I am not Anne, nor do I pretend to be...BUT I KNOW done cheesecake....stick a toothpick in the center....if if it comes out clean ...it's done.:thumbsup2

TW - your cheesecake WILL be wobbly. As it cools, it will firm up. Believe me, if you cook it until a toothpick comes out clean, it will crack and crumble when you slice it. It sounds like you're right on target.

When it's cooled in the fridge - it will really firm up. Let me know how it goes and good luck!

I listen to it every year on my birthday.

At 630 it'll be two hours and the cheesecake heads to the downstairs fridge for the night.
DU, if you want to be a guinea pig you'd have to come here for dinner thursday.

Ann, should I put it in the freezer for a day after the overnight cooling?

It should be nice and fresh if I take it back out to thaw thursday morning, right?

I'm also thinking I should take the "rim/side" off before freezing. Yes?

The cheesecake looks BEAUTIFUL! You definitely need to take the sides off if you're going to freeze, but not if you're keeping it in the fridge - then take off before you serve. Freezing is your call....it could go either way based on the time-frame.

To be honest - this is my first frozen cheesecake - so to be safe, I'm taking mine out Wednesday evening and putting it in the fridge, then pulling it out of the fridge a couple hours before dinner, let it sit, decorate it and sticking it back in the fridge while we eat...make sense? I guess we'll both see! I do know that cheesecakes are supposed to freeze beautifully, so I'm not too worried.

It looks amazing and I hope you like it as much as my family does!

I LOVE a good cheesecake and will be making this waaay more often if it tastes as good as I think it will. ::yes::
It's neat how I can see the fresh zest in it, I'm really looknig forward to trying it.

Who wants to bet I'll be making another one before thursday cause John and me couldn't stay off of it??? ;)

Esp considering how much other work you are doing to prepare for Thursday. I am only making the two recipes and am dyin to try that cheesecake :faint: What do you top yours with? John suggested warming up pie filling on the side for those who want a topping.
 
John's idea sounds great!

I usually put strawberries on it (use the middle two slices) in a starburst pattern, melt a couple tablespoons of red current jelly (I imagine any red Jelly - not preserves) would work...brush it over the top for a glossy finish.

When my niece requested it for her birthday, I made it with a home-made blueberry sauce...it was good and looked beautiful spooned over the top.

However, if strawberries don't look good tomorrow, I will pipe whipped cream at the outer edge and fill it with cherry pie filling.
