Whats the difference between Chefs de France and Bistro de Paris?

I've looked at the menus and see that they are slightly different, but I'm still not quite sure how these resataurents are distinct from one another. What are each of their niches? Are both equally upscale? Is one more authentic than they other? It just seems odd to me that the France area has two such similar restaurants. Is one supposed to be a Bistro vs an upscale French restaurant? But the menus and prices seemed quite similar to me (at least for dinner).

These restaurants are very different. Contrary to what we normally think of when we hear the name, Bistro is the more upscale. It is actually one of the nicest restaurants in WDW. It is tucked away upstairs and is very intimate and adult in its feel. The food is much more gourmet (and expensive). Chefs de France also has delicious food, but it is much noisier and bigger, and there are a lot more children there. It is also less expensive. Although we consider Chefs a fairly romantic restaurant compared to similar WDW restaurants, it is no where near as romantic as Bistro. If you're looking for a good family meal, choose Chefs. If you're a couple celebrating a special occasion or wanting a nice dinner out together, choose Bistro.

I agree with this, and I've eaten at both. I thought Bistro was the most romantic and intimate restaurant we've eaten at in WDW (we've eaten at almost all signature restaurants except V&A's and Citricos). I think Bistro is my favorite restaurant now.
