What's your best easy summer dessert?

Pink Lemonade Pie:

1 prepared graham cracker crust
1 tub cool whip (I use fat free)
1 can sweetened condensed milk
1 package unsweetened kool aid (I use pink lemonade, you can also use lemon lime, strawberry, etc.)

Mix ingredients with a hand mixer, pour into pie crust, refridgerate for at least an hour. Enjoy!

OMG!! I made this today using cherry Kool-aid. It was so rich (small slices are good here) and yummy! My DH insisted he wasn't going to have any since he's on a no carb kick, but after I convinced him to take a small bite of mine :rolleyes1, he ended up with his own slice. Thanks!
 
I usually do Dirt Pudding or Dump Cake.

Dirt Pudding *This recipe make alot but you can scale it down
1 large package of oreos, finely crushed (can use vanilla sandwich cookies too)
2 tubs cool whip, defrosted
2 sticks of butter, room temp
2 blocks cream cheese, room temp
2 cups milk
2 small packs of instant vanilla pudding
***I have made this with low fat ingredients and it comes out just as good!

Mix all ingredients together well (EXCEPT) cookie crumbs. In a pan, layer half of the cookies, then all of the pudding mix, then remainder of the cookies.

Blueberry Dump Cake (Can substitute drained canned peaches for the blueberries)
1 (20 oz.) can crushed pineapple, undrained
2 c. fresh blueberries or frozen that are defrosted
1 box yellow cake mix
1 c. chopped pecans
1/2 lb. melted butter

Dump pineapple into ungreased cake pan. Dump blueberries on top. Dump blueberries on top. Dump cake mix on top and spread evenly. Sprinkle pecans over top and pour melted butter over all. Bake at 350 degrees for 1 hour. Serve warm or cold. With ice cream is yummy!


I made the dump cake!I used a can of blackberries. (I'm saving the frozen ones for later). It's wonderful! The only other change I made is I added about a cup and a third of light margarine. My DS loved it so much he got up from the table, gave me a hug and told me he loved me! :laughing: :laughing: :laughing: It's a keeper! Thanks a million!

I made a banana pudding the first time ever (we've eaten it but I never made it). It was fantabulous!!! :thumbsup2

Hi! Not a dumb question at all...just sprinkle the dry cake mix over the fruit. It actually comes out like a cobbler/crisp type of dessert.

I just made this one and wow! It's like a combination of cheesecake and lemon meringue pie. I used a Keebler shortbread crust instead of the graham cracker one, just cause. I have to admit I was a little worried at first cause the mixture got really thick, really quickly. But I just moved it into the pie shell and it looked great.

Okay. I have to try the Pink Lemonade Pie now. I'm moving it up to the top of things to try. :)

Did I post an easy banana bread recipe? It's so easy it can hardly be called a recipe. Bananas + cake mix. I use a golden moist cake mix but a friend loves using the spice cake mix (I haven't tried that one yet). Anyway, prepare the batter as instructed except scale back on the water depending on the number of bananas on hand. The instructions call for 1 1/4 cup of water. If I have 3-4 bananas I use about 1/2 to 3/4 a cup of water. I play around with it some. It's really good & moist! Bake on 350 for about an hour, then I bake them about an additional 20 min on 275. Use a toothpick to check if it's done. Makes 2 loafs.

I have several that are favorites. One in particular i make year round.

One is from the Jif website ... brownie torte. Very easy.

Family size brownie mix, chunky pnut butter, cream cheese, confectioners sugar, and whip cream. You bake the brownie in a spring form pan. Mix the other ingredients, add to the top when cooled and refrigerate. Yummy and so filling !!

The other one is from the kraft website, I forget the name of it but its made with ice cream sandwhiches layered with a crushed oreo and cream cheese mixture. I have to use twice as many ice cream sandwhiches.

Sorry don't have them on hand. Relaxing in bed while checking the boards.

Thanks to everyone else for the great recipes. I am the Sunday dinner desert person and I am always looking for easy, inexpensive and delicious desert recipes.

Strawberry parfaits....

Sara Lee poundcake, cubed
frozen strawberries (thawed, of course!)
cool whip or whipped cream
any tall glass will work

put some poundcake cubes on the bottom, then just layer the berries and cool whip. keep layering until you fill the glass, finishing with the cool whip. couldn't be easier, and it looks really pretty!

Pineapple Angel Food Cake

1 Angel food cake, sliced horizontally twice
1 cup low fat Cool Whip
1 package vanilla pudding(I use sugar free but regular is ok)
1 large can crushed pineapple in it's own juice
quart sliced strawberries ( I slice some in half leaving the green for top of cake decoration)
pint blueberries


Mix entire can(juice too) of pineapple with pudding mix-no milk just mix and pineapple
fold in cool whip
spread on cake and reassemble
ice top of cake with mix as well and down the sides, doesn't have to be neat
decorate with sliced strawberries and blueberries on top
Chill for at least two hours, keep chilled until served
sprinkle a few remaining berries on each serving

This cake disappears fast so get your slice early!!
 
Ice Cream Sandwich Cake

Two boxes of Ice Cream Sandwiches (Hood also makes caramel swirl sandwiches)
Large Cool Whip
Candy or Topping of your choice (heath, reeses, nuts, coconut, caramel, mini choc chip, cookie dough, M&M)

Deep 13x9 pyrex. Layer one box of sandwiches, top with 1/2 cool whip, layer half of candy or topping. Repeat ice cream and cool whip layer, reserve remainder of topping till removed to serve.

Freeze at least 4 hours. Topping with remaining candy/topping and serve.
This is so yummy, everyone loves it ...so easy!

I've recently started putting frozen mixed berries in a bowl, microwave them for a few seconds than mash them up a bit. Put vanilla yogurt on top of that than a layer of cheerios. I put this in the freezer for about an hour than enjoy! :)
It's really tasty and healthy.

Glad you liked it. I try to keep the ingredients on hand all the time...great to take for dinners with friends. Also great to make in the individual graham cracker crusts.

I'm making this tonight! I finally remembered to pick up a can of sweetened condensed milk. Yea! :) I'm using lemon-lime Kool-Aid (I have that on hand).
