I don't know where you're from, but are you used to the kind of heat florida has in the summer? I find that I'm barely hungry when I'm in that kind of heat all day, so I would personally struggle with some of your days. As for the breakfast ADRs, are you morning people? Are you in the Eastern or Central time zone? If the answer to both of those is yes, I think they're fine. If the answer to either one is no, I might re-think it.
Ultimately you have to decide how you want to spend your time between the parks and restaurants.
I agree with this, our first trip we did the deluxe plan and we are glad that we did it for that trip, as we got to try so many good restaurants, but by day 3 we realized it was just too much food. Thankfully it was in January and pretty cool, if it had been a hot September trip we never could have eaten even half as much as we did.
We also lived on the East Coast on our first trip and are morning people so early morning rope drop was easy, now that we live on the West Coast we are useless in the morning!
You are also doing a lot of different things and aren't really giving yourself a lot of time to go back and repeat favorites or just hang out somewhere.
