I would also like to know about the taste of tuna steak. I love a good old tuna and mayo sandwich.........does the tuna have that kind of a tuna flavor? Not the mayo of course. lol

I once made "Never Fail Fudge" from the back of the marshmallo fluff jar. It didn't firm up. :confused3 I usually am a pretty good cook, if I do say so myself. hahaha I don't know what happened but I've never tried again.

I'm bracing myself for another nasty New England snow storm that is suposed to start in a few hours. We have plans to eat at Loco's, to celebrate my upcoming birthday. It's not for 2 weeks but why not start early!!!:thumbsup2 Loco's is a tappas restaurant and I've heard fantastic things about it so I'm hoping the snow at least waits until we arrive there. Once we're in, we're in!!
 
I'm loving all the recipes and pictures on this thread. :goodvibes We're getting the lovely snow,freezing rain,sleet mixture here atm so I'm getting ready to make a big pot of vegetable soup. I'm also going to make a very quick and easy crabmeat spread that we can snack on later.

Crabmeat Spread

1 1lb. package cream cheese
1/2 cup cocktail sauce ( I like the spicy kind)
8 oz lump crabmeat

Put the block on cream cheese on a plate. Cover it with cocktail sauce then top with the crabmeat. Serve this with your favorite crackers.

I'm having chicken dipped in batter and deep fried to a golden crisp, with a delicate sweet and sour sauce on the side. Along with julienned potatos...............yep, I'm having McDonald's!

LOL, wit the right description ANY dish can sound like it has a Michelin rating! :rotfl:

With Bendy’s blessings I am posting this meatloaf recipe. Keep in mind the instructions were written with my newleywed daughter in mind.

Enjoy!!!




Meatloaf Wellington

2 eggs
½ c ketchup
2 ½ tsp seasoned salt
2 tsp Worcestershire sauce
½ tsp ground mustard
1/8 tsp pepper
1 lb ground pork
1 lb ground beef
½ c chopped onion
3/4 c dry breadcrumbs(or oatmeal)
1 tube of Pillsbury Crescent Rolls.

In a bowl, beat 2 eggs, ketchup, seasoned salt, Worcestershire sauce, mustard and pepper. Crumble meat over mixture and mix well. Sprinkle with onion and bread crumbs; mix gently. Place in one large loaf pan.

Bake at 350 for 60-70 minutes or until meat thermometer reads 160-170 degrees.

When done, drain loaf pan of as much greases as possible. Pat top with papertowel to blot. Invert meatloaf into a 9x13 baking pan that is covered with more paper towel. Blot entire loaf as much as possible. Now invert the meatloaf onto a greased cookie sheet.

Roll out crescent roll dough and pinch seams. Cover top and sides of meatloaf with dough; trim excess. Bake 10-15 minutes longer or until pastry is golden brown.

That recipe is quite similar to the Mom's Meatloaf recipe from 50's Prime Time Cafe. It was very good and I'll post the recipe - but on the Disney recipe exchange because we try and keep all the Disney recipes in one place.


Here's a pic of our "back on the diet after all of the holiday boozing & gluttony" dinner last night.

Super easy meal but really yummy. Seared Tuna Steak with wasabi sauce & toasted almonds. Mixed Fresh Vegetales with toasted almonds.

Are those the tuna steaks from Costco? I really like those and they are so handy to use - and lo-cal. I've got a bag of them in the freezer and will try your recipe.

Mine is 12/29. I've always thought it sucked to have a b-day right after Christmas! The Here's your (ONE) Christmas & Birthday Present, always killed me. ;) It's taken years to train my family that it's MY BIRTHDAY on the 29th, I had Christmas the other day!:lmao:

I've found I really enjoy cooking now that I have an empty nest. My DH doesn't turn his nose up at anything. ;) DD would freak out about anything not on her "approved foods" list!

what does tuna steak taste like?
Is it real fishy? I've thought about ordering it before, but I don't like a real strong fish taste.

I love tuna, if it's fresh it's not fishy. If it's not so fresh, it can be yucky fishy. I only eat it in rest. that I know (or expect) to have very good fresh fish. I'm also picky about where I buy tuna from. I usually go to Whole Foods for it, which is very expensive. But I've recently found a couple of other markets that have fresh tuna, so we are able to have it a lot more often.

How to describe the taste of tuna? If you've never tasted fresh tuna before, just know it taste nothing like canned tuna. The closest thing I could compare it to would be swordfish. Dense texture like swordfish, but a little flakier. Maybe a cross between swordfish & halibut, when it's cooked through.

Be careful in the snow! See my above comments about tuna. It doesn't taste anything like canned tuna. Both are good but just totally different.


Tatania, We don't have a Costco around here. I started getting the packaged frozen tuna from Sam's years back. But then started getting more that smelled too fishy when opened. I was bummed because I loved that sealed packaging & the price! So I started on a hunt for fresher tuna. Soo glad I've finally found it in other markets besides Whole Foods! We can afford to have tuna again!
Try this easy recipe. I have another super delicious recipe that I got from a Cooking Demo at the Food & Wine Fest 2 yrs ago. It's more complicated but really wonderful!

