What's wrong with turkey sandwiches? We make ours with mayonnaise, a little salt and, if we have any leftover cranberry sauce, we smoosh that on top with a fork. To me that's the best part of a Thanksgiving dinner.
I also like to throw all of the leftovers in a pot, boil the meat off of the bones and make turkey soup. I add barley to mine as a thickener but it's a soup, throw in whatever you like. The nice thing about that is that you can portion it up, put it in freezer bags and make it last through the winter.
