I cooked a whole chicken tonight.

What should I do with the leftovers?

I usually make stew but I'm tired of that:confused3

Any suggestions.
 
Yes,

Chicken, Commercial stuffing, mayo, sour cream, cheddar cheese, poultry seasoning. Mix it all together and bake. It makes an awesome casserole! I'll try to get you the exact measurements later or tomorrow.

I know it's cold, but what about chicken salad? I LOVE chicken salad. Especially with grapes and walnuts in it.

The house makeover is getting there....actually hung pics up & stuff.....I went to the Store room, that has all my stuff from my own place...It was like Shopping. I musta said "I forgot I had this" 100 times!:upsidedow

Pop Update....Sometime next month he will be scheduled for a Battery replacement. He is a tad dissapointed he wasn't rushed to Emergancy yesterday!!!!!:rolleyes1 OIY!

Him & Mom actually got into a fight today over who is "Sicker"!!! They are flippen NUTZ!:headache:

How many freezers do I have:confused3

Well now, technically I guess we have 4.

2 that are attached to refrigerators.

One upright freezer.

And a small chest freezer that actually belongs to Alex. He brought it home with him when he moved back, so I've been using it.

I cleaned out the one in the kitchen refrigerator (which is a bottom freezer) We don't really use that one for too much stuff and it tends to get forgotten about.

Then I cleaned out the one in the garage refrigerator. That one doesn't work well in the garage when the temperature gets below freezing.

The air is too cold and for some reason the freezer stops freezing. I asked the place that I bought it from and they said that refrigerator freezers are like that:confused:

So if I don't empty it, everything inside of it thaws out and has to be thrown away. Strange.

So I move the stuff out of there into one of the other two freezers in the garage.

Robin - sorry it took me so long. Here's that recipe:

Chicken or Turkey Casserole​

1 pkg (12 oz) herb stuffing mix (I use Pepperidge Farm)
4 T melted butter
2 1/2 c. Chicken broth
4 c. diced cooked chicken (or Turkey)
1/2 c. chopped onion
1/4 c. mayonnaise
salt to taste
2 eggs
1 1/2 c. milk
1 can cream of mushroom soup (or cream of chicken or celery)
1/2 c. grated cheddar cheese

Combine stuffing, butter & broth. Toss til mixed well. Place 1/2 mixture in bottom of greased 9x13 pan. Mix chicken, onion salt & mayo. Spread on top of stuffing. Beat eggs & milk. Pour over chicken. Top with remaining stuffing. Refrigerate several hours before baking. Spread soup on top Bake 325F for 40 minutes. Sprinkle with cheese and continue baking until cheese melts.

Note: Tom loves this recipe. I thought (for some reason) that sour cream was in it and I might add some because I like the taste (maybe take out some soup and replace with s.cream). Anyway, I hope you enjoy - it's super easy to make!


I hope ya'll are having a great day! I'm about to clean the kitchen and make home made cranberry sauce. It's better when it can sit a few days.

Since he's working next week, John has me helping him prepare for Thursday. I told him about your cheesecake recipe and the party potatoes and he's gonna let me "try" to make them :rolleyes: John is making the turkey and homemade stuffing and veggies and stuff. Rose is bringing cole slaw - John loves her recipe so he asked her to bring some.

Thanks for the recipe Ann.

My mom ended up coming over today and we made a chicken pot pie with a recipe that is very similar to the one you gave me.

My mom made up a pie crust and I mixed up the insides of the pie based loosely on a recipe that I found on the internet.

Put the insides in the crust and topped it with another crust and baked it.

It was so very yummy.

Four of us pretty much finished it off. There is one small slice left over.:thumbsup2

morning everyone! Yesterday I took my DD to Boston to go to an aopn house at Emmanuel College. It is a small catholic college. The draw for her was that it is in Boston and is the only totally enclosed campus in the City. Unfortunately we weren;t as impressed with the school and it's facilites as we expected to be. It's still on her list of places to apply, but nowwhere toward the top of the list now. We actualy snuck out of the open house early and went to the Quincy Market area of the city and just strolled around. We had lunch at Cheers, and the food was actually very good. I had clam chowda (YUM! I always have to get that when I'm in New ENgland) and we both had Carla Burgers with fries. They were really good and the nice part was that they were a smaller version of the typically huge burgers that you get at restaurants that are just too big! Of course they also have a burger called the eNORMous burger. I can't even remember everything on that burger, but lets just say it seemed huge. Could probably feed a family of 4 with it!:lmao: HAd too laugh because my daughter is too young to know the TV show "cheers" :happytv: so when the waitress came she ordered a CLARA burger instad of a CARLA burger. Must have been all her years of dancing in the nutcracker!:rotfl2: :rotfl2: :rotfl2: . We had a wonderful time and drove back home in the late afternoon/evening. I have to say we were exhausted when we got home.

I don't know why they want you to refrigerate. If I was to guess I'd say to give everything a chance to "shore up" and bake rather than turn to soup and heat up.

PD - sounds like you had a good time in Boston! My DH loves clam chowder.
