, except butter. When thoroughly mixed, pour over bread in pan. Cover with foil and refrigerate. Keeps up to 36 hours. To bake, remove foil. Dot with butter. Put in 350 degree oven for 45 minutes.
