What's your best easy summer dessert?

One of the large things of yogurt, any flavor you like and a container of cool whip mixed. Put it in a gramh crarcker pie crust and chil for a couple of hours in the fridge. It tastes so good and is so easy to make. It takes 5 minutes to mix it up if that.
 
one of my favorites is jello cake...Bake a yellow cake like normal..* Leave in pan and cool...* Once cooled poke a bunch of holes all throughout the cake...get 2 packages of jello..* I prefer strawberry as I think thats the best..* make jello like you normally do..* boiling water, putting powder in it, etc..* add the cold water.. make it just like you would if you were making jello..* once you add the cold water and stir it then you pour the entire mixture over the cake..* I know.. it sounds gross..* once done.. stick it in the refrigerator for a few hours..* then put coolwhip all over the top of the cake..* then refrigerate again for hours until you are ready for it.. Its the bomb!!
 
Jello Cake......I just made this tonight for our dessert for Father's Day:

1 box white cake mix - follow package directions and bake accordingly. Cool 15 minutes.

Prepare jello (any flavor, I like lime a lot, but tonight I made it with orange jello) according to package. After dissolving the jello in boiling water, add one cup cold water. Poke holes in cake (I use a plastic toothpick or a shish-ka-bob skewer) every 1/2 inch so that there are holes all over the cake. Pour jello over cake. (the cake will immediately soak up all the jello). Put cake in fridge for 3-4 hours, then top with cool whip.

This is great for summer as it's served cold and can be garnished with fruit.

If you have a sweet tooth, this is so good!

1 package white cake mix
1 small package strawberry Jello (I use sugar free)
1 cup fresh strawberries slightly mashed (use 1/2 C in cake, 1/2 C in frosting)
1/2 cup water
1 cup oil
4 eggs

Mix jello and cake mix together. Add water and oil; mix on medium speed. Add eggs, one at a time, beating well. Stir in berries. Bake at 325 F. for 30 to 45 minutes in greased and floured 9 x 13 pan.

For the frosting, I use the Jiffy white frosting (can't stand canned frosting!), and mix in 1/2 cup strawberries after draining juice. But I've also heard of folks using traditional butter cream frosting with the strawberries mixed in. I also keep this cake in the refrigerator.
 

Oh my gosh! These all sound so good! Thanks for sharing the recipes! :) I'm going to try them. I'll have to tweak them to be low sugar (or sugar free) and/or low fat. Or I'll have to go up a few sizes!
 
My family loves grilled pound cake.

1 Sara Lee butter pound cake sliced in 1inch pieces

Melt a half a stick of butter and coat both sides of each slice, sprinkle sugar on each side of the cake and place on your grill(also can be done with a skillet if poor weather prevents the use of an outdoor grill.

Sliced pineapple or peaches can also be put on the grille to carmelize to bring out the fruits natural sweetness.

Once both the cake and fruit are finished you plate it by putting cake down first and placing a pieces of fruit on top of the cake and topping everything off with Cool Whip.

Chocolate Pie

1 small box of choc. instant pudding mix
2 Tablespoons of Hershey's Cocoa
1 cup of milk
Blend for about a minute with hand mixer
fold in a small container of cool whip
put it in a graham cracker crust
cover with more cool whip
and
shave some Hershey Bar ontop freeze for a couple of hours
then put in frig to allow it to thaw a bit before serving

very easy and it is so good :)
 
I make a jello dessert that is cool and refreshing for hot summer days.

You will need:

2 large boxes of red jello - any flavor will do - yes you can use sugar free
2 large boxes of blue jello - any flavor will do - yes you can use sugar free
1 large container of Cool whip - yes the free cool whip can be used
1 pre-made pound cake such as Sara Lee or Enttenmans -- cut into 1 inch cubes.

Use a triffle bowl, or any tall large clear container. You are trying to achieve a red white and blue layered effect.

Prepare red jello as instructed and place in a 9 x 13 pan to chill. Do the same thing of the blue jello.

Once jello has set up take a sharp knife and cut jello into cubes by first cutting diagonal lines and the vertical lines in the jello while it is in the 9 x 13 pan.

Once the jello is cut use a spatula and scoop out some of the red jello and use that as the first layer placed in your container. Then add a layer of pound cake then a layer of cool whip. Then add a layer of the blue jello. Continue this pattern till you reach the top.
Refrigerate till ready to serve.
YUM I have made this several time and it is always a big hit.

Great treat for those watching the fat.

One box Duncan Hines angel food cake mix(Have not had good luck with other brands)
One 20 oz can crushed pineapple(in own juice)

Stir together with spoon until moistened and pour in UNgreased 13 x 9. Bake at 350 for 25 - 35 minutes. So yummy with fresh strawberries or blueberries and FF Cool Whip!!!

