Activities for a non-park day with a 3yo and 1yo

What are some activities at the resorts or surrounding area that a 1yo and a 3yo will enjoy? We already have a pool day planned but I was thinking of something to do on our departing day. We are driving so dont have a set time that we have to leave by, other than check-out time at the hotel. In the past we've done Chef Mickey's but I was thinking of trying something new.

Any suggestions?
