What's your best easy summer dessert?

I just did this yesterday for Father's day.

Easy Ice Cream Cake
Place 6 - 12 Ice cream sandwiches in bottom of pan
cover with chocolate fudge topping
layer on Cool Whip (slightly thawed)
freeze
Right before serving sprinkle crumbled oreo cookies on top
 
Key Lime Pie

1/2 C key lime juice
1 can sweetened condensed milk
3 egg yolks
1 graham cracker pie crust
Combine milk, egg yolks and lime juice. Blend until smooth. Pour into pie shell and bake for 15min at 350. Let stand for 10min before refrigerating.

I buy the bottle of Nellie & Joe's key west lime juice at the store but you could also use fresh key limes. I think it's $1.99 for the bottle but I can make 4 or 5 pies with one bottle. If I happen to have a lime I'll grate some of the rind into the batter while I'm mixing it up. I just top each slice of pie with whipped cream before serving.
 
I have this recipe too, but it also includes 1 cup of shredded coconut and a tsp of ground ginger, pina colada cake! It's always a big with everyone, not just those on weight watchers. I also make this as cupcakes and sprinkle a little toasted coconut on top before baking.

Great treat for those watching the fat.

One box Duncan Hines angel food cake mix(Have not had good luck with other brands)
One 20 oz can crushed pineapple(in own juice)

Stir together with spoon until moistened and pour in UNgreased 13 x 9. Bake at 350 for 25 - 35 minutes. So yummy with fresh strawberries or blueberries and FF Cool Whip!!!

Eclair pie:
box honey graham crackers
prepared french vanilla pudding (1/2 the milk it calls for, then fold in small tub cool whip)
tub chocolate fudge icing

In pan put 1 layer crackers, then pudding, repeat, ending with crackers on top when you run out of pudding. Nuke the icing about 15 seconds, stir and spread over top of final graham layer.
Chill in fridge at least 2 hours. Graham crackers need to soften a bit. Yummy!

The best thing is you can change all ingredient to the fat or sugar free versions and it still tastes good.

This sounds really yummy...one question....what size pan do you use?

I don't see my favorite posted...so here it is....

1 grahm cracker crust or package of grahm tartlet shells
1 can of prepared pie filling (my favorite is lemon or key lime)
1 8oz pkg. cream cheese.
whipped cream or topping.

Just open the can of filling and the package of cream cheese and blend in a bowl until blended. Simply fill your pie shell or tartlet shells and put in the frige for about a 1/2 hour 'til chilled. You can also freeze this. Top each serving with whipped cream or topping. The combinations are endless. There's NO COOKING and the recipe can be doubled and trippled for picnics, etc...

My favorite is lemon, but this week I discovered Lucky Leaf brand key lime filling....made it yesterday! I have also made this with cherry, blueberry, strawberry, and once I used a similar sized container of chocolate pudding. You can also do this with canned pumpkin, but I add 1/2 cup of sugar and some spice and cream the cream cheese with that before adding the pumpkin.

I have some blackberries so I'm going to try the dump cake tonight! I think I might have made it before a long time ago. Nice to have the recipe! Thanks! :)
 
This is a version of the ever popular Frozen Banana Split Dessert! But we think it's the best of them all!

Crush about 2/3 of a package of Oreos, mix with 1/4 cup of melted butter and flatten in a 9x13 pan to make a crust. Put it in the freezer to harden.

Mix 1 8 oz. package of softened cream cheese with 1/4 c. softened butter and 3 cups of powdered sugar until nice and creamy. Then spread over crust.

Next layer on about 4-5 sliced bananas and 1 can of drained crushed pinapple.

Cover that with a tub of Cool Whip, drizzle with Hershey syrup, then sprinkle with chopped nuts, and more crushed Oreos (whatever your family haven't eaten already).

Freeze and serve! I serve it with sliced strawberries and additional Hersey syrup for those who like!

Store in freezer. My hubby likes it to thaw before he eats his, but my kids love it straight out frozen! Enjoy!

1 - graham cracker crust, reduced fat
1 - tub of fat free cool whip
2 - light key lime yougurts
1 - sugar free lime Jell-o


disolve Jello in 1/4 cup boiling water. once dissolved add yougurt and cool whip. stir until smooth. pour into crust. chill for a couple hours or until set. depending on your exact ingredients, it works out to around 150 calories a slice, about 1/3 of a regular slice of key lime. AND it is yummy.

P.S. This recipe is usually on the back side of the Keebler reduced fat graham crack crust label.
 
OOH . We love to make Hershey bar pie and it is sooo easy.

Just melt one of those huge Hershey bars in the microwave. Add in a small container of cool whip. Dump into a graham cracker crust. Freeze. The chocolate hardens and really changes the consistency of the cool whip. YUM
 
People call it Ambrosia Salad:

Mini Marshmallows
Fruit Cocktail minus the syrup
Pineapples
Mandarin Orange slices
Maraschino Cherries
Sour Cream

I've heard of people putting in coconut and nuts,but I never have!!
 
My easiest and tastiest:

1 bag frozen mixed berries
1/2 c sugar
prepared angel food cake

Put the frozen berries in a bowl and put sugar on top, microwave for 5 minutes or so, stir, then microwave another minute or two. Serve over slices of angel food cake. Easy, lowfat, yummy!
 
Here are 2 of my favorites:

Grilled Pineapple with Icecream and Caramel Sauce
Just cut the pineapple into round slices, place on grill til they are a little brown.
Once done put the slices in a bowl, top with a scoop of vanilla icecream and then drizzle caramel sauce on top! YUM

Easy IceCream Cake
Icecream Sandwiches
Cool Whip
Chocolate and/or Caramel sauce
Nuts and/or candy

Take a box of icecream sandwiches and unwrap them. Take a 9x13 container (although you could use another size), place icecream sandwiches on the bottom then cover with cool whip, drizzle with chocolate or caramel sauce and add nuts or candy if you like, then repeat again with icecream sandwhiches and coolwhip, sauce, nuts. Place in freezer for about 2 hrs to set and then serve. It's very yummy and quite easy!
 
I am making a banana pudding thing tonight. I think I got the idea from this thread but the DIS is running slow and I can't go back in the thread...
 
This is an easy one and taste awesome

chocolate cake mix
chocolate pudding
cool whip- thawed
chocolate chips
Optional: crushed nuts


Bake cake ( can add chocolate chips to the cake mix) in a rectangular pan
Cool cake....... Prepare chocolate pudding
Once cake is cooled: Pour pudding mix over cake. Spread evenly
Pour thawed cool whip over the pudding. Spread evenly
Sprinkle crushed nuts and chocolate chips over top