Got this from Weight Watchers years ago.
 
Graham cracker crust for 9x13 pan

2 12 oz cool whips
1 8oz cream cheese
1 cup powdered sugar
1 3oz package strawberry gelatin
1/2 cup boiling water
1 8oz cup strawberry yogurt

Beat cream cheese and powd sugar until smooth. Whisk in 1 cup cool whip. Spread over crust, refrigerate.
Disslove gelatin in boiling water. Whisk in yogurt and 6 cups cool whip. Spread over cream cheese layer. Cover and refrigerate 4 hours or overnight. Before serving, spread remaining whipped topping over, and garnish with graham cracker crumbs or fresh strawberries.

** You can substitute any flavor jello/yogurt. I have used lemon, raspberry, and blueberry and they all turn out YUMMY!

Pink Lemonade Pie:

1 prepared graham cracker crust
1 tub cool whip (I use fat free)
1 can sweetened condensed milk
1 package unsweetened kool aid (I use pink lemonade, you can also use lemon lime, strawberry, etc.)

Mix ingredients with a hand mixer, pour into pie crust, refridgerate for at least an hour. Enjoy!

Green Grapes, washed but still wet.
Coat them with DRY lime jello mix.
My kids go crazy for these. I usually freeze them.
Ridiculously easy, and cheap!
 
another one to add...my MIL gave me this recipe...I thought she was nuts until I tried it..:hyper:
any fresh fruit...strawberries or grapes are exceptionally yummy
sour cream
brown sugar

just dip the fruit it sour cream, them the brown sugar..and eat!

My kids love our Cool Whip Sandwiches.
We use different combinations of graham crackers and flavored coolwhip.We have experimented with the following combinations: Chocolate graham cracker with french vanilla cool whip, Chocolate graham cracker with strawberry cool whip, and honey graham crackers with strawberry cool whip.
Break the graham cracker in half, spoon cool whip onto one side, place other side on top and freeze.

My Dh and I also have made these with lowfat graham crackers and Fat free cool whip
 
I usually do Dirt Pudding or Dump Cake.

Dirt Pudding *This recipe make alot but you can scale it down
1 large package of oreos, finely crushed (can use vanilla sandwich cookies too)
2 tubs cool whip, defrosted
2 sticks of butter, room temp
2 blocks cream cheese, room temp
2 cups milk
2 small packs of instant vanilla pudding
***I have made this with low fat ingredients and it comes out just as good!

Mix all ingredients together well (EXCEPT) cookie crumbs. In a pan, layer half of the cookies, then all of the pudding mix, then remainder of the cookies.

Blueberry Dump Cake (Can substitute drained canned peaches for the blueberries)
1 (20 oz.) can crushed pineapple, undrained
2 c. fresh blueberries or frozen that are defrosted
1 box yellow cake mix
1 c. chopped pecans
1/2 lb. melted butter
***You can sprinkle some sugar on the top of the fruit if you think it needs to be sweeter.

Dump pineapple into ungreased cake pan. Dump blueberries on top. Dump blueberries on top. Dump cake mix on top and spread evenly. Sprinkle pecans over top and pour melted butter over all. Bake at 350 degrees for 1 hour. Serve warm or cold. With ice cream is yummy!
 
This needs about 24 hours to freeze, but it's easy and delicious!

Ingredients: 1 pre-made cookie shell ( I like the oreo brand chocolate crust)
1/2 gallon sherbet, softened but not melted (your favorite flavor...orange tastes like a creamsicle)
1 brick of cream cheese, softened
1 small tub of cool whip

Mix sherbet, cream cheese and cool whip in bowl with hand mixer.
Pour into crust and freeze overnight.


Yummy!
 
I just made this today for Fathers day:

Watergate salad

small box of pistachio pudding mix
20 oz can of crushed pineapple including juice
1 cup small marshmallows
1 1/2 cup cool whip

mix 1st 3 ingredients together then fold in cool whip then chill
 
Oh, I love watergate salad....may have to make that this week!

I just made this banana pudding for my fil for father's day:

1 box Nilla wafers
1 large box instant vanilla pudding
1 can sweetened condensed milk
1 tub cool whip
3 cups milk
2-3 bananas

line a large bowl or pan with nilla wafers, covering the bottom. Thinly slice bananas over the wafers. In a different large bowl, mix the pudding mix and milk with a wire wisk. Add the sweetened condensed milk, then the cool whip. pour half of mixture over bananas. Repeat layers, I like to end with a few nilla wafers on top to "decorate"...refrigerate for a while to let the wafers soak up the pudding---this is GOOD!
