What's your best easy summer dessert?

I just made Sand Cake

It's not really a cake, you just make up vanilla/banana/lemon (just use one) pudding mix and if you would like you can add some Cool Whip.

Take graham crackers or golden oreos and put them in a bag and use a rolling pin to make crumbs or just buy a box of graham cracker crumbs.

Fill a small plastic pail with the pudding mix and cover with cracker crumbs. Use the shovel to serve.
 
Dip chocolate macaroons or oreos in milk. Make a layer of these in a casserole dish. Cover in cool whip, then chocolate chips and pecans. Repeat until you fill the dish, or run out of ingredients, or just get tired of dipping! Refrigerate for a couple of hours just so the cookies will continue to soften. Yummo!
 

I usually do Dirt Pudding or Dump Cake.

Dirt Pudding *This recipe make alot but you can scale it down
1 large package of oreos, finely crushed (can use vanilla sandwich cookies too)
2 tubs cool whip, defrosted
2 sticks of butter, room temp
2 blocks cream cheese, room temp
2 cups milk
2 small packs of instant vanilla pudding
***I have made this with low fat ingredients and it comes out just as good!

Mix all ingredients together well (EXCEPT) cookie crumbs. In a pan, layer half of the cookies, then all of the pudding mix, then remainder of the cookies.

Blueberry Dump Cake (Can substitute drained canned peaches for the blueberries)
1 (20 oz.) can crushed pineapple, undrained
2 c. fresh blueberries or frozen that are defrosted
1 box yellow cake mix
1 c. chopped pecans
1/2 lb. melted butter
***You can sprinkle some sugar on the top of the fruit if you think it needs to be sweeter.

Dump pineapple into ungreased cake pan. Dump blueberries on top. Dump blueberries on top. Dump cake mix on top and spread evenly. Sprinkle pecans over top and pour melted butter over all. Bake at 350 degrees for 1 hour. Serve warm or cold. With ice cream is yummy!

I was given a ton of fresh blueberries and the first thing I thought of was trying the blueberry dump cake! I'll be trying it within the next day or so. I think I need some crushed pineapple. Everything else is on hand. :)

I am really glad you like it. You can do it w/o the pineapple I believe...just add some more sugar and maybe some liquid like some OJ maybe...not too much, maybe a 1/2 - 3/4 cup.

Thanks! I've been eyeing my lemon cake mix. I may put some blueberries in a little water and sugar and let it sit and make a little "sauce" and add it in with the what's called for. Your recipe is great as it is and fun to play with too. :)

And there's all the other great recipes on this thread I have to try! I'm rich! :goodvibes Not watching calories too closely these days, but I'm enjoying the break.
 
Mix jell-o with cool whip, chill.

I made something like this for dessert tonight and I have to say it was yummy! My husband's Mom made this all the time when he was growing up. This is how I made it:

Make orange jello according to package, except cut the cold water in half.

Chill until almost set...I'd say about 3 hours.

Stir in about 2 cups of Cool Whip until pretty well mix and add a small can of mandarin oranges.

Chill for another few hours...yummy!

blackberry dumplings

About 1 quart blackberries, picked over and rinsed
1/2 cup water
About 1 cup sugar
1 teaspoon vanilla
2 cups Original Bisquick
2/3 cup milk
1 tablespoon sugar

Put berries with water in large pot. Cook over medium heat, stirring occasionally until berries give out thier juice. Add sugar; stir in well, then cook for 5 minutes. Lower heat until berries are just simmering. Meanwhile, combine Bisquick, milk and the 1 tablespoon sugar; mix well. Drop dumplings by tablespoon onto simmering berries. Cover and cook 15 minutes. Serve dumplings with berries ladled over and top with whipped cream, thawed Cool Whip or vanilla ice cream.

I made a really good dessert the other night. It was called Blueberry puff or something like that. It's made with crescent rolls. I got the recipe from a friend, that got it from the Kraft website. It calls for blueberries, crescent rolls, 1 package of cream cheese (I used light and it was still wonderful), and sugar. I think that's about it. Easy, easy, easy. It cooks up to this not too sweet custard with the blueberries. So good. I can't remember the recipe in full. But if you go to the Kraft website and look for Blueberry Puff, you'll see it. It's a keeper for us! :)

I made a pumpkin pie last night! I was just in the mood. Yummy! Vanilla ice cream on top. Oooh laaa laaa. :yay:
 
Just made this last week for my Red Hat Pool Party:

Cherry Nummy:

Crust (Mix well with fingers or pastry blender)
1 C butter or marg
1 1/2 C flour
2 tbl sugar.
Pat crust into 9 x 11 pan, bake at 350º for 30 min. Cool.

Filling
8 oz Cream cheese
3/4 C sugar
Mix together until creamy. Add 1 7-8 oz container cool whip. Mix well. Spread on cooled crust.

Top with 1 to 2 cans pie filling (cherry or whatever).

Refrigerate.
