After the turkey and the lamb I don't think that it woulb be a consomme. I'm thinking more a palate cleanser of sorts. My money is on something alcoholic...
I love reading these reviews. I then relay the info to DW each night. We've never dined at V&A, and hope to during our next WDW visit. Perhaps in 2008. Mr Disney, should we try for Chef's Table right off the bat, or try the Main room?
my guess is that it is a sauce for something, cherry cider reduction possibly? or perhaps an armagnac or madeira wine... although the odd presentation in a glass 'spoon' is what confuses me the most... was it actually served just like that? was it an accompaniement to something else?

On a more serious note, I always enjoy reading your reviews, they're informative, entertaining and very descriptive. Kinda makes me miss V & A, which pre DD, was always a must when we went to WDW. Keep it coming!!!!
