The last time I was at Disney without kids was before our three boys were born! So if you asked me, I'd be talking about the mid-90's and sending you over to the old Pleasure Island!
But there are several things in the YC/BC area that my parents really enjoyed during their just-adults trip last year and their alone-time breaks while traveling with our family this year:
1) As Mickey T and Katesdad mentioned, there are so many great dining opportunities! We take our boys to signatures all the time and we love so many of them, but I know it would be a different experience with just adults. The only place (other than V&A) that we probably won't take the boys until they are all older is Bistro de Paris. My parents and my aunt and uncle love this place. They had a 7:30pm ADR during food and wine last year and spent over three hours there. They left way after the park closed and they said it was amazing. They didn't feel rushed in the least and they literally had the park to themselves on the way out.
2) World Showcase. My parents walk over multiple times (for even an hour or so) during their trips - to shop, to grab a beer, to get a snack. If you have park hoppers, it's really convenient. Again, we do this with the kids, but at a far different pace than my parents on their own! (And of course, we always stop at Nemo, Test Track, etc. along the way.) The grey goose slushie in France is one of my favorite drinks ever, so I highly recommend a stop a the kiosk in France. And I love the pecan bar at Karamell Kuche in France - another great spot!
3) The path around Crescent Lake. We also do this with the kids, but once again, at a different pace. It's a great walk and it's one of the things we love about the Epcot resort area - so many different resorts, shops, restaurants, lobbies, etc.
Again, I'm no recent expert on this issue, but hope this helps a little!