Here's the pics & descriptions of my Birthday Dinner at Emeril's Delmonico here in New Orleans.

Delmonico's emphasis is on aged prime beef, but they also have some great seafood with a New Orleans flair.

As soon as we arrived, we were very pleased with the service. Not only did the host greet us, but every server who passed by cheerfully said "Welcome to Delmonico's". I thought that was nice.

To start I had a glass of champagne. You only get this old once right!

I was surprised that the Chef (not Emeril of course) brought out some Amuse Bouche... er Bouche's? for us. My sweet hubby:love: had called & asked if the Chef would come out to greet me for my Birthday! Not only did he come say hello but he brought food!!! :goodvibes I was so surprised that I didn't get a picture of the little treat. It was a smoked salmon mousse on a baguette crisp.

After much discussion about what everyone was having, ( so we could get tastes of as much as possible), we ordered drinks & appetizers. We couldn't agree on wine, so we ordered by the glass. Mom had a Virgin Bloody Mary, everyone else went with different varieties of red wine.

I chose the Beef Tartare, It was served on Buttered Toasted Brioche and topped with a teeny little Quail Egg.

DH picked the Lump Crabmeat Cake. It was served on a mustard creme fraiche with a pickle relish on top.

I tasted it & it was yummy!

My DSonIL got the Beer Battered Louisiana Oysters. They were served on top of an almond aioli with a herb salad on top.

That was one of the best fried oysters I've ever tasted. Super crispy & light, the cold sauce & salad really contrasted well with the hot crispy oysters. So good!

DD had a salad, which I didn't take a pic of. Mom also had the Beef Tartare.

With Delmonico's great beef it was a shame but I was not in the mood for beef. For Christmas I had cooked prime rib, that I ended up putting in the freezer, actually tired of beef!

For my entree I decided on swordfish. I was surprised to see it as the Fish of the Day, it's not a fish that's we often find on Nawlin's menus.

The swordfish was grilled with what I guess was Emeril's Essence. It was served with Sauteed Spinach, Garlic Fried Potatoes and with a spicy Romensco Sauce.

I really enjoyed the fish & was surprised at how good the thick cut fries were. The spinach was good too!

My sweet husband ordered Duck Leg & Thigh, with beans, squash mix. I just have to post how this reads on the menu because it just sounds so much fancier.. "Crispy Confit of Muscovy Duck Leg and Thigh with a Traditional Cassoulet of Flageolet Beans, Roasted Squash, Toulouse Sausage and dried Fig-Grain Mustard Sauce" Now doesn't that sound better! :laughing:

Not the prettiest dish. Oh but it tasted soo wonderful! The duck meat just fell off the bone.

Now my Mother's dish looked delicious. But I can offer very little detail on it. It was the special of the day AND she didn't offer me (nor anyone else) a taste of it! Now she was seated right next to me & I gave her some of my fish and passed her some DH's duck. But NOOO, not even on my birthday does she offer me a freakin scallop!

I should be happy that she was okay with me taking food pictures! I do remember it was served on top of some kind of polenta. I can see it was served with greens & a relish on top. I could tell (from her not speaking or looking up) that once it was placed in front of her, she was going to enjoy it. I think she did!

I don't have a picture of DD & SIL's entree. They shared the 20 oz dry aged bone in rib-eye. They dove into it so quickly, by the time I got to theirs the beautiful steak was already looking like ground beef!

Y'all are going to be mad but I have no pictures of dessert! I know, I'm a real letdown. So sorry!

We all ordered the traditional Bananas Foster which was cooked table side. I couldn't figure out why he was preparing the dish so far away from the table. Then when it looked like he was done, he didn't start serving right away. Apparently he snuck away & put a candle in my dessert before serving. My Bananas Foster was served with servers & family singing, very nice, but thus no picture.

Y'all don't know how unusual it is to get a picture of my Mom smiling. much less laughing. There were some snickers about a waiter & Tom Jones, but I don't remember exactly what the joke was. I think enjoying a very good dinner added to her joyful look!
 
Sheryl- i enjoyed your review so much. I don't think I will ever got to Emerils so this is a treat!

AS much as I enjoyed the review I really loved your family picture....not many things better than all of you together celebrating a special day with wonderful food and excellent wines ad dessert :thumbsup2

OMG that Delmonico's dinner looks so delish! Rick would have loved the swordfish, thats his favorite!

Before deciding on a Disney wedding we were going to get married in Vegas and have our reception at Emerils Delmonico's. I'm sure it would have been fantastic. Someday I'll get there.

These are the carmels and they are fantastic. Dark chocolate, creamy caramel and just a touch of salt. The fleur de sel really brings a different taste to the chocolates.

I've made them before, Rick loves them and was asking about them just the other day. Figured it would be a nice treat after he spent a long night/morning of plowing.
